Detox con brio: minestra speziata di lenticchie rosse


Il mese di gennaio ci porta ciclicamente a fare buoni propositi per l'anno nuovo. Fra questi, puntualmente c'é quello di rimettersi in forma. Naturalmente tutto ciò non passa solo dal cibo, ma anche dal movimento regolare, in palestra o fai date, purché fatto bene e con determinazione. e se la sera ci sentiamo un po' provati dalla stanchezza e dalla fame, consoliamoci con una minestra detox, come quella che vi lascio qui, leggera ma speziata.

ZUPPA DI LENTICCHIE ROSSE CON SPEZIE E SEMI
Ingredienti (per 4p)
160 gr di lenticchie decorticate, 6 carote medie, tre gambi di sedano, una cipolla bianca, brodo vegetale, un cucchiaio di garam masala o di curry, tre foglie di alloro secco, olio evo, semi misti (girasole, zucca, lino, sesamo).

Procedimento
  1. Mettere in una pentola la cipolla e il sedano tritati con tre cucchiai di olio evo e farla ammorbidire; aggiungere il cucchiaio di garam masala o di curry e fare stufare qualche minuto.
  2. Aggiungere le carote tagliate a dadini e le lenticchie. Mescolare e dopo circa due minuti aggiungere il brodo vegetale (circa un litro) e le foglie di alloro.
  3. Coprire con il coperchio e fare bollire a fuoco moderato per circa 40 minuti, mescolando di tanto in tanto.
  4. Quando le lenticchie saranno tenere, spegnere il fuoco e frullare con il frullatore ad immersione.
  5. Servire caldo spolverando i piatti con un cucchiaio o due di semi misti; potete aggiungere dei pezzetti di pane tostato.

RED LENTIL SOUP WITH SPICES AND SEEDS

Ingredients (serves 4)
160 gr of decorticated lentils, 6 medium carrots, three stalks of celery, a white onion, vegetable stock, a spoonful of garam masala or curry, three dry bay leaves, extra virgin olive oil, mixed seeds (sunflower, pumpkin, flax, sesame).

Method
  1. Put the chopped onion and celery in a pot with three tablespoons of extra virgin olive oil and let it soften; add the spoon of garam masala or curry and let it stew for a few minutes.
  2. Add the diced carrots and the lentils. Mix and after about two minutes add the vegetable stock (about one liter) and the bay leaves.
  3. Cover with the lid and boil at a moderate heat for about 40 minutes, stirring occasionally.
  4. When the lentils are tender, turn off the heat and blend with the immersion blender.
  5. Serve hot,  spread a  tablespoon or two of mixed seeds on the plates; you can add some pieces of toasted bread.

Profumi del Sud - Crema di cicerchie con pomodori



Queste vacanze estive le abbiamo dedicate all'Italia e abbiamo deciso di andare a in Calabria, la regione delle nostre origini, con una piccola deviazione verso la Basilicata (Matera) e la Puglia (Altamura). Pochi giorni che ci hanno fatto apprezzare le bellezze del nostro Paese: non solo monumenti e natura strepitosi, ma anche la cordialità e la gentilezza degli Italiani, davvero uniche. E viaggiando qui e là in Europa vi posso assicurare che il fattore umano non è affatto secondario.
In Puglia ho acquistato della pasta mista e della cicerchia, un legume antico e non troppo diffuso, da conoscere meglio qui, mentre in Calabria ho preso cipolle di Tropea e pomodori secchi.
Con questi pochi ingredienti ho preparato una zuppa molto semplice, ricca di sapori e colori antichi, che si perdono nella lunga cultura culinaria del nostro Paese. 
Per calcolare i tempi occorre ricordare che la Cicerchia va messa a mollo la sera prima, per circa 8 ore. Potete cuocere una quantità doppia di cicerchia e metterne una parte in freezer, per averla pronta più rapidamente quando vi serve.

CREMA DI CICERCHIA E POMODORI 
Ingredienti (per 6 persone)
Cicerchia secca 400 gr, pasta mista secca 300 gr, una grossa cipolla rossa di Tropea, 50 gr di pomodori secchi, olio evo, sale (poco, ci sono i pomodori secchi!).
Procedimento
Mettere in ammollo la cicerchia per circa otto ore e cambiare l'acqua un paio di volte. Gettare via l'acqua dell'ammollo, sciacquare la cicerchia e togliere le bucce dure. Coprire la cicerchia con acqua fredda e un pizzico di sale e fare cuocere per 40 minuti. Una volta cotta, frullare con un miniper; nel frattempo lessate la pasta in abbondante acqua bollente, scolatela e unitela al purè di cicerchia, aggiungendo tre cucchiai di olio evo. In una padella fate appassire la cipolla e aggiungete i pomodori secchi, sciacquati e tagliati  striscioline. Quando i pomodori saranno cotti, metterli al centro del piatto di servizio. 
Buona anche fredda!

