Un dolce insolito? La mia Barbatorta (di Marco Bianchi)


Che gusto c'é a "copiare" le ricette se poi non si cambiano un po'? Io lo faccio praticamente sempre. Questa ricetta è una di quelle di Marco Bianchi, http://www.marcobianchi.blog/ , che seguo molto. La barbabietola, che è l'ingrediente insolito di questa buonissima torta, a me è sempre piaciuta. L'unico rammarico per  questa torta è che il fantastico colore della barbabietola svanisce con la cottura. E allora mi sono inventata una decorazione che lo ricorda. Tutta naturale, eh! Provatela

BARBATORTA (ISPIRATA ALLA RICETTA DI MARCO BIANCHI)

Ingredienti (per 8)
120 gr di barbabietola lessata, 100 gr di farina semintegrale, 100 gr di farina normale, 150 gr di farina di mandorle, 80 gr di zucchero di canna integrale mascovado, una bustina di lievito in polvere, un cucchiaino di vaniglia, 70 gr di olio di mais, 180 ml di latte vegetale alla mandorla (o quello che preferite), 120 gr di cioccolato fondete al 70%. Per la decorazione: 125 gr di zucchero a velo, qualche cucchiaio di acqua, due cucchiaini di polvere di barbabietola disidratata (in alternativa usate del colorante naturale in polvere).

Procedimento
1. Mescolare insieme tutti gli ingredienti secchi: le farine, lo zucchero, la farina di mandorle, la vaniglia e il lievito.
2. Frullare la barbabietola con metà del latte vegetale.
3. Sciogliere a bagnomaria (o nel microonde) il cioccolato con l'altra metà della bevanda vegetale.
4. Unire agli ingredienti secchi la barbabietola frullata, l'olio di mais e il cioccolato fuso.
5. Mettere in una tortiera foderata di carta forno e cuocere in forno per circa 50 minuti a 180 gradi.
6. Fare raffreddare la torta. Mescolare lo zucchero a velo con poca acqua fino ad ottenere una glassa fluida. Aggiungere la polvere di barbabietola ed eventualmente qualche altro cucchiaino d'acqua.
7. Spalmare la glassa rossa sulla torta e decorare con stelline di zucchero.

English version

BEETCAKE (BEETROOT CAKE)
Ingredients (for 8)
120 gr of boiled beet, 100 grams of semi-integral flour, 100 gr of all purpose flour, 150 gr of almond flour, 80 gr of wholewheat cane sugar, a bag of baking powder, a teaspoon of vanilla powder, 70 gr of oil of corn, 180 ml of almond-vegetable milk (or other of your choice), 120 gr of chocolate for 70%. For the topping: 125 g of icing sugar, a few spoonfuls of water, two teaspoons of dehydrated beet powder (alternatively use natural powdered colors).

Method
1. Mix together all the dry ingredients: flours, sugar, almond flour, vanilla and yeast.
2. Blend the beet with half of the vegetable milk.
3. Melt the chocolate with the other half of the vegetable milk in a bain-marie (or microwave).
4. Combine dry ingredients with shredded beet, corn oil and melted chocolate.
5. Put in a baking dish covered with parchment paper and cook in the oven for about 50 minutes at 180 degrees.
6. Cool the cake. Mix the icing sugar with one/two spoons of water until turns into a fluid icing. Add the beet powder and, if necessary, some other teaspoon s of water.
7. Spread the red icing on the cake and decorate with sugar stars.

Budino d'estate? Si, ma senza cottura!


L'estate non è la mia stagione preferita: troppo caldo, troppa luce, troppo caos. Naturalmente pur non essendo la mia preferita, apprezzo molti aspetti dell'estate: le lunghe giornate, le vacanze, la frutta fresca... insomma sono tanti i motivi per apprezzarla!
Il caldo mi spinge spesso a provare ricette che non richiedono la cottura, per motivi ovvi. Di recente, nel mio ultimo viaggio a Praga ho assaggiato questo budino di semi di chia, una pianta che non conoscevo affatto. Prima di tutto è senza cottura, perché i semi di chia tendono a gelificare quando sono a contatto con dei liquidi. Inoltre questi semi hanno delle interessanti proprietà, ad esempio sono molto ricchi di calcio e hanno molti acidi grassi essenziali, gli omega3. Se volete più informazioni  sulle proprietà e gli usi di questi semi cliccate qui. Io li compro al supermercato, anche se sono in commercio nella UE solo dal 2009 ormai è facile reperirli. 
Dopo aver assaggiato questo budino con della frutta fresca sopra ho cercato la ricetta e l'ho provata. Il procedimento è velocissimo e super facile, quindi...provate anche voi!!

