Non il solito fiore...di zucchina!


Al mercato ho comprato un mazzetto di fiori di zucchina. "Li fai fritti?" È la solita domanda che mi viene fatta. Fritti sono certamente buoni, ma oltre a non essere adatti a tutti, trovo che questa cottura sia molto "aggressiva"e copra troppo il gusto fresco di questa delizia dell'orto. Quindi ecco qui una fresca e profumata alternativa al fritto.

FIORI DI ZUCCHINA AL PROFUMO DELL'ORTO
Ingredienti
14 fiori di zucchina, freschi e intatti, 200 gr. di formaggio "primo sale" o di un'altro formaggio fresco (anche la ricotta va bene; per una versione vegana si può usare il tofu), 10 pomodori secchi, una piccola cipolla fresca, olio EVO, un mazzetto di erbe aromatiche fresche (basilico, erba cipollina, salvia, menta, rosmarino, timo).
Procedimento
Lavare i fiori. In una ciotola tagliare il formaggio fresco a dadini e unire le erbe aromatiche tritate. Fare bollire i pomodori secchi per 2 minuti, scolarli e tagliarli a pezzettini. Metterli in una casseruola con la cipollina a fettine e un cucchiaio di olio EVO e farli insaporire (non aggiungere sale!).
Riempire i fiori con il formaggio alle erbe e adagiarli in una teglia da forno unta di olio. Metterli in forno a 180° per circa 15 minuti, sfornarli e guarnirli con i pomodori secchi e cipollina. Che ne dite?

So here's a fresh and scented alternative to fried zucchini flowers.

ZUCCHINI FLOWERS OF THE GARDEN

INGREDIENTS
14 zucchini flowers, fresh and intact, 200 gr. fresh cheese "primo sale" or another soft cheese (including cottage cheese; for a vegan version , you can use tofu ), 10 sun-dried tomatoes , a little fresh onion , extra virgin olive oil , a bunch of fresh herbs ( basil , chives , sage, mint, rosemary, thyme) .
PREPARATION
Wash the flowers. In a bowl, cut the cheese into cubes and add the chopped herbs. Boil dried tomatoes for 2 minutes, drain and cut into small pieces. Put them in a saucepan with the onion slices and a tablespoon of olive oil and season them (do not add salt !) .
Fill the flowers with cheese and herbs and put them in a baking pan greased with oil. Put them in the oven at 180 degrees for about 15 minutes, remove from the oven and garnish with dried tomatoes and onion . What do you think of this recipe?

La pasta al forno col sapore d'autunno



La ricerca dei sapori di stagione non mi stanca mai, così come non mi stancano i frutti che ci regala l'autunno. Ogni stagione ha le sue bellezze, un po' come la vita, dobbiamo saperne approfittare.
Spesso quando vengono molti amici a cena la soluzione migliore è una bella pasta al forno, da preparare prima e scaldare al forno quando è il momento. 
In questa ricetta ho realizzato una semplice besciamella con la zucca, unito un bel po' di funghi misti, insaporito con la provola affumicata e decorato con striscioline di pomodori secchi. What else? Da provare.

PASTA AL FORNO CON BESCIAMELLA DI ZUCCA E FUNGHI MISTI
Ingredienti (per 10)
Pasta corta preferibilmente integrale (io ho usato pennette rigate) 750 gr, latte intero 500 gr, farina due cucchiai, zucca pulita 500 gr, funghi misti puliti (anche surgelati) 350 gr, provola affumicata 500 gr, olio evo, salvia e prezzemolo tritati, paprica affumicata (facoltativa), curcuma (facoltativa).