These summer holidays decided to stay in Italy and go to Calabria, the region of our origins, with a small detour to Basilicata (Matera) and Puglia (Altamura). Just a few days that let us appreciate the beauty of our country: not only monuments and jaw-dropping nature, but also the friendliness and kindness of Italian people, really unique. In Puglia I bought mixed dried pasta and grass pea , an ancient leguminous plant (to know it better, click here), and in Calabria I took Tropea onions and dried tomatoes.
With these few ingredients I made a very simple soup, rich in ancient flavors and colors, which belong to the ancient culinary culture of our country.
To calculate the whole cooking time,  remember that the grass pea should be put to soak the night before, for about 8 hours. You can cook twice the amount of grass pea and put one hand in the freezer, to have it ready as quickly when you need it.
If you do not find grass pea, try this recipe with peeled broad beans!

CICERCHIA CREAM WITH TOMATOES
Ingredients (serves 6)
dry grass pea 400 g, 300 g mixed dried pasta, a large red onion, 50 grams of dried tomatoes, olive oil, salt (just a pinch, because of sun-dried tomatoes!).
Method
Soak grass pea for about eight hours, changing the water a couple of times. Throw away the water used for the soaking, rinse and remove the grass pea tough peels. Cover the grass pea with cold water and a pinch of salt and cook for 40 minutes. Once cooked, blend with a miniper; Meanwhile boil the pasta in boiling water, drain and add to the grass pea puree, adding three tablespoons of olive oil. In a frying pan, cook the sliced onion with olive oil and add the dried tomatoes, rinsed and cut into strips. When the tomatoes are cooked, place them at the center of the serving dish. Enjoy!

La primavera si avvicina a piccoli passi: la crema di zucchine


In questi giorni non possiamo certo dire di avere la primavera alle porte: dopo aver avuto un inizio di aprile caldo e soleggiato, eccoci alle prese con freddo e neve! In realtà, anche aprile 2015 non è stato particolarmente bello, ma si sa che perdiamo presto memoria del tempo meteorologico. altrimenti come faremmo a lamentarci?? 
Comunque questo tempo mi ispira voglia di confort food  che per me significa zuppa. Ed ecco qui che vi propongo una sana e veloce zuppa in verde, da gustare ora calda e più in là anche fredda, ma solo quando la primavera busserà veramente alla nostra porta !

CREMA PROFUMATA DI ZUCCHINE 
Ingredienti (per 4)
Zucchine fresche 6, patate medie 2, scalogni (oppure cipollina fresca) 2, olio EVO, un ciuffo di basilico, mezzo litro di brodo vegetale, anche di dado (ma senza glutammato), sale (poco!)
Procedimento
Tagliate a rondelle sottili gli scalogni e fateli rosolare nella pentola a pressione con tre cucchiai di olio EVO; aggiungere le zucchine e le patate pulite tagliate a tocchetti. Unire il brodo, mescolate e chiudete la pentola. Dopo il sibilo calcolate 10 minuti, altrimenti se usate una pentola normale, fate bollire a tegame coperto per 20 minuti. Quando le patate saranno morbide, frullare tutto con il mixer ad immersione, aggiungendo qualche fogliolina di basilico. Mettere nei piatti, se vi piace, con un cucchiaio di parmigiano e aggiungere foglie di basilico per decorare.

These days we cannot say that we have the spring around the corner: after having a warm start of spring and a sunny April, we are now struggling with cold and snow! In fact, also in April 2015 it was not particularly nice, but we usually we lose so fast memory of the weather. 
However this bad weather inspires me the need for comfort food, that for me means "soup". And here you are a healthy and quick soup "in green" can be enjoyed very hot. But remember when spring really will knock on our door, we can serve this soup cold. Enjoy!

SCENTED ZUCCHINI SOUP
Ingredients (serves 4)
6 fresh zucchini, 2 medium potatoes, 2 shallots (or spring onions), EVO oil, a bunch of basil, half a liter of vegetable stock, even prepared with stock cube (without glutamate), salt (a pinch!)
Method
Cut into thin slices the shallots and brown them in a open pressure cooker with three tablespoons of EVO oil; add zucchini and potatoes cut into chunks. Add the stock, stir and close the pressure cooker. After hearing the whistle, let cook for 10 minutes, or if you use a regular pot, boil with the lid on for 20 minutes. When the potatoes are soft, mix all with the immersion blender, adding a few leaves of basil. Put in the dishes, if you like, with a tablespoon of Parmesan cheese and add basil leaves to decorate.