BUDINO DI SEMI DI CHIA

Ingredienti (per 2 persone)
45 gr di semi di chia, 300 gr di latte vegetale (riso, mandorla, quello che preferite), tre cucchiaini di zucchero (facoltativo). 
Procedimento
In un vaso capiente con chiusura ermetica mettete i semi di chia e aggiungete il latte vegetale. Mescolate bene, chiudendo il vasetto e agitandolo energicamente. Mettete in frigo; dopo una mezz'ora comincia a gelificare e il liquido diventa budinoso. Io lo preparo la sera per la colazione della mattina e aggiungo frutta fresca o marmellata. Facile no?

Summer is not my favorite season: too hot, too much light, too much chaos. But of course, I appreciate many aspects of summer: very long days, holidays, fresh fruit ... so there are many reasons to love it!
Summer heat drives me often to try recipes that do not require cooking, for obvious reasons. Recently, on my last trip to Prague I tasted this chia pudding, a plant that was not familiar to me. First of all this recipe is ready without cooking because chia seeds tend to gel when in contact with liquids. In addition, these seeds have some interesting properties, such as they are very rich in calcium and have many essential fatty acids, omega3. If you want more information on the properties and uses of these seeds click here. I buy them at the supermarket, even if they are on the EU only since 2009, now it is easy to find them.
Having tasted this pudding with fresh fruit,  I looked for  the recipe and I tried it. The process is very fast and super easy, so ... try it yourself !!

PUDDING OF CHIA SEEDS

Ingredients (serves  2)
45 grams of chia seeds, 300 grams of vegetable milk (rice, almond, whatever you prefer), three teaspoons of sugar (optional).
Method
In a large pot with airtight put chia seeds and add the veg milk. Stir well, closing the jar and shaking it vigorously. Refrigerate; after half an hour it begins to gel and the liquid turns into a soft pudding. I'll prepare it in the evening for the breakfast of the moorning after and I add fresh fruit or jam. Easy isn't it?

Viva Japan ! 万歳日本!


Una volta le famiglie erano numerose e durante le feste ci si ritrovava tutti insieme. Oggi le famiglie sono molto più piccole e gli amici, i veri amici, sono diventati nel tempo parte integrante delle nostre vite.
Oggi abbiamo avuto una bellissima riunione della nostra famiglia di amici e insieme abbiamo gustato un fantastico e autentico sushi casalingo della nostra amica Yumiko.
tra chiacchiere, risate e qualche discussione la giornata è volata via e noi siamo tornati a casa con la convinzione che quando l'amicizia è solida (e in questo caso anche di lunga durata) non serve vedersi troppo spesso per essere uniti. Proprio come le famiglie di una volta.
Con l'occasione ho provato a preparare alcuni dolci giapponesi, i Dorayaki (どら焼き), ripieni di marmellata di fagioli di soia, quelli che mangiava il gatto blu del cartone Doraemon per intenderci. Sono venuti bene e vi lascio la ricetta perché sono rapidissimi, facili e buoni. Si possono farcire, in alternativa alla marmellata di fagioli di soia, anche con crema di nocciole e con marmellata di frutta.

DORAYAKI
Ingredianti (per circa 6 dorayaki)

100 gr farina 00, 2 uova, mezzo cucchiaino da caffè di lievito, 50 gr di zucchero, un cucchiaio di miele, 3-4 cucchiai d'acqua. Per farcire: marmellata di fagioli di soia oppure crema di nocciole oppure marmellata di frutta.

In una ciotola mettere lo zucchero e le uova e mescolare con una frusta elettrica per far sciogliere lo zucchero. Aggiungere sempre mescolando, poco alla volta, la farina e poi il lievito l'acqua e il miele. Fare riposare l'impasto per circa 10-15 minuti, coperto con la pellicola.
Mettere una piastra liscia antiaderente sul fuoco basso, far scaldare qualche minuto. Poi prendere un cucchiaio del composto e versarlo sulla piastra. Così si formerà una delle due parte del Dorayaki. mettete altre cucchiaiate di impasto sulla piastra. Quando sulla superficie iniziano a formarsi dei buchetti, causati dal lievito, girate il Dorayaki e fate cuocere non più di2 minuti. Sistemare i dorayaki su un piatto e coprirli subito con dei fogli di carta da cucina bagnati e strizzati. Quando avete finito la cottura, accoppiateli a due a due, scegliendoli della stessa grandezza, mettere al centro di un dorayaki (sulla parte più chiara) la marmellata di fagioli di soia (o la crema di nocciole o la marmellata), richiudere con l'altro Dorayaki e premere i bordi per fare ben aderire. Impacchettare il dorayaki con la pellicola trasparente e lasciateli raffreddare. Buonissimi e rapidi!!


