Vuoi essere il mio Valentino?






Devo dire che la festa di San Valentino non mi ha mai entusiasmato troppo: fiori, cuori, cenette a due....tutto troppo sdolcinato per i miei gusti. Se vuoi bene a qualcuno, se vuoi bene davvero ogni giorno ti devi inventare un modo per ricordare a chi vuoi bene che è una persona speciale e che c'é solo lui (o lei) per te. Eh si tutti i giorni, perché è troppo facile farlo di tanto in tanto, no?
E proprio perché la mia dolce metà è così speciale per me, ho deciso di dedicargli una torta con l'ingrediente che ama tanto: la mandorla! Ed essendo san Valentino ho deciso di fare uno strappo alla regola (la mia!) e aggiungere un po' di fiori e cuori, così siamo tutti contenti! E intanto vado ad assaggiare la mia torta mandorle e rose.

TORTA PROFUMATA CON MANDORLE E ROSE
Ingredienti (per 6)
200 gr di farina, 100 gr di farina di mandorle, 50 gr di fecola di patate o di amido di mais, 100 gr di yogurt, 150 ml di latte (vaccino, o di riso, o di mandorla) 60 gr di olio di mais, 100 gr di zucchero bianco, una bustina di lievito per dolci, una manciata di boccioli di rosa secchi, un cucchiaio di latte di mandorla. Granella di pistacchi, cuoricini e stelline di zucchero per decorare.
Procedimento
Mescolare tutti gli ingredienti secchi: le farine, la fecola, lo zucchero, il lievito. In un pentolino scaldare il latte a fuoco basso con tre/quattro boccioli di rosa e lasciarlo raffreddare un pochino. Intanto aggiungete l'olio, lo yogurt, e infine il latte dal quale avrete tolto i boccioli. Mescolate bene e mettete l'impasto in uno stampo, anche a forma di cuore, unto con l'olio e poi infarinato. Infornare in forno già caldo a 180° e cuocere per circa 45 minuti. Fare raffreddare la torta e decorate con petali di rosa, pistacchi tritati, cuoricini e stelline di zucchero. Buon San Valentino!



Let me say that I've never been too keen on St. Valentine's Day: flowers, hearts, romantic dinners .... it is all too mushy for my taste. If you really love someone, I think that every day you have to invent a way to show how special your love is to you, and that there is only him (or her) for you. Oh yes every day, because it is too easy to do that from time to time, right?
And just because my husband is so special to me, I decided to dedicate a cake with an ingredient that he loves so much: almond! And because of  Valentine I decided to make an exception to the rule (my rule!) and add a little bit of romance, with of flowers and hearts, so all lived happily ever after! And now, I'm going to try my new cake with almonds and roses.

ALMONDS AND ROSES: A  ST. VALENTINE'S DAY CAKE
Ingredients (serves 6)
200 grams of flour, 100 grams of flour of almonds, 50 g of potato starch or corn starch, 100 g of yogurt, 150 ml of milk (cow, or rice, or almond) 60 grams of corn oil, 100 grams of white sugar, a baking powder, a handful of dried rose buds, a tablespoon of almond milk. Chopped pistachios, hearts and stars of sugar to decorate.
Method
Mix all dry ingredients: flours, starch, sugar, baking powder. In a saucepan heat the milk over low heat with three/four rosebuds and let it cool a little. Meanwhile, add the oil, yogurt, and finally the scented milk from which you will have removed the buds. Mix well and put the mixture into a mold, even heart-shaped, grease it with oil and then coat it with flour. Put in preheated oven at 180 C° and bake for about 45 minutes. Let cool and then decorate with chopped pistachios, rose petals, hearts and stars of sugar. Happy St. Valentine's Day!

Un dolce insolito? La mia Barbatorta (di Marco Bianchi)


Che gusto c'é a "copiare" le ricette se poi non si cambiano un po'? Io lo faccio praticamente sempre. Questa ricetta è una di quelle di Marco Bianchi, http://www.marcobianchi.blog/ , che seguo molto. La barbabietola, che è l'ingrediente insolito di questa buonissima torta, a me è sempre piaciuta. L'unico rammarico per  questa torta è che il fantastico colore della barbabietola svanisce con la cottura. E allora mi sono inventata una decorazione che lo ricorda. Tutta naturale, eh! Provatela

BARBATORTA (ISPIRATA ALLA RICETTA DI MARCO BIANCHI)

Ingredienti (per 8)
120 gr di barbabietola lessata, 100 gr di farina semintegrale, 100 gr di farina normale, 150 gr di farina di mandorle, 80 gr di zucchero di canna integrale mascovado, una bustina di lievito in polvere, un cucchiaino di vaniglia, 70 gr di olio di mais, 180 ml di latte vegetale alla mandorla (o quello che preferite), 120 gr di cioccolato fondete al 70%. Per la decorazione: 125 gr di zucchero a velo, qualche cucchiaio di acqua, due cucchiaini di polvere di barbabietola disidratata (in alternativa usate del colorante naturale in polvere).