Autunno: coccoliamoci con la zuppa di Millecosedde


I primi freddi mi hanno sempre messo di buon umore: uscire la mattina e sentire l'aria fresca che scivola sul viso ti fa sentire la differenza fra la casa e "il fuori" e ti dà la giusta energia per cominciare la giornata. Lo so lo so, siamo in pochi a pensarla così. Il vantaggio è che si riesce a godere di una stagione che spesso mette tristezza, a me il freddo richiama la casa, la voglia di stare insieme a chi vogliamo bene. E magari davanti una bella zuppa fumante. questa zuppa è una rielaborazione di una ricetta calabrese, in versione rapida (con i legumi in scatola) e light (senza pancetta o altri grassi animali) ma comunque buona e profumata con i funghi porcini. Naturalmente si possono usare i legumi secchi, mettendoli in ammollo 24 ore prima.

MILLECOSEDDE
INGREDIENTI (per 4p.)
350 gr di legumi in scatola misti (fagioli, ceci, lenticchie...) oppure 150 gr di legumi secchi da ammollare, una cipolla, 200 gr di spinaci o bieta (anche surgelati), 30 gr di funghi porcini secchi, pomodori pelati o freschi 400 gr, 2 cucchiai di olio evo, 1/2 lt d'acqua, 320 gr di pasta integrale, erbe aromatiche a scelta (salvia, rosmarino, timo...)
PREPARAZIONE
Mettere i funghi secchi in acqua tiepida per circa 10 minuti. In una pentola di coccio scaldare l'olio con la cipolla tritata, aggiungere i pomodori tagliati a pezzetti, Fare insaporire e aggiungere l'acqua e un pizzico di sale e le erbe aromatiche Fare bollire per circa 5 minuti. Aggiungere gli spinaci (o bieta) e i funghi ormai morbidi e lasciare cuocere per altri 5 minuti. Aggiungere i legumi misti e dopo circa 2 minuti mettere nella pentola la pasta e cuocere per circa 10 minuti (seguite le istruzioni sul pacco di pasta).
La zuppa è pronta: per renderla più cremosa, potete frullare circa un terzo dei legumi cotti e aggiungere la purea a fine cottura. Servite con un filo di olio EVO.

When the first cold weather comes, I'm always in a good mood: I like out in the morning feeling the fresh air that blows on your face; this gives me the right energy to start the day. I know I know, I can share this feeling with a few people, but believe me the advantage is that you can enjoy a season that often brings sadness: cold season makes me thinking of my house and the desire to be with my family.   And, why not, to be together in front of a nice steaming soup. This soup is an old recipe from Calabria, in quicker version (with canned vegetables) and light (no bacon or other animal fat) but still good and scented with porcini mushrooms. Of course you can use dried beans, to be soaked for 24 hours before cooking.

MILLECOSEDDE
INGREDIENTS (serves 4)
350 grams of canned mixed beans (haricots, chickpeas, lentils ...) or 150 grams of dried vegetables to soak, one onion, 200g of spinach or chard (even frozen), 30 grams of dried porcini mushrooms, tomatoes or fresh 400 grams, 2 tablespoons extra virgin olive oil, 1/2 liter of water, 320 grams of whole wheat pasta, dried fine herbs of your choice (sage, rosemary, thyme ...)
PREPARATION
Put the dried mushrooms in warm water for about 10 minutes. In a terracotta cooking pot heat the oil with the chopped onion, add the chopped tomatoes, and add water and a pinch of salt and fine herbs. Let cook for about 5 minutes. Add the spinach (or chard) and the softened mushrooms, cook for another 5 minutes. Add mixed beans and, after about two minutes, add pasta  and cook for about 10 minutes (follow the instructions on the pakage of pasta).
The soup is ready: to make it creamier, you can whip around a third of cooked beans and add the mashed at the end. Serve with a drizzle of extra virgin olive oil.

Le ricette di Nonna Anna: la minestra dei bimbi

Le giornate invernali, si sa, ci fanno venire un pochino di malinconia. Zuppe calde, dolci e cioccolata hanno il potere di consolarci e non a caso vanno sotto il nome di confort food! A me piace di tanto in tanto riproporre questa ricetta che la mia mamma faceva quando eravamo piccoli per abituarci a mangiare carne e verdure. Ve la lascio qui.