Today I tried to prepare some Japanese sweets the Dorayaki (ど ら 焼 き), filled with jam of red soybeans, those ate by  the cat Doraemon in a cartoon, if someone of you can remember. The result was great, according to my Japanese friend, so I leave here the recipe because Dorayaki are very fast to prepare, easy and good. You can change the filling, using, as an alternative, with hazelnut cream and jam. Enjoy!

Dorayaki
Ingredianti (around 6 dorayaki)

100 gr 00 flour, 2 eggs, half a teaspoon of baking powder, 50 grams of sugar, a tablespoon of honey, 3-4 tablespoons of water. For the filling: jam of red soybeans or hazelnut cream or jam.

In a bowl put the sugar and eggs and mix with an electric whisk to dissolve the sugar. Add flour gradually, stirring continuously,  then add baking powder, water and honey. Let  the dough rest for about 10-15 minutes, covered with plastic wrap.
Put a nonstick plate on low heat, and heat a few minutes. Then take a tablespoon of the mixture and pour it on the nonstick plate. Iit will form a part of the two slices of the Dorayaki. Put an other spoonfuls of dough on the plate. When small holes begin to appear on the surface of the Dorayaki,  turn it  and let cook for 1 minute. Arrange the Dorayaki on a plate and cover immediately with sheets of kitchen paper, wet and squeezed. When you have finished cooking, choose two dorayaki of  the same size, put in the middle of one of them (on the lighter side) some red soybeans jam  (or hazelnut cream or jam), close with the other Dorayaki pressing edges very well. Packa the Dorayaki with some plastic wrap and let cool. Yummy and fast !!

Fresca e dolce: ecco la Primavera!



Oggi a Roma sembra finalmente arrivata la Primavera, dopo giorni di nuvole e acquazzoni. Una giornata da passare all'aperto, ma soprattutto con le persone alle quali vogliamo bene. E allora per coccolarci, con un occhio all'orologio e uno alla bilancia, proviamo queste semplice, rapido e sano dessert con le Fragole.

Dolce Primavera
Ingredienti (per 8)
800 gr di fragole fresche, 200 gr di yogurt greco alle fragole, 250 gr di yogurt alla vaniglia, 8 biscotti a vostra scelta (io ho usato dei biscotti al burro)
Procedimento
Tagliare le fragole a spicchi e in una ciotola mescolarle con lo yogurt greco alle fragole e con quello alla vaniglia. mettere tutto in una ciotola con i bordi larghi e versare le fragole. Se volete potete cospargere le fragole con granella di nocciole. Decorare il bordo con i biscotti. Se non lo mangiare subito, conservate in frigo fino a 10 minuti prima di servirlo.


At last Spring has come! Let's celebrate the good season with this quick, fresh and healthy dessert!

Sweet Spring
Ingredients (8)
800 grams of fresh strawberries, 200 g of strawberry greek yogur, 250 g of vanilla yogurt, 8 cookies of your choice (I used butter cookies)
Proceedings
Cut the strawberries into pieces and mix them in a bowl with the strawberry greek yogurt and vanilla yogurt. Then put everything in a bowl with wide borders. If you like, you can sprinkle the strawberries mix with chopped hazelnuts. Decorate the edge with cookies. If you do not eat right away, store in refrigerator up to 10 minutes before serving.

Qualcosa di nuovo: la quinoa!


La cucina è senz'altro un'attività creativa, alla portata di tutti. E infatti come si vede io sfogo così la vena vena...artistica. In realtà è anche un modo per coccolare la famiglia e soprattutto i figli, che ora che sono grandi hanno orrore di abbracci e bacini!
oltre a comunicare l'affetto ai miei figli cerco anche di trasmette l'attenzione per un'alimentazione sana e naturale. E per questo sperimento nuovi ingredienti e nuove ricette. Qui vi lascio la ricetta dei muffin con farina di quinoa e cioccolato. la quinoa è una pianta erbacea, come gli spinaci e la barbabietola, non un vero cereale. Ha un alto contenuto proteico ed è senza glutine. Se volete saperne di più andate qui. Naturalmente la ricetta si può fare con una farina di vostra scelta ed è senza uova e senza burro, come sempre. 