Preparazione
1. Preparare la besciamella alla zucca: mettere in una pentola la farina con 4 cucchiai di olio evo e fare assorbire piano piano l'olio nella farina, evitando di formare grumi. Aggiungere piano piano il latte: si formerà una crema mano a mano sempre più liquida. Aggiungere un pizzico di sale e noce moscata, accendere il fuoco medio e mescolare fino a quando non sarà diventata una salsa piuttosto soda.
2. Tagliare la zucca a pezzi e cuocerla al vapore  (anche al microonde) fino a che sarà ben morbida. Aggiungere la zucca alla besciamella e frullare tutto. Potete aggiungere un cucchiaino di curcuma e/o di paprica affumicata.
3. Cuocere i funghi puliti. In una padella o casseruola bassa mettere uno spicchio d'aglio schiacciato e "incamiciato" (senza togliere la buccia, quindi) con due cucchiai di olio evo. Fare scaldare l'olio e aggiungere i funghi a fuoco vivace. Mescolare bene e cuocere 10 minuti con il coperchio. Dopo togliete il coperchio, abbassate la fiamma e cuocere mescolando per altri 15 minuti. Chiudere il fuoco, togliere l'aglio e cospargere con il trito di prezzemolo e salvia.
4. In una pentola grande mettere l'acqua e quando inizia a bollire mettere la pasta. Salare l'acqua e fare bollire per un terzo del tempo previsto per la cottura. Scolare la pasta e metterla in un recipiente condita con 4 cucchiai di olio evo, la besciamella di zucca e i funghi cotti. Mescolare bene.
5. In una teglia da forno mettere un primo strato di pasta, funghi e besciamella, cospargere con dadini di provola affumicata e coprire con un altro strato di pasta.
6. Cospargere con parmigiano grattugiato e striscioline di pomodori secchi, che prima avrete fatto bollire per circa 3 minuti. Mettere in forno a 200 gradi per circa 20 minuti. Servire calda.

BAKED PASTA WITH PUMPKIN BECHAMEL AND MIXED MUSHROOMS

Ingredients (serves 10)
Dried penne pasta 750 gr, whole milk 500 gr, two tablespoons of flour, peeled pumpkin 500 gr, mixed mushrooms, peeled and washed (even frozen) 350 gr, smoked provola (or mozzarella) 500 gr, evo oil, sage and parsley chopped, smoked paprika (optional), turmeric (optional).

Preparation
1. Prepare the pumpkin bechamel sauce: put the flour in a saucepan with 4 tablespoons of evo oil and mix gently to let the flour slowly absorb the oil, avoiding the formation of lumps. Add the milk slowly: it will form a cream that will turn the more and more liquid. Add a pinch of salt and nutmeg, cook  and mix until it becomes a rather soda sauce.
2. Cut the pumpkin into pieces and cook it to the steam (even the microwave) until it will be soft. Add the pumpkin to the bechamel and whip it all. You can add a teaspoon of turmeric and / or smoked paprika.
3. Cook the mixed mushrooms. In a small pan or casserole put a clove of garlic crushed and not the peeled, with two tablespoons of evo oil. Heat the oil and add the mushrooms. Mix well and cook for 10 minutes with lid. After removing the lid, lower the flame and cook by mixing for another 15 minutes. Close the fire, remove the garlic and sprinkle with chopped parsley and sage.
4. Put the water in a large pot and when it starts to boil, add the pasta. Salt water and boil for one-third of the cooking time. Drain the pasta and put it in a saucepan with 4 tablespoons of evo oil, pumpkin bechamel and cooked mushrooms. Mix well.
5. In a baking pan, put a first layer of pasta, mushrooms and bechamel, sprinkle with smoked provola cubes and cover with another layer of pasta.
6. Sprinkle with grated Parmesan cheese and dried tomato stripes, which you have boiled in advance for about 3 minutes. Place in oven at 200 degrees for about 20 minutes. Serve hot.

Caldo non ti temo: il pane dal profumo d'estate



Che estate, calda e umidosa. Ce ne sono state molte altre, che ricordo con scarso piacere, ma si sa quella in corso è sempre "l'estate più calda di tutti i tempi"!!
Devo dire che nei giorni a 40 gradi lo stop al forno c'è stato, con mio sommo dispiacere. Ma ora che siamo tornati a un normale caldo estivo, 30/32 gradi, ho potuto mettere in pratica un'idea maturata durante le vacanze calabresi. Sia chiaro che le mie sono ricette che probabilmente si trovano già sul web; quando copio però cito la fonte, altrimenti sono mie idee magari non originali ma provate e riprovate prima di scriverle qui.
Dunque io amo i pomodori, freschi e secchi, soprattutto quelli del Sud che, diciamolo, hanno un sapore inconfondibile. Quindi perché non usarli nel mio pane? Ecco qui, detto fatto vi lascio la ricetta del pane che profuma d'estate. Provate, occorrono solo circa tre ore dall'impasto a quando si sforna!

PANE D'ESTATE
Ingredienti:
250 gr farina Manitoba (o farina 0), 250 gr di farina di semola rimacinata, lievito di birra (25  gr di lievito fresco, 10 gr/una bustina di lievito liofilizzato), un cucchiaino di malto (in alternativa un cucchiaino di zucchero), 330 gr di acqua a temperatura ambiente, 2 cucchiai di olio EVO, 10 pomodori secchi, sale (poco!), origano (facoltativo).