MINESTRA DEI BIMBI
INGREDIENTI (X4)
1 kg di scarola pulita e lessata (non troppo), 750 ml di brodo vegetale (anche di dado senza glutammato), olio EVO, uno spicchio di aglio, 300 grammi di carne macinata (quella che preferite), 70 grammi di formaggio grattugiato (parmigiano o grana padano).
PREPARAZIONE
Mettere 4 cucchiai di olio EVO in una pentola con uno spicchio d'aglio. Fare cuocere due minuti a fuoco medio, togliere l'aglio e mettere la scarola tagliata a pezzi. Mescolare e fare cuocere a fuoco medio per 5 minuti. Aggiungere il brodo caldo e fare sobbollire per 10 minuti. A parte preparate le polpettine, formando delle palline della grandezza di una grossa noce; passate le polpettine nel formaggio grattuggiato. Adagiare le polpettine sopra la verdura , coprite la pentola e fare cuocere a fuoco basso per circa 10 minuti.
Servite in piccole ciotole brodo, verdura e alcune polpettine. Mmmm, che profumo!

ENGLISH VERSION

As everyone knows, winter days make you feel a little bit of melancholy. Hot soups, sweets and chocolate have the power to comfort us and not by chance we call them comfort food! From time to time I like to prepare this recipe that my mom did when me and my brother were little kids, to make us used to eat meat and vegetables. Enjoy it!

SOUP FOR THE KIDS (ESCAROLE SOUP WITH SMALL MEATBALLS)
INGREDIENTS (serves 4)
1 kg of escarole clean and (not too much) boiled, 750 ml of vegetable stock (also from stock cube, without glutamate), extra virgin olive oil, a clove of garlic, 300 grams of ground beef (whichever you prefer), 70 grams of grated cheese (Parmesan or Grana Padano).
PREPARATION
Put 4 tablespoons extra virgin olive oil in a pan with a clove of garlic. Cook two minutes over medium heat, remove the garlic and put the escarole, cut into pieces. Stir and cook over medium heat for 5 minutes. Add the hot stock and simmer for 10 minutes. Apart prepare the meatballs: shape balls the size of a large walnut; then coat the meatballs in the grated cheese. Arrange the meatballs onto the vegetables gently boiling in the pan, cover with a lid and cook over low heat for about 10 minutes.
Serve in small bowls stock, vegetables and some meatballs. Mmmm, that smells good!

Zuppe calde, passione invernale




 
Ricette di ... corsa! - Vellutata di carciofi
In inverno abbiamo bisogno di coccolarci per compensare il freddo della stagione. Io adoro le zuppe, purchè con ingredienti di stagione. 

CREMA DI CARCIOFI
Ingredienti: 6 carciofi, 3-4 patate, aglio, olio EVO, latte o acqua o brodo vegetale.
PROCEDIMENTO Pulire i carciofi e le patate e tagliarli a pezzi. Nella pentola a pressione mettere uno spicchio d’aglio e 4 cucchiai di olio. Fare imbiondire l’aglio e poi toglietelo. Aggiungere le verdure in pezzi e due bicchieri di acqua con un pizzico di sale. Chiudere la pentola e mettere sul fuoco medio. Quando si sente il sibilo, abbassare la fiamma e calcolare 10 minuti di cottura. Aprire il coperchio e frullare tutto con il minipimer. Aggiungere un bicchiere di latte caldo (o brodo vegetale) e servire nei piatti con crostini di pane e parmigiano.

In winter we need to treat ourselves to compensate for the cold season. I love soups, but only with seasonal ingredients.

CREAMY ARTICHOKES SOUP
Ingredients: 6 artichokes, 3-4 potatoes, garlic, extra virgin olive oil, milk or water or vegetable stock.
PROCEDURE Clean the artichokes and potatoes and cut them into pieces. In the pressure cooker put a clove of garlic and 4 tablespoons of oil. Sauté the garlic and then remove it. Add the vegetables into pieces and two glasses of water with a pinch of salt. Close the pot and put on medium heat. When you hear the hiss, reduce heat and calculate 10 minutes of cooking. Open the lid and blend everything with the blender. Add a glass of warm milk (or vegetable stock) and serve with croutons and parmesan cheese.

Bianco come ....




Ormai l'inverno è arrivato e ce ne siamo accorti tutti in Italia!! E' una stagione che amo molto anche perché c'é una delle più belle feste dell'anno, il Santo Natale di Gesù. E' la vera festa di famiglia che, almeno per pochi giorni, riunisce tutti. E poi c'é sempre la possibilità che nevichi, anche se a Roma, dove vivo, non succede spesso. E così pensando al bianco della neve che scende dal cielo, mi consolo con una vellutata bianca, ispirata al blog di Hanneke. La ricetta originale prevede il salmone affumicato e la trovate qui. Io ho fatto una modifica dallo stile mediterraneo, che la rende vegetariana.  