MUFFIN DI QUINOA E CIOCCOLATO
Ingredienti (circa 6 muffin)
150 gr di farina integrale di quinoa, un cucchiaino colmo di lievito per dolci, 2 cucchiai di zucchero integrale di canna, 30 gr di cioccolato fondente 72%, 140 gr di latte, 35 gr di olio di semi di mais. 

Preparazione
Preriscaldare il forno a 180°.  Prendete una tazza dosatrice (così sarà più facile versare l'impasto negli stampini) mettere tutti gli ingredienti, ad eccezione del cioccolato, e mescolare bene. Grattugiare il cioccolato in grosse scaglie e mescolare ancora. Versare l'impasto negli stampini da muffin e infornare per circa 25-20 minuti, fino a che non si colorano. Servire freddi, con un buon caffè!

ENGLISH VERSION

Cooking is certainly a creative activity, within the reach of everyone. In fact, as you can see this is the way I give vent to my... artistic vein!  In reality cooking is also a way to pamper the family and especially my kids who, since they grew up,  are horrified with even the idea of hugs and kisses!
With my recipes I also try to transmit them love for natural and healthy eating. 
And for that reason, I often experience new ingredients and new recipes. 
Here I leave you the recipe of muffins with quinoa flour and chocolate. Quinoa is a herbaceous plant, such as spinach and beet, not a true cereal. It has a high protein content and is gluten free. To learn more about quinoa click here. 
Of course, the recipe can be done with a flour of your choice and it is without eggs and butter, as always.

CHOCOLATE AND QUINOA MUFFINS
Ingredients (makes 6 muffins)
150 gr whole quinoa flour, 1 heaped teaspoon of baking powder, 2 tablespoons of brown sugar, 30 gr of dark chocolate or chocolate chips, 140 ml of milk, 35 gr of corn oil.
INSTRUCTIONS
Preheat oven to 180° (350F). In a large measuring cup combine flour, sugar, baking powder and grated chocolate (or chocolate chips). Add milk and oil and mix well. Pour the batter evenly in the muffin molds (I use silicone molds). Bake until golden brown, about 25 to 30 minutes. 
Perfect with a hot, black  coffee!

PROFUMO DI CASTAGNE!





Ricette di ... corsa! - Muffin alle castagne
L’inverno ci regala giornate fredde e a volte uggiose, ma anche frutti dolci e nutrienti, come le castagne. Qui ho usato la farina di castagne, ingrediente di molti dolci tradizionali. Associata alla farina di mais ne viene fuori un dolcetto,privo,di glutine, per i nostri amici intolleranti, che possono ovviamente mangiare tutti.

MUFFIN CON FARINA DI CASTAGNE
INGREDIENTI (per 12 muffin piccoli o 6 grandi)
100 gr di farina di castagne, 100 gr di farina di mais, 20 grammi di farina di nocciole o nocciole tritate, 80 gr di zucchero integrale di canna, 60 gr di olio di mais, 180 ml circa di latte, un cucchiaino da caffè colmo di lievito per dolci.
PREPARAZIONE
Mescolare tutti gli ingredienti secchi, aggiungere l’olio di mais e poi il latte. Deve risultare un composto morbido e consistente (non liquido) che può essere versato con l’aiuto di una spatola negli stampini. Mettere nel forno preriscaldato a 190º e cuocere per,circa 20 minuti. Servire freddi, spolverati di zucchero a velo.

ENGLISH VERSION

Winter brings us cold days and sometimes dull, but it also gives us sweet and nutritious fruits, such as chestnuts. Here I used chestnut flour, a main ingredient in many traditional sweets. Associated with corn flour comes out a treat gluten-free, for our coeliac friends.