Procedimento

  1. Mettere il lievito di birra in una ciotola, con il cucchiaino di malto (o zucchero) e l'acqua; mescolare. aggiungere i due cucchiai di olio evo e poco a poco le due farine; aggiungere un pizzico di sale.
  2. Infarinare un piano di lavoro e impastare per circa 10 minuti; mettere la pasta a  lievitare in una ciotola, coperta da un panno umido per circa due ore (potete metterla nel forno spendo, lontano da correnti d'aria)
  3. Prendere i pomodori secchi e metterli a bollire in acqua per circa due minuti; scolarli e tagliarli a pezzettini.
  4. Riprendere la pasta, stenderla con le mani e aggiungere i pezzetti di pomodoro; impastare per distribuire uniformemente i pomodori nell'impasto.
  5. Dividere la pasta in due parti uguali; stendere la prima metà sul piano di lavoro infarinato in uno spessore di circa un cm; tagliare delle strisce che poi attorciglierete su se stesse, come piccole baguettes; adagiare le strisce attorcigliate su una teglia con carta forno.
  6. Ripetete l'operazione con l'altra metà della pasta; dovreste riempire due teglie; cospargete con origano e fate lievitare coperto con un panno umido per circa mezz'ora.
  7. Mettere la teglia in forno preriscaldato a 250° per circa mezz'ora o fino a che le piccole baguettes non saranno dorate. 
  8. Sfornare, fare raffreddare e ...gustate il sapore dell'estate!

English version

SUMMER BREAD
Ingredients:
250 gr of Manitoba flour (or all purpose flour), 250 gr of remilled durum wheat (in alternative use just 500 gr of all purpose flour), 25 gr of fresh yeast or 8/10 gr/one bag of dry yeast), one teaspoon of malt (alternatively one teaspoon of sugar), 330 gr of water at room temperature, 2 tablespoons of EVO oil, 10 dried tomatoes, salt (a pinch!), oregano (optional).

Method
  1. Combine in a bowl the yeast with the malt (or sugar) and the water; add the two tablespoons of Evo oil and, little by little, the two flours; add a pinch of salt.
  2. Sprinkle a little flour on your counter and knead the dough for about 10 minutes; put it into a bowl, covered with a damp cloth for about two hours until doubled in size (you can put it inside a cool oven, away from air flows).
  3. Boil the dried tomatoes for about two minutes; drain and cut into small cubes.
  4. Turn the risen dough and flatten it on top, then add the tomato cubes; knead to distribute evenly the tomatoes in the dough.
  5. Divide the dough into two parts; roll or pat the first half on the floured counter to a thickness of about one centimeter; cut into stripes and twist each stripe on themself, the shape will remind a small baguette; place the twisted stripes on an tray covered by a baking paper.
  6. Repeat the operation with the other half of the dough; you should fill two trays; sprinkle the mini baguettes with oregano and let them rise again covered with a damp cloth for about half an hour.
  7. Place the baking tray in a preheated oven at 250° for about half an hour or until the small baguettes will be golden.
  8. Take out of oven, cool and ... enjoy the taste of summer!

Profumi del Sud - Crema di cicerchie con pomodori



Queste vacanze estive le abbiamo dedicate all'Italia e abbiamo deciso di andare a in Calabria, la regione delle nostre origini, con una piccola deviazione verso la Basilicata (Matera) e la Puglia (Altamura). Pochi giorni che ci hanno fatto apprezzare le bellezze del nostro Paese: non solo monumenti e natura strepitosi, ma anche la cordialità e la gentilezza degli Italiani, davvero uniche. E viaggiando qui e là in Europa vi posso assicurare che il fattore umano non è affatto secondario.
In Puglia ho acquistato della pasta mista e della cicerchia, un legume antico e non troppo diffuso, da conoscere meglio qui, mentre in Calabria ho preso cipolle di Tropea e pomodori secchi.
Con questi pochi ingredienti ho preparato una zuppa molto semplice, ricca di sapori e colori antichi, che si perdono nella lunga cultura culinaria del nostro Paese. 
Per calcolare i tempi occorre ricordare che la Cicerchia va messa a mollo la sera prima, per circa 8 ore. Potete cuocere una quantità doppia di cicerchia e metterne una parte in freezer, per averla pronta più rapidamente quando vi serve.
Se non trovate la cicerchia provate questa ricetta con le fave decorticate!