VELLUTATA BIANCA
Ingredienti (per 4)
2 finocchi, 3 patate, mezzo litro di brodo (anche di dado), 8 pomodori secchi, olio EVO.
Preparazione
Pulire la verdure e tagliarle a pezzi. Mettere patate e finocchi nella pentola a pressione e aggiungere il brodo caldo. Dopo il sibilo, fare cuocere per circa 10-12 minuti. Frullate con il minipimer.
Servite la vellutata calda con i pomodori secchi passati in padella in un filo d'olio EVO.


Winter has now arrived, as we all realized here in Italy!! Winter is a season that I love so much because there is one of the best holidays of the year, the Holy Birth of Jesus. Christmas brings together the whole family, even if only for a few days. 
And then in winter there is always the possibility of snow, although in Rome, where I live, it does not happen often. 
Thinking about the white snow that falls from the sky, I confort myself with a velvet sauce, inspired by the blog of Hanneke. The original recipe requires smoked salmon and you can find it here. I made a change in Mediterranean-style, making this recipe all vegetarian.

SILKY WHITE
Ingredients (4)
2 fennel, 3 potatoes, 500 ml of vegetarian stock, 8 sun-dried tomatoes, extra virgin olive oil.
preparation
Clean the vegetables and cut into pieces. Put potatoes and fennel in a pressure cooker and add the hot stock. After the whistle, cook for about 10-12 minutes. Blend with the blender.
Serve the soup hot with dried tomatoes cooked in a pan in a little oil EVO.

Il colore viola



Che belli i colori, anche in autunno! E che buone le verdure in autunno! Gironzolando sul web ho trovato una ricetta sul sito di GNAMBOX  con il cavolo rosso, ortaggio che amo molto e che mi ricorda mia nonna Matilde, veneto-tedesca. La ricetta l'ho riadattata in forma light, per eliminare il bacon. Provatela!

ZUPPA IN VIOLA
Ingredienti
una cipolla, un porro, 500 gr di cavolo rosso, 300 ml di brodo vegetale, olio EVO, 8 pomodori secchi, una manciata di pistacchi.
PROCEDIMENTO
Scaldare quattro cucchiai di olio in una casseruola, aggiungere la cipolla tritata e il porro tagliato a rondelle. Rosolare bene per 5 minuti. Tagliare il cavolo a listarelle e aggiungerlo al soffritto. Coprire a filo con il brodo e cuocere per circa 25-30 minuti. Con un frullatore ad immersione frullare la verdura per ottenere una crema omogenea. Salare poco!Nel frattempo in una piccola padella mettere un cucchiaio di olio e aggiungere i pomodori secchi bolliti in acqua e tagliati a pezzetti e fare rosolare per 5 minuti. Servire la vellutata con i pomodori e i pistacchi.
I do love the beautiful colors of Fall! Wandering around on the web I found a recipe on the site of Gnambox with red cabbage, a vegetable that I love really much, and that reminds me of my grandmother Matilda, a Venetian-German great woman. I adapted the recipe in a light form cause my husband doesn't like the bacon. Try it!
VELVET SOUP IN PURPLE
Ingredients
One onion, one leek, 500 grams of red cabbage, 300 ml of vegetable broth, extra virgin olive oil, 8 dried tomatoes, a spoonful of pistachio nuts.
INSTRUCTIONS
Heat four tablespoons of olive oil in a saucepan, add the chopped onion and leek. Brown well for 5 minutes. Cut the cabbage into strips and add to the onion and leek. Pour the stock and cook for about 25-30 minutes. With an immersion blender, blend the vegetables to get a smooth cream. Salt just a bit! 
Meanwhile, in a small pan put a tablespoon of oil and add the dried tomatoes boiled in water and cut into small pieces; fry them gently for 5 minutes. Serve the soup with tomatoes and pistachios.

Autunno, tempo di zucche e di ...zuppe!!


L'autunno è la mia stagione, non solo perché ci sono nata, ma perché apprezzo moltissimo le giornate ancora belle ma non troppo calde e soprattutto la luce, che è ancora tanta ma con toni più caldi e morbidi della luce estiva, e assume toni più caldi e morbidi. Amo molto anche la frutta e la verdura di questo periodo, come l'uva, i fichi e le zucche. Vi lascio quindi una ricetta per una zuppa di zucca, che può essere consumata sia tiepida sia fredda. Da preparare sempre di corsa, però!!