MUFFIN WITH CHESTNUT FLOUR INGREDIENTS (serves 12 small muffins or 6 large)
100 grams of chestnut flour, 100 grams of corn flour, 20 grams of chopped hazelnuts or hazelnut flour, 80 grams of cane brown sugar, 60 grams of corn oil, 180 ml of milk, a heaped teaspoon of baking powder.
PREPARATION
Mix all the dry ingredients, add the corn oil and then milk. The result must be a soft and firm (not liquid) mixture that can be poured with the help of a palette knife into molds. Put in the oven at 190º and bake for about 20 minutes. Serve cold, dusted with powdered sugar.

Fresca e rapida: la torta al limone



Oggi è davvero primavera: sole, aria e ...ora legale!! Per me quando è tempo di ora legale è già aria di vacanza!!
Oggi la domenica è dedicata ai nonni: si mangia insieme, si chiacchiera (il nonno chiacchiera moltissimo), si ricordano le cose belle e meno belle del passato, si ride e si passa una bella giornata di festa. Di quelle che rimangono discretamente in noi quando siamo dei ragazzi e che tornano a scaldarci il cuore, anni e anni dopo, quando ne abbiamo bisogno.
Per questa prima vera giornata di primavera, fresca e colorata ecco un dolce all'altezza della giornata.

TORTA FRESCA DI LIMONI (con gelatina di limone)
INGREDIENTI
300 gr farina, 150 gr zucchero, 3 uova intere, 100 gr olio di mais, 120 gr latte, 50 gr succo di limone, 1 bustina lievito per dolci, 1 bustina di vanillina, buccia di limone grattugiata.
per la "gelatina" di limone:
50 gr amido di mais (maizena), 150 gr zucchero, 250 gr acqua, 100 gr succo di limone, buccia grattugiata di limone.

PREPARAZIONE
Montare le uova intere con lo zucchero e aggiungere l'olio, il latte, il succo, la buccia di limone. Alla fine incorporare la farina e il lievito. Mescolare bene e mettere in una teglia oliata e infarinata. Fare cuocere la torta nel forno preriscaldato a 180 gradi per circa 45 minuti.
Mentre la torta cuoce si può preparare la gelatina di limone: mettere in un tegame la buccia grattugiata, l'acqua e lo zucchero, a parte mescolare il succo del limone con la maizena. quando la maizena è sciolta e senza grumi, aggiungerla allo sciroppo di acqua e zucchero. Fare scaldare a fuoco basso per alcuni minuti; ad un certo punto si addenserà fino a diventare una gelatina. Se volete colorare la gelatina potete aggiungere un pizzico di curcuma.
Quando la torta è cotta tagliarla in due (ancora un po' calda) e farcirla con la gelatina. Servire la torta spolverata di zucchero a velo e decorata con la scorza della buccia di limone tagliata a striscioline.

Today is really spring: sun, air and summer time ... ! 
Today our Sunday isdedicated to grandparents: we eat together, we talk ( grandfather talks really  much), remembering the good things, laughing and having a good day. One of those days  that remain discreetly in our mind and coming back to warm the heart, years and years later, when we need it.
For this first real day of spring, here is a fresh and colorful lemon cake.

CAKE WITH FRESH LEMONS ( with lemon jelly)
INGREDIENTS
300 g flour, 150 g sugar, 3 eggs , 100 g corn oil, 120 g milk , 50 grams of lemon juice, 1 bag of baking powder, 1 teaspoon of vanilla extract, lemon zest.
for the "lemon jelly" :
50 g cornstarch (cornflour), 150 g sugar , 250 g water , 100 g lemon juice, lemon peel (zest).

PREPARATION
Beat the eggs with sugar and add oil, milk, lemon juice , lemon peel. At the end stir in the flour, vanilla flavor and baking powder. Mix well and place in a greased and floured baking pan. Cook the cake in a preheated oven at 180 degrees for about 45 minutes.
While the cake is cooking you can prepare the lemon jelly: put in a pan zest, water and sugar, separately mix the lemon juice with the cornstarch. When the cornstarch is dissolved with no lumps, add the syrup of sugar and water. Warm over a low heat for a few minutes,  at some point it will thicken until it becomes a jelly. If you want to color the jelly, you can add a pinch of turmeric.
When the cake is cooked, cut it into two (still a bit ' hot ) and stuff it with gelatin. Serve cake dusted with icing sugar and decorated with the zest of lemon peel cut into strips.