CREMA DI CICERCHIA E POMODORI 
Ingredienti (per 6 persone)
Cicerchia secca 400 gr, pasta mista secca 300 gr, una grossa cipolla rossa di Tropea, 50 gr di pomodori secchi, olio evo, sale (poco, ci sono i pomodori secchi!).
Procedimento
Mettere in ammollo la cicerchia per circa otto ore e cambiare l'acqua un paio di volte. Gettare via l'acqua dell'ammollo, sciacquare la cicerchia e togliere le bucce dure. Coprire la cicerchia con acqua fredda e un pizzico di sale e fare cuocere per 40 minuti. Una volta cotta, frullare con un miniper; nel frattempo lessate la pasta in abbondante acqua bollente, scolatela e unitela al purè di cicerchia, aggiungendo tre cucchiai di olio evo. In una padella fate appassire la cipolla e aggiungete i pomodori secchi, sciacquati e tagliati  striscioline. Quando i pomodori saranno cotti, metterli al centro del piatto di servizio. 
Buona anche fredda!

These summer holidays decided to stay in Italy and go to Calabria, the region of our origins, with a small detour to Basilicata (Matera) and Puglia (Altamura). In Puglia I bought mixed dried pasta and grass pea , an ancient leguminous plant (to know it better, click here), and in Calabria I took Tropea onions and dried tomatoes.
With these few ingredients I made a very simple soup, rich in ancient flavors and colors, which belong to the ancient culinary culture of our country.
To calculate the whole cooking time,  remember that the grass pea should be put to soak the night before, for about 8 hours. You can cook twice the amount of grass pea and put one hand in the freezer, to have it ready as quickly when you need it.
If you do not find grass pea, try this recipe with peeled broad beans!

CICERCHIA CREAM WITH TOMATOES
Ingredients (serves 6)
dry grass pea 400 g, 300 g mixed dried pasta, a large red onion, 50 grams of dried tomatoes, olive oil, salt (just a pinch, because of sun-dried tomatoes!).
Method
Soak grass pea for about eight hours, changing the water a couple of times. Throw away the water used for the soaking, rinse and remove the grass pea tough peels. Cover the grass pea with cold water and a pinch of salt and cook for 40 minutes. Once cooked, blend with a miniper; Meanwhile boil the pasta in boiling water, drain and add to the grass pea puree, adding three tablespoons of olive oil. In a frying pan, cook the sliced onion with olive oil and add the dried tomatoes, rinsed and cut into strips. When the tomatoes are cooked, place them at the center of the serving dish. Enjoy!

Burger di quinoa alla mediterranea



Le feste di Pasqua ci regalano un lungo weekend spesso con il primo vero sole di primavera. Non è stato così in questo 2016 e quindi ho approfittato di una Pasquetta casalinga per sperimentare una nuova ricetta. Diciamo che ero anche alla ricerca di qualcosa di sfizioso che però mi aiutasse a smaltire gli eccessi del giorno di Pasqua, passato in famiglia con dolci e cioccolata a non finire. 
Per i miei burger ho scelto la quinoa, un "falso cereale" dalle proprietà straordinarie (info che potete trovare qui).
Ecco qui la ricetta

BURGER DI QUINOA ALLA MEDITERRANEA

Ingredienti (per 8 burgers)
200 gr di quinoa (rossa, bianca o mix, come preferite), una patata (circa 200 gr.), due scalogni, otto pomodori secchi, timo, olio evo.

Procedimento
Sciacquare la quinoa e farla cuocere in 400 gr di acqua fredda, fino a che l'acqua non si sarà tutta assorbita. Lessare la patata con la buccia. In una padella antiaderente mettere due cucchiai di olio EVO, gli scalogni tagliati a fettine e i pomodori secchi già sciacquati, tagliati a pezzetti. Fare cuocere per circa 5 minuti e aggiungere alla fine delle foglioline di timo. Mescolare con le mani tutti gli ingredienti: la quinoa e la patata lessa ormai fredde e il composto di scalogni e pomodori. Dividere l'impasto in otto parti e formare dei burger (ci si può aiutare con un coppapasta). Mettere i burger su una placca coperta di carta da forno e cuocere a 200° per circa 10 minuti per lato. Ottimi con un'insalata o una verdura cotta per un pasto veloce e detox.

Easter holidays give us a long weekend often with the first spring sunshine. It was not so in this in 2016 and then took advantage of a gloomy Easter Monday to prepare a new recipe. Let's say that I was looking for something tasty that can help me to work off some of Easter lunch!