ZUPPA ARANCIO
Ingredienti
800 gr di zucca, 4 patate medie, 200 gr di sedano, uno spicchio di aglio, olio EVO; facoltativi: semi misti (zucca, girasole, lino), curry o altre spezie a scelta.
Procedimento
Pulite tutte le verdure e tagliatele a pezzi, ad eccezione dell'aglio che potete lasciare intero per poi toglierlo con facilità. Mettete la verdura in una pentola a pressione con due bicchieri d'acqua, tre cucchiai di olio EVO, qualche spezia di vostra scelta e un pizzico di sale (poco!). Chiudere la pentola e mettere su fuoco vivace. Al momento del sibilo, abbassate un pochino la fiamma e calcolate circa 6-7 minuti. A cottura ultimata, far uscire il vapore, aprire la pentola e frullare il tutto con il minipimer (se non amate l'aglio, potete toglierlo prima di frullare). Mettere nei piatti e distribuire i semi vari. Per una versione più tradizionale (e ovviamente un po' più calorica) potete sostituire i semi con un po' di pecorino grattugiato. Questa zuppa si sposa bene anche con chicchi di riso o orzo lessi, da aggiungere a fine cottura.

ORANGE SOUP 
ingredients 
800 g pumpkin, 4 medium potatoes, 200 grams of celery, a clove of garlic, extra virgin olive oil; Optional: mixed seeds (pumpkin, sunflower, flax), curry or other spices of your choice. 
Method 
Wash all the vegetables and cut them into pieces, you can leave the garlic whole in order to remove it easily. Put the vegetables in a pressure cooker with two glasses of water, three tablespoons of extra virgin olive oil, some spices of your choice and salt (just a pinch!). Close the pot and put on high heat. At the time of the whistle, turn down the heat a little and cook for about 6-7 minutes. When cooked, allow steam to come out, open the cooker and mix all together with the blender (if you do not like garlic, you can remove it before blending). Place on plates and sprinkle with mixed seeds. For a more traditional version (of course with a bit more calories), you can replace the seeds with grated pecorino (Italian sheep cheese). This soup goes well with boiled rice or barley, to be added after cooking.

Zuppa, purché sia fredda!



Amo le zuppe! In inverno sembrano essere la migliore scelta, mentre in estate difficilmente pensiamo a questo piatto, perché di solito si consuma calda. Per fortuna il web è pieno di suggerimenti e ricette di zuppe estive con ingredienti di stagione. Qui vi aggiungo la mia ricetta preferita, per una cena fresca e colorata.

ZUPPA FREDDA DI CANNELLINI E POMODORO
Ingredienti (per 4)
due scatole di fagioli cannellini, una scatola di pomodori a pezzi (o 400 gr di pomodori freschi tagliati a pezzi), una cipolla fresca, una carota, timo fresco (o basilico fresco, se preferite), olio EVO, sale.

PROCEDIMENTO
Scolare i fagioli, tenendo da parte quattro cucchiai di liquido di cottura, e frullarli con un cucchiaio di olio EVO. Aggiungere il liquido di cottura dei fagioli e altri quattro cucchiai di acqua, mettere il frullato di cannellini in frigo. In una padella mettere la cipolla a fette e la carota a dadini e fare cuocere con quattro cucchiai di olio EVO. Aggiungere i pomodori a pezzi, qualche rametto di timo fresco, un pizzico di sale e fare cuocere a fuoco medio per circa 15 minuti. Spegnere il fuoco e fare raffreddare. 
In ciascun piatto mettere il frullato freddo di cannellini e al centro mettere un mestolo di pomodoro e verdure. Guarnire con qualche rametto di timo fresco. Se vi piace potete mescolare insieme i fagioli e il pomodoro, guarnendo con il timo.

I love soups! In winter it seem to be the best choice, while in summer we hardly think of this dish, because it usually is eaten hot. Luckily, the web is full of tips and recipes for summer soups with seasonal ingredients. Here I add my favorite recipe for a fresh and colorful dinner .

COLD  SOUP WITH TOMATO AND BEANS
Ingredients (serves 4)
2 tins of white beans (haricot), a tin of chopped tomatoes (or 400 gr fresh tomatoes cut into pieces), a fresh onion, a carrot, fresh thyme (or fresh basil, if you prefer), extra virgin olive oil, salt.

PROCEDURE
Drain the beans, keeping aside four tablespoons of the cooking liquid; blend beans with a tablespoon of extra virgin olive oil. Add the cooling liquid and four more tablespoons of fresh water, then put the blended beans in the fridge. In a pan put the sliced ​​onion and the diced carrot; and cook with four tablespoons of extra virgin olive oil. Add the chopped tomatoes, a few sprigs of fresh thyme, a pinch of salt and cook over medium heat for about 15 minutes. Turn off the heat and allow to cool.
In each plate put the cold blended beans and, in the middle, put a generous ladle of tomato sauce. Garnish with a few sprigs of fresh thyme. If you like you can mix together the beans and tomato then garnish with thyme.