Il sole d'inverno




Quest'anno l'inverno è stato davvero mite: tanta pioggia, poco freddo e spesso il sole! Fra i cibi di stagione io adoro gli agrumi:sono il sole dell'inverno, con i loro colori caldi !! In più ci aiutano a superare bene l'inverno!! Mi piacciono tutti gli agrumi: arance, limoni, pompelmi e mandarini. I mandarini negli ultimi anni sono stati quasi sostituiti dalle clementine, ma quando trovo quelli veri al mercato...non resisto! E poi mi ricordano mia nonna Nina, la mamma di mio papà: per lei non era Natale senza il profumo dei mandarini!
Oggi ho provato gustare il colore degli agrumi. Come? Con questa profumata e leggera Gelatina.

GELATINA DI AGRUMI
INGREDIENTI (x8)
Tre arance, due limoni, due mandarini (ma potete usare gli agrumi che preferite), cinque cucchiai di zucchero semolato, 400-500 gr di acqua, 25 gr di colla di pesce in fogli, foglie di menta e kiwi a cubetti per decorare.
PREPARAZIONE
Spremere gli agrumi e filtrare il succo. In totale dovete ricavare circa 500 ml di succo, quindi potete spremer qualche frutto in più se serve. Mettete a bagno in acqua fredda la colla di pesce e nel frattempo unite lo zucchero all'acqua e fate bollire lo sciroppo per 2 minuti. Strizzate la colla di pesce e unitela allo sciroppo mescolando per farla sciogliere. Unite quindi lo sciroppo al succo filtrato degli agrumi e metterlo in uno stampo grande da budino o in 8 stampini individuali.
Mettete in frigo per circa 4 ore. Potete servirlo guarnito con foglie di menta e pezzetti di frutta fresca.

This year winter was really mild: a lot of rain, a little cold and often the sun! Among winter foods I love citrus: they are the sun of winter, with their warm colors! In addition these fruits are the best for our health!! I like all citrus fruits: oranges, lemons, grapefruits and tangerines. Tangerines in recent years have been almost replaced by clementines, but when I find the real tangerines in my local market ... I can not resist! These fruits remind me of my grandmother Nina, my father's mom: for her it was not Christmas without the smell of tangerines !
Today I tried to taste the color of citrus fruits. How? With this fragrant and light jelly.

CITRUS FRUIT JELLY
INGREDIENTS (serves 8)
Three oranges, two lemons, two tangerines (but you can use your favorite citrus fruits), five tablespoons of granulated sugar, 400-500 grams of water, 25 g gelatin sheets, mint leaves and diced kiwi to decorate.
PREPARATION
Squeeze citrus fruit and strain the juice. In total you should get about 500 ml of juice, so you can squeeze some fruit more, if needed. Soak in cold water gelatin   sheets and in the meantime, combine the sugar and water and boil the syrup for 2 minutes. Squeeze the gelatine sheets from water and add to the syrup, stirring to dissolve. Then add syrup with gelatin to the filtered juice of citrus fruits and place in a large pudding mold or 8 individual molds.
Refrigerate for about 4 hours. You can serve garnished with mint leaves and small pieces of fresh fruit.

E' arrivato il freddo!!!



Siamo fortunati: per avere a Roma un freddo degno di questo nome siamo arrivati alla fine di novembre. Da non credere! Comunque sia il freddo fa venire vogli adì stare in casa davanti ad una buona tazza di te' o di caffé. Io però ho bisogno anche di una fetta di torta. Provate questa, è una torta morbida fatta con la mia frutta preferita:


TORTA MORBIDA DI MELE E ZUCCA
INGREDIENTI
350 gr. di zucca pulita, 3 mele, 100 gr. di zucchero, 100 gr. di latte, 2 uova, 220 gr di farina, 70 gr. di olio di semi di mais, 10 gr. di lievito in polvere, cannella.
PREPARAZIONE
Mettere la zucca a cubetti in una padella antiaderente senza acqua e fare cuocere a fuoco lento per 20-25 minuti. Quando la zucca sarà cotta, frullarla e metternla in un colino a perdere l'acqua in eccesso.
Mescolare lo zucchero e le uova con una frusta; aggiungere la cannella, l'olio e il latte. Mescolare con la farina e il lievito setacciati. Aggiungere la purea di zucca e poi le mele tagliate a fettine. 
Oliare una teglia, spolverizzare con la farina, versare l'impasto e mettere in forno a 200 per circa 20 minuti. Però non vi fidate e fate la prova "stecchino". 