QUINOA BURGER  MEDITERRANEAN STYLE

Ingredients (for 8 burgers)
200 grams of quinoa (red, white or mix, as you prefer), a potato (about 200 gr.), two shallots, eight dried tomatoes, thyme, extra virgin olive oil.

Method
Rinse the quinoa and cook in 400 grams of cold water, until the water is all absorbed. Boil the potatoe in its skin. In a pan put two tablespoons of oil, sliced shallots, dried tomatoes already rinsed, cut into pieces. Cook for about 5 minutes and eventually add thyme leaves. Mix with your hands all the ingredients: quinoa and boiled potato, now cold,  and the mixture of shallots and tomatoes. Divide the dough into eight pieces and form burger (we can use a pastry ring). Put the burger on a plate covered with parchment paper and bake at 200 degrees for about 10 minutes per side. 
Excellent with a green salad or cooked vegetables for a fast and detox meal.

Il colore viola



Che belli i colori, anche in autunno! E che buone le verdure in autunno! Gironzolando sul web ho trovato una ricetta sul sito di GNAMBOX  con il cavolo rosso, ortaggio che amo molto e che mi ricorda mia nonna Matilde, veneto-tedesca. La ricetta l'ho riadattata in forma light, per eliminare il bacon. Provatela!

ZUPPA IN VIOLA
Ingredienti
una cipolla, un porro, 500 gr di cavolo rosso, 300 ml di brodo vegetale, olio EVO, 8 pomodori secchi, una manciata di pistacchi.
PROCEDIMENTO
Scaldare quattro cucchiai di olio in una casseruola, aggiungere la cipolla tritata e il porro tagliato a rondelle. Rosolare bene per 5 minuti. Tagliare il cavolo a listarelle e aggiungerlo al soffritto. Coprire a filo con il brodo e cuocere per circa 25-30 minuti. Con un frullatore ad immersione frullare la verdura per ottenere una crema omogenea. Salare poco!Nel frattempo in una piccola padella mettere un cucchiaio di olio e aggiungere i pomodori secchi bolliti in acqua e tagliati a pezzetti e fare rosolare per 5 minuti. Servire la vellutata con i pomodori e i pistacchi.
I do love the beautiful colors of Fall! Wandering around on the web I found a recipe on the site of Gnambox with red cabbage, a vegetable that I love really much, and that reminds me of my grandmother Matilda, a Venetian-German great woman. I adapted the recipe in a light form cause my husband doesn't like the bacon. Try it!
VELVET SOUP IN PURPLE
Ingredients
One onion, one leek, 500 grams of red cabbage, 300 ml of vegetable broth, extra virgin olive oil, 8 dried tomatoes, a spoonful of pistachio nuts.
INSTRUCTIONS
Heat four tablespoons of olive oil in a saucepan, add the chopped onion and leek. Brown well for 5 minutes. Cut the cabbage into strips and add to the onion and leek. Pour the stock and cook for about 25-30 minutes. With an immersion blender, blend the vegetables to get a smooth cream. Salt just a bit! 
Meanwhile, in a small pan put a tablespoon of oil and add the dried tomatoes boiled in water and cut into small pieces; fry them gently for 5 minutes. Serve the soup with tomatoes and pistachios.

Vecchio e nuovo....

Mi sono sempre considerata una persona con i piedi ben piantati nel passato ma con la testa rivolta al futuro. Nel passato ci sono le persone care e gli insegnamenti che mi hanno lasciato, nel futuro c'é tutto ciò che è scoperta, fantasia e novità. Ci sentiamo tutti un po' così? Forse....
Anche per il cibo applico la stessa regola: un po' di vecchio e noto, un po' di nuovo e (quasi) sconosciuto.
Il tofu l'ho conosciuto in Cina la prima volta che sono stata lì nel 1987. Mi ha subito incuriosito ed ho cercato di inserirle questo cibo "nuovo" nel mio "vecchio" ricettario. Provate questa versione.