Fresche sere d'estate



Bella l'estate, ma ai primi caldi tutti sbuffano! E' molto buffo vedere quanto siamo smemorati per i normali eventi meteorologici: ogni anno ci si meraviglia del caldo che arriva troppo presto, del troppo caldo, del troppo freddo...insomma si sbuffa!
Per "alleviare i disagi del primo vero caldo" perché non cenare con una bella zuppa...fredda (ma sempre rapida, eh)? Eccola qui, dedicata a mia nipote Gaia, ragazza coraggiosa!

ZUPPA FREDDA DI CAROTE E ZENZERO
Ingredienti (per 4)
2 cipolle bianche medie, 8 carote medie, 1 mela (meglio se renetta), 1 cucchiaio di zenzero fresco tritato, 700 gr di brodo vegetale (fatto anche con i preparati in polvere o dadi, ma senza glutammato), 4 cucchiai di yogurt bianco magro (per la versione vegan: yogurt di soia), aneto, olio EVO, sale (poco!)
Preparazione
Pulire e affettare le cipolle e farle rosolare in una pentola con 4 cucchiai di olio EVO. Pulire le carote e la mela, tagliarle a tocchetti e aggiungerle alle cipolle insieme allo zenzero tritato. Aggiungere il brodo vegetale, meglio se caldo, e fare cuocere per circa 20 minuti (se usate la pentola a pressione basteranno 5 minuti al massimo. Controllate qui ).  Alla fine frullate tutto con un frullatore ad immersione e fate raffreddare. Potete conservare la zuppa in frigo e al momento di servirla potete aggiungere in ogni piatto un cucchiaio di yogurt ben freddo e delle foglioline di aneto. 


Beautiful summer, but at the first warm, we all start snorting! It 's very funny to see how easily we are forgetful for normal weather events: every year we are surprised of the heat that comes too soon, too much heat, too much cold ... so we snort!
In order to "relieve the discomforts of the first real hot" why not dine with a beautiful soup ... cold  and of course quick to prepare? Here it is, dedicated to my niece Gaia, brave girl!

COLD AND GINGER CARROT SOUP
Ingredients (serves 4)
2 medium white onions, 8 medium carrots, 1 apple (I prefer rennet apple), 1 tablespoon minced fresh ginger, 700 grams of vegetable stock (also made with in powders or stock cubes, but without glutamate), 4 tablespoons of plain skimmed yogurt (for a vegan version use soy yogurt), dill, extra virgin olive oil, salt (very little!)
Preparation
Clean and slice the onions and brown them in a pan with 4 tablespoons of extra virgin olive oil. Clean carrots and the apple, cut into chunks and add to the onions along with chopped ginger. Add the vegetable broth, preferably warm, and cook for about 20 minutes (if you use a pressure cooker, just 5 minutes away at most. Check out here). Eventually blend with an immersion blender and let cool. You can store the soup in the fridge and when ready to serve you can add to each dish a spoonful chilled yogurt and dill leaves.

Non è la solita minestra!


Come molti di noi, cerco di  far seguire alla mia famiglia una dieta il più possibile variata e sana. Quindi due pasti a settimana prevedono una zuppa. Vi lascio immaginare la felicità dei miei figli! in ogni caso si sono ormai abituati, o forse rassegnati. 
A me piacciono molto le vellutate, purché non ci siano creme e panna. Una delle mie zuppe vellutate preferite è quella di porri e patate, per la quale ho qui una versione più allegra.

VELLUTATA DI PORRI E PATATE CON TOP MEDITERRANEO
4 grossi porri, 4 patate medie, 1 lt. brodo vegetale, 10-15 pomodori secchi, una cipolla, olio.
PREPARAZIONE
Pulite i porri e usate la parte bianca. Tagliateli a rondelle e fateli soffriggere in una casseruola con 4-5 cucchiai di olio EVO. Quando cominciano a prende colore aggiungete le patate pulite tagliate a cubi. Mescolate e aggiungete il brodo vegetale (fatto anche con il brodo istantaneo, purché senza glutammato). Fate cuocere nella pentola coperta a fuoco medio per circa 15 minuti (se usate la pentola a pressione basteranno 5-6 minuti dal sibilo). 
intanto affettate la cipolla e fatela appassire in poco olio EVO. Aggiungete i pomodori secchi tagliati a piccoli pezzi, dopo averli fatti sbollentati per due minuti. Fate cuocere insieme cipolla e pomodori per 5 minuti. 
Quando la zuppa è cotta, frullatela con il frullatore ad immersione.
Servite la zuppa nei piatti, aggiungendo alla fine due cucchiaiate di top mediterraneo (cipolla e pomodorini). vi consiglio di non mettere sale nella zuppa perché i pomodori secchi sono molto saporiti.