SOFT CAKE WITH APPLES AND PUMPKIN
INGREDIENTS
350 gr. peeled Pumpkin, 3 apples, 100 g. of sugar, 100 gr. milk, 2 eggs, 220 grams of flour, 70 gr. corn oil, 10 gr. baking powder, cinnamon.
PREPARATION
Put the diced pumpkin in a pan without water and cook over low heat for 20-25 minutes. When the pumpkin is cooked, blend it and put it in a colander to lose excess water.
Mix sugar and eggs with a whisk, add the cinnamon, oil and milk. Add the flour and baking powder. Add the pumpkin puree and then cut apples into slices.
Oil a baking pan, sprinkle it with flour, pour the mixture in the pan and bake at 200 for about 20 minutes. Do the test with a "toothpick", don't trust the marvelous scent of the cake.

Ah, l'autunno!!!



A me piace molto cucinare utilizzando i prodotti di stagione: quindi niente peperoni e zucchine a novembre ma largo a cavoli e zucche! E questo vale anche per la frutta, di cui l'autunno è particolarmente generoso: noci, nocciole, pere, mele e anche kaki. Quando ero piccola mia mamma chiamava questo frutto "loto", poi da più grande ho scoperto che solo a casa mia si usava questo termine, da tutti veniva chiamato "cachi" o meglio kaki. Ieri sera ho messo a punto questa nuova ricetta per i miei amici, molto molto autunnale
MUFFIN ALLE NOCCIOLE CON SALSA DI kaki E CIOCCOLATO
Ingredienti (circa 10 muffin): 100 gr di farina bianca, 100 gr. di farina di nocciole, 100 gr di zucchero, un cucchiaino di lievito in polvere, un uovo intero, latte. Per la salsa: tre kaki maturi, tre cucchiai di zucchero a velo; gocce di cioccolato fondente.

PREPARAZIONE
Mescolare l'uovo con lo zucchero, aggiungere le due farine, il lievito  e il latte, fino ad ottenere un composto fluido. Versare in 8-10 stampini da muffin e mettere a cuocere per 20-25 min nel forno caldo a 200° gradi.
Preparare la salsa tagliando i kaki in quattro spicchi, togliere la buccia da ogni spicchio e frullare con lo zucchero a velo (io uso il frullatore ad immersione).
Sfornare i muffin, farli raffreddare, mettere ogni muffin su un piatto, tagliarlo a metà, inserire nel mezzo la salsa di kaki e guarnire con le gocce di cioccolato.

Last night I created this new autumn recipe for my friends.

HAZELNUT MUFFINS with KHAKI SAUCE AND CHOCOLATE
Ingredients (about 10 muffins) : 100 gr. white flour, 100 gr. hazelnut flour, 100 gr. of sugar, a teaspoon of baking powder, a whole egg, milk. For the sauce: Three ripe khaki (persimmons), three tablespoons of powdered sugar, dark chocolate chips .
PREPARATION
Mix the egg with the sugar, add the flours, baking powder and milk until you get a fluid mixture. Pour into 8-10 muffin moulds and bake for 20-25 min in the oven at 200 C°.
Prepare the sauce by cutting the persimmons into four slices, remove the peel from each slice and blend with icing sugar (I use a hand blender).
Take muffins out of the oven, let them cool, put each muffin on a plate, cut it in half, place in the middle of the khaki sauce and garnish with chocolate chips. Enjoy!

San Daniele...gnam!!




Cari miei, qui si va da un festeggiamento all'altro. E io continuo a cucinare, ma sempre di corsa però!!
Domani è San Daniele, quindi è l'onomastico del mio primogenito. Mi sono organizzata così: domattina dolcini croccanti, a pranzo lasagna e la sera a cena (sulla quale sorvolo, vi voglio bene!)....un regalino!

La lasagna è molto semplice, ammetto di fare uso delle sfogliavelo, ma stasera ho fatto sugo e besciamella, ho assemblato il tutto et voilà, les jeux sont faits!! La mia è una besciamella light, ma parecchio light, perché al posto del burro utilizzo l'olio di oliva e fino ad ora...nessuno si è mai lamentato! Vale la pena provare!! La ricetta che vi lascio è quella dei Dolcini croccanti (non molto light, ma veloce!)