TOFU MEDITERRANEO
INGREDIENTI (x4)
300 gr di tofu al naturale, 10-15 pomodori secchi, una grossa cipolla, olio EVO, origano (facoltativo)
PREPARAZIONE
Versare due tre cucchiai di olio EVO in una padella e aggiungere la cipolla affettata. Sbollentare i pomodori secchi per 2 minuti, tagliarli a pezzettini e aggiungerli alla cipolla. Fare cuocere a fuoco medio per 5 minuti, se è necessario aggiungere un pochino di acqua calda. Sgocciolare il tofu, tagliarlo a cubi e aggiungerlo alla cipolla e ai pomodori. Fare cuocere per altri 5 minuti e mescolare spesso. NON SALARE!! A fine cottura si può aggiungere un pizzico di origano. Per cambiare questa ricetta si possono aggiungere delle olive nere o dei capperi. O entrambi!

I tried tofu during my first time in China, in 1987. I was immediately intrigued  by it and tried to include this new food in my "old" cookbook. Try this version.

MEDITERRANEAN TOFU

INGREDIENTS (serves 4)
300 grams of natural tofu, 10-15 dried tomatoes, a large onion, extra virgin olive oil, oregano ( optional).
PREPARATION
Put two or three tablespoons of extra virgin olive oil in a pan and add the sliced ​​onion. Blanch the dried tomatoes for 2 minutes, cut into small pieces and add to the onion. Cook over medium heat for 5 minutes, if you need to add a little hot water. Drain the tofu, cut into cubes and add to the onion and tomatoes in the pan. Cook for another 5 minutes and stir often. DO NOT SALT! At the end of cooking you can add a pinch of oregano. To change this recipe you can add black olives or capers. Or both!

Non è la solita minestra!


Come molti di noi, cerco di  far seguire alla mia famiglia una dieta il più possibile variata e sana. Quindi due pasti a settimana prevedono una zuppa. Vi lascio immaginare la felicità dei miei figli! in ogni caso si sono ormai abituati, o forse rassegnati. 
A me piacciono molto le vellutate, purché non ci siano creme e panna. Una delle mie zuppe vellutate preferite è quella di porri e patate, per la quale ho qui una versione più allegra.

VELLUTATA DI PORRI E PATATE CON TOP MEDITERRANEO
4 grossi porri, 4 patate medie, 1 lt. brodo vegetale, 10-15 pomodori secchi, una cipolla, olio.
PREPARAZIONE
Pulite i porri e usate la parte bianca. Tagliateli a rondelle e fateli soffriggere in una casseruola con 4-5 cucchiai di olio EVO. Quando cominciano a prende colore aggiungete le patate pulite tagliate a cubi. Mescolate e aggiungete il brodo vegetale (fatto anche con il brodo istantaneo, purché senza glutammato). Fate cuocere nella pentola coperta a fuoco medio per circa 15 minuti (se usate la pentola a pressione basteranno 5-6 minuti dal sibilo). 
intanto affettate la cipolla e fatela appassire in poco olio EVO. Aggiungete i pomodori secchi tagliati a piccoli pezzi, dopo averli fatti sbollentati per due minuti. Fate cuocere insieme cipolla e pomodori per 5 minuti. 
Quando la zuppa è cotta, frullatela con il frullatore ad immersione.
Servite la zuppa nei piatti, aggiungendo alla fine due cucchiaiate di top mediterraneo (cipolla e pomodorini). vi consiglio di non mettere sale nella zuppa perché i pomodori secchi sono molto saporiti.

Like many of us, I try let my family have a healthy diet as far as possible. Therefore, twice a week there is a soup. You can imagine the happiness of my  kids! In any case they are now used to it, or perhaps they are resigned.
I really like velvet soups, provided there are with no fat creams. One of my favorite soups is leeks and potatoes soup, for which I have here my savory version.

LEEK AND POTATO SOUP WITH MEDITERRANEAN TOP
4 large leeks, 4 medium potatoes , 1 lt. vegetable stock, 10-15 dried tomatoes, 1 onion, olive oil.
PREPARATION
Clean the leeks and use the white part only. Cut into slices and fry in a pan with 4-5 tablespoons of extra virgin olive oil. When the leeks begin to turn amber color, add the diced potatoes. Stir and add the vegetable stock (if you like made ​​with instant soup, provided without glutamate). Cook in a covered pot over medium heat for about 15 minutes (in pressure cooker it will take 5-6 minutes from the whistle) .
Meanwhile, slice the onion and sauté in a little extra virgin olive oil. Add the sun-dried tomatoes cut into small pieces, after having made them blanched for two minutes. Cook onion and tomatoes together for 5 minutes.
When the soup is cooked, blend it with the immersion blender. Serve in soup plates, adding two tablespoons of our Mediterranean top (onions and dried tomatoes). I recommend not put salt in the soup, because the sun-dried tomatoes are very tasty.