Procedimento
1. Mescolare insieme tutti gli ingredienti secchi: le farine, lo zucchero, la farina di mandorle, la vaniglia e il lievito.
2. Frullare la barbabietola con metà del latte vegetale.
3. Sciogliere a bagnomaria (o nel microonde) il cioccolato con l'altra metà della bevanda vegetale.
4. Unire agli ingredienti secchi la barbabietola frullata, l'olio di mais e il cioccolato fuso.
5. Mettere in una tortiera foderata di carta forno e cuocere in forno per circa 50 minuti a 180 gradi.
6. Fare raffreddare la torta. Mescolare lo zucchero a velo con poca acqua fino ad ottenere una glassa fluida. Aggiungere la polvere di barbabietola ed eventualmente qualche altro cucchiaino d'acqua.
7. Spalmare la glassa rossa sulla torta e decorare con stelline di zucchero.

English version

BEETCAKE (BEETROOT CAKE)
Ingredients (for 8)
120 gr of boiled beet, 100 grams of semi-integral flour, 100 gr of all purpose flour, 150 gr of almond flour, 80 gr of wholewheat cane sugar, a bag of baking powder, a teaspoon of vanilla powder, 70 gr of oil of corn, 180 ml of almond-vegetable milk (or other of your choice), 120 gr of chocolate for 70%. For the topping: 125 g of icing sugar, a few spoonfuls of water, two teaspoons of dehydrated beet powder (alternatively use natural powdered colors).

Method
1. Mix together all the dry ingredients: flours, sugar, almond flour, vanilla and yeast.
2. Blend the beet with half of the vegetable milk.
3. Melt the chocolate with the other half of the vegetable milk in a bain-marie (or microwave).
4. Combine dry ingredients with shredded beet, corn oil and melted chocolate.
5. Put in a baking dish covered with parchment paper and cook in the oven for about 50 minutes at 180 degrees.
6. Cool the cake. Mix the icing sugar with one/two spoons of water until turns into a fluid icing. Add the beet powder and, if necessary, some other teaspoon s of water.
7. Spread the red icing on the cake and decorate with sugar stars.

Ananas da...compleanno!




Il tempo passa velocissimo, ce ne siamo accorti tutti, vero? Questo a volte ci rende un po' tristi, a volte no.
Oggi per me è una splendida giornata NO, perché è il compleanno di mio figlio, che oggi compie 17 anni. Il tempo passa, e l'unica cosa che possiamo fare è cercare di farlo passare bene, per noi e per i nostri cari. E anche preparare il piatto preferito può contribuire al benessere...generale!
Per questa torta mi sono ispirata alla ricetta di Misya che ho poi adattato ai miei gusti, soprattutto per le farine: questa torta infatti è con farina di farro e farina integrale. Eccola qui.

TORTA ALL'ANANAS CON FARINA DI FARRO E FARINA INTEGRALE
Ingredienti (6-8)
120 gr di zucchero integrale di canna, 120 gr di farina di farro, 120 gr di farina integrale (potete usare in alternativa 240 gr di farina normale), 70 gr di olio di mais, una bustina di lievito per dolci, 5 fette di ananas in scatola al naturale  + le restanti fette tagliate a dadini (se non lo trovate va bene anche quello allo sciroppo), 160 ml di succo di ananas (io ho usato quello della lattina di ananas), 50 ml di latte vegetale.
Procedimento
Mescolate in una ciotola la farina, lo zucchero, il lievito, un pizzico di sale; aggiungere l'olio, il latte vegetale e il succo, sempre mescolando per ottenere un impasto liscio e cremoso. Aggiungere i dadini di ananas. Versare l'impasto in una tortiera oliata e infarinata, mettere le fette di ananas sopra l'impasto e cuocere in forno statico a 180° per circa 50 minuti. Fare raffreddare e ...gustatela!!

Time passes fast, we all know that, right? This sometimes makes us a bit sad, sometimes NOT. 
Today is a wonderful (NOT) day for me, because it is the birthday of my son, who turns 17 today. Time goes by, and the only thing we can do is trying to make it pass well, for us and for our loved ones. So why not preparing one of the fav cakes of your son to contribute to the general ...wellness?
For this cake recipe I was inspired by one of Misya recipes, which I adapted to my taste, especially for flour: in fact, this cake is made ​​with spelt flour and whole wheat. Here it is. 

PINEAPPLE CAKE WITH SPELT FLOUR AND WHEAT FLOUR
Ingredients (serves 6-8))
120 grams of cane sugar,  120 grams of spelt flour, 120 grams of whole wheat (you can usa as an alternative 240 gr of normal flour), 70 gr of corn oil, a bag of baking powder, 5 slices of canned pineapple in natural and the remaining slices chopped (if you do not find it is okay pineapple in syrup), 160 ml of pineapple juice (I used that of canned pineapple), 50 ml Plant based milk.
Method
Mix sugar, flour, baking powder and a pinch of salt in a bowl,  add the  oil, vegetable milk and the juice, stirring constantly to get a smooth and creamy batter. Pour it into a cake pan, greased and coated with flour, put the pineapple slices on the batter and bake at 180° for about 50 minutes. Allow to cool down and ... Taste it !!