DOLCINI CROCCANTI

INGREDIENTI
70 gr di cereali (o riso soffiato o anche un mix dei due), 40 gr di burro, 100 gr di cioccolato fondente, due cucchiai di miele liquido, decorazioni colorate o scaglie di cioccolato bianco.
PREPARAZIONE
Sciogliere il cioccolato con il burro e il miele; unire i cereali/riso e mescolare bene per distribuire il cioccolato. Mettere il mix di cioccolato fuso e cereali dentro dei pirottini di carta. Cospargere i mucchietti di cereali con le decorazioni colorate o con il cioccolato bianco e mettere nel frigo a raffreddare per almeno 2 ore.

Dear friends, here we keep on celebrate!. And I still cook, but always in a hurry!
Tomorrow is San Daniele, the name day of my firstborn. that's my program: crispy sweets for breakfast, lasagna for lunch and in the evening...a small gift !
My lasagna is very simple, I admit that I make use of Sfogliavelo, but tonight I made sauce and béchamel, I assembled the whole thing and voila , les jeux sont faits ! My béchamel is a light white sauce, really light  because I use olive oil instead of butter and so far ... no one has ever complained ! Worth a try ! The recipe that I give you is that of Crispy Sweets (not very light, but fast !)

CRISPY SWEETS

INGREDIENTS
70 grams of cereal (or puffed rice or even a mix of the two) , 40 g of butter, 100 grams of dark chocolate , two tablespoons of liquid honey and colorful mini dragees or white chocolate chips .
PREPARATION
Melt chocolate with butter and honey, combine cereals / rice and stir well to distribute the chocolate. Put the mixture of melted chocolate and cereal inside of paper cups. Sprinkle the piles of cereal with colorful decorations or with white chocolate and put in the fridge to cool for at least 2 hours.

L'estate sta finendo!



E già oggi giornata uggiosissima: pioggia, vento e poca luce! Però questa domenica è stata anche la prima occasione dopo il rientro dalle vacanze per stare a casa tutti insieme e per chi come me ha i figli adolescenti (16 e 12 anni) è un evento molto apprezzabile. Si chiacchiera con calma, senza avere la sensazione di essere inseriti fra una partita al computer e una telefonata con Skype!
Quindi ho pensato di celebrare la giornata con una delle mie "ricette senza" (questa in particolare è senza burro). In più è anche veloce, e per me questo è fondamentale!

Plumcake con pesche e anacardi
INGREDIENTI 

200 gr farina 2 uova 150 gr zucchero di canna integrale

250 gr yogurt bianco 200 gr di pesche 100 gr anacardi o nocciole 

1 bustina di lievito per dolci un pochino di cannella



PROCEDIMENTO
In un recipiente montate i tuorli insieme allo zucchero. 
Unite lo yogurt, la farina e il lievito poi mescolate bene tutti gli ingredienti.
Lavate e tagliate a pezzetti le Pesche. Tritate grossolanamente gli anacardi.
Aggiungete all'impasto anacardi, pesche e un pochino di cannella.
Montate a neve gli albumi con un pizzico di sale (io ho usato il frullino a mano di mia nonna, ma tranquilli, va bene quello elettrico!) uniteli all'impasto mescolando delicatamente dal basso verso l'alto. 
Versate in uno stampo per plumcake (che io ho "oliato" e spolverizzato con la farina, ma se avete quello antiaderente o in silicone...) infornate a 210º per circa 40 minuti.
Fate raffreddare poi togliete dallo stampo e servite. Si può decorare con fettine di pesca e zucchero a velo. 
Buono per la colazione e la merenda.
Vanno bene anche altri tipi di frutta fresca, come albicocche o susine rosse.

And this is for my English-speaking  friends:

INGREDIENTS (serves 4)
200 g flour, 2 eggs, 150 g brown sugar 250 gr plain yogurt, 200 grams of peaches, 100 g cashew nuts or hazelnuts, 1 bag of baking powder, a pich of cinnamon.

PROCEDURE
In a bowl, whip the egg yolks with sugar. Combine the yogurt, flour and baking powder then mix well all ingredients. 

Wash and cut the peaches into small pieces. Chop the cashews. 
Add to the flour mix the cashews, peaches and a little bit of cinnamon. 
Whip the egg whites with a pinch of salt. Add them to the mixture, stirring gently from bottom to top. 
Pour into a mold for plum cake (that I have "oiled" and dusted with flour, but if you have a nonstick silicone mold...) and bake at 210 º for about 40 minutes. 
Let cool then unmold and serve. You can decorate your plumcake with slices of peaches and powdered sugar. 
Good for breakfast and snacks. 
You can use well also other fresh fruit, such as apricots or red plums.