Like many of us, I try let my family have a healthy diet as far as possible. Therefore, twice a week there is a soup. You can imagine the happiness of my  kids! In any case they are now used to it, or perhaps they are resigned.
I really like velvet soups, provided there are with no fat creams. One of my favorite soups is leeks and potatoes soup, for which I have here my savory version.

LEEK AND POTATO SOUP WITH MEDITERRANEAN TOP
4 large leeks, 4 medium potatoes , 1 lt. vegetable stock, 10-15 dried tomatoes, 1 onion, olive oil.
PREPARATION
Clean the leeks and use the white part only. Cut into slices and fry in a pan with 4-5 tablespoons of extra virgin olive oil. When the leeks begin to turn amber color, add the diced potatoes. Stir and add the vegetable stock (if you like made ​​with instant soup, provided without glutamate). Cook in a covered pot over medium heat for about 15 minutes (in pressure cooker it will take 5-6 minutes from the whistle) .
Meanwhile, slice the onion and sauté in a little extra virgin olive oil. Add the sun-dried tomatoes cut into small pieces, after having made them blanched for two minutes. Cook onion and tomatoes together for 5 minutes.
When the soup is cooked, blend it with the immersion blender. Serve in soup plates, adding two tablespoons of our Mediterranean top (onions and dried tomatoes). I recommend not put salt in the soup, because the sun-dried tomatoes are very tasty.

Soup's ready!!

E' inverno, fa freddo, è quasi capodanno ed io posto la ricetta di una zuppa!! Sarete infatti pieni di menù per festeggiare l'ultimo giorno dell'anno, non credo di essere all'altezza! io amo quello che si chiama comfort food, il cibo che ti da il benessere e il buonumore. E diciamocelo, nel periodo delle feste siamo tutti un pochino malinconici e abbiamo bisogno di coccole! Io mi coccolo così.


ZUPPA DELLA FINE DELL'ANNO
INGREDIENTI
300 gr di cavolo nero lessato ( si, il cavolo nero della ribollita. io lo pulisco così: pulire il cavolo nero) 400 gr di pomodori pelati, una cipolla, una carota, uno spicchio di aglio, del peperoncino (facoltativo), 200 gr di fagioli lessi (io per questa ricetta preferisco i borlotti, ma vanno bene anche i cannellini o altri fagioli di vostra scelta), salvia secca, sale, olio EVO.
PROCEDIMENTO
Nella pentola, meglio se di coccio, fare appassire con due-tre cucchiai d'olio la cipolla e lo spicchio d'aglio affettati finemente. Aggiungere il pomodoro a pezzetti, la carota a dadini e la salvia e fare insaporire per 10 minuti a fuoco medio. Aggiungere il callo nero tagliato a pezzetti e fare insaporire per altri 10 minuti. infine aggiungere 600 gr di acqua tiepida e fare cuocere ancora 5 minuti. Alla fine unire i fagioli, aggiungere un pizzico di sale (e peperoncino se volete) e mescolare la zuppa. Si può servire con pane raffermo messo nel fondo del piatto o con un pochino di pasta corta (da lessare a parte). Alla fine potete aggiungere un filino d'olio EVO. E Buon Anno!

It's winter, it's cold, it's almost New Year's Eve and ... I post the recipe for a soup! The wed is full of menus to celebrate the last day of the year, so I cannot compete with them!! In this season I love what is called comfort food, food that gives you well-being and good humor. And let's face it, during the holidays we're all a little bit sad and we need pampering! And this is the way I cuddly! 


SOUP OF THE END OF THE YEAR
INGREDIENTS
300 grams of boiled black Tuscan kale (this is the famous "cavolo nero": http://en.wikipedia.org/wiki/Dinosaur_kale, I prepare it this way: http://youtu.be/4yGJlaYuzOM) 400 g of peeled tomatoes, an onion, a carrot, a clove of garlic, chilli (optional), 200g of boiled beans, dried sage, salt, extra virgin olive oil (EVO).
PROCEDURE
In the pot  preferably a terracotta pot, put two or three tablespoons of olive oil  and let cook slowly the onion and the garlic clove thinly sliced ​. Add the chopped tomatoes, the diced carrot and dried sage , then cook for 10 minutes over medium heat. Add the chopped black kale and then cook for other 10 minutes. Finally, add 600 grams of warm water and cook 5 more minutes. Eventually add the beans,  a pinch of salt ( and chili if you like) and stir the soup. You can serve it with stale bread placed in the bottom of the dish or with a little bit of pasta (to boil separately). Finally you can add a drizzle of extra virgin olive oil.