Fresca e rapida: la torta al limone



Oggi è davvero primavera: sole, aria e ...ora legale!! Per me quando è tempo di ora legale è già aria di vacanza!!
Oggi la domenica è dedicata ai nonni: si mangia insieme, si chiacchiera (il nonno chiacchiera moltissimo), si ricordano le cose belle e meno belle del passato, si ride e si passa una bella giornata di festa. Di quelle che rimangono discretamente in noi quando siamo dei ragazzi e che tornano a scaldarci il cuore, anni e anni dopo, quando ne abbiamo bisogno.
Per questa prima vera giornata di primavera, fresca e colorata ecco un dolce all'altezza della giornata.

TORTA FRESCA DI LIMONI (con gelatina di limone)
INGREDIENTI
300 gr farina, 150 gr zucchero, 3 uova intere, 100 gr olio di mais, 120 gr latte, 50 gr succo di limone, 1 bustina lievito per dolci, 1 bustina di vanillina, buccia di limone grattugiata.
per la "gelatina" di limone:
50 gr amido di mais (maizena), 150 gr zucchero, 250 gr acqua, 100 gr succo di limone, buccia grattugiata di limone.

PREPARAZIONE
Montare le uova intere con lo zucchero e aggiungere l'olio, il latte, il succo, la buccia di limone. Alla fine incorporare la farina e il lievito. Mescolare bene e mettere in una teglia oliata e infarinata. Fare cuocere la torta nel forno preriscaldato a 180 gradi per circa 45 minuti.
Mentre la torta cuoce si può preparare la gelatina di limone: mettere in un tegame la buccia grattugiata, l'acqua e lo zucchero, a parte mescolare il succo del limone con la maizena. quando la maizena è sciolta e senza grumi, aggiungerla allo sciroppo di acqua e zucchero. Fare scaldare a fuoco basso per alcuni minuti; ad un certo punto si addenserà fino a diventare una gelatina. Se volete colorare la gelatina potete aggiungere un pizzico di curcuma.
Quando la torta è cotta tagliarla in due (ancora un po' calda) e farcirla con la gelatina. Servire la torta spolverata di zucchero a velo e decorata con la scorza della buccia di limone tagliata a striscioline.

Today is really spring: sun, air and summer time ... ! 
Today our Sunday isdedicated to grandparents: we eat together, we talk ( grandfather talks really  much), remembering the good things, laughing and having a good day. One of those days  that remain discreetly in our mind and coming back to warm the heart, years and years later, when we need it.
For this first real day of spring, here is a fresh and colorful lemon cake.

CAKE WITH FRESH LEMONS ( with lemon jelly)
INGREDIENTS
300 g flour, 150 g sugar, 3 eggs , 100 g corn oil, 120 g milk , 50 grams of lemon juice, 1 bag of baking powder, 1 teaspoon of vanilla extract, lemon zest.
for the "lemon jelly" :
50 g cornstarch (cornflour), 150 g sugar , 250 g water , 100 g lemon juice, lemon peel (zest).

PREPARATION
Beat the eggs with sugar and add oil, milk, lemon juice , lemon peel. At the end stir in the flour, vanilla flavor and baking powder. Mix well and place in a greased and floured baking pan. Cook the cake in a preheated oven at 180 degrees for about 45 minutes.
While the cake is cooking you can prepare the lemon jelly: put in a pan zest, water and sugar, separately mix the lemon juice with the cornstarch. When the cornstarch is dissolved with no lumps, add the syrup of sugar and water. Warm over a low heat for a few minutes,  at some point it will thicken until it becomes a jelly. If you want to color the jelly, you can add a pinch of turmeric.
When the cake is cooked, cut it into two (still a bit ' hot ) and stuff it with gelatin. Serve cake dusted with icing sugar and decorated with the zest of lemon peel cut into strips.

E' arrivato il freddo!!!



Siamo fortunati: per avere a Roma un freddo degno di questo nome siamo arrivati alla fine di novembre. Da non credere! Comunque sia il freddo fa venire vogli adì stare in casa davanti ad una buona tazza di te' o di caffé. Io però ho bisogno anche di una fetta di torta. Provate questa, è una torta morbida fatta con la mia frutta preferita:


TORTA MORBIDA DI MELE E ZUCCA
INGREDIENTI
350 gr. di zucca pulita, 3 mele, 100 gr. di zucchero, 100 gr. di latte, 2 uova, 220 gr di farina, 70 gr. di olio di semi di mais, 10 gr. di lievito in polvere, cannella.
PREPARAZIONE
Mettere la zucca a cubetti in una padella antiaderente senza acqua e fare cuocere a fuoco lento per 20-25 minuti. Quando la zucca sarà cotta, frullarla e metternla in un colino a perdere l'acqua in eccesso.
Mescolare lo zucchero e le uova con una frusta; aggiungere la cannella, l'olio e il latte. Mescolare con la farina e il lievito setacciati. Aggiungere la purea di zucca e poi le mele tagliate a fettine. 
Oliare una teglia, spolverizzare con la farina, versare l'impasto e mettere in forno a 200 per circa 20 minuti. Però non vi fidate e fate la prova "stecchino". 

SOFT CAKE WITH APPLES AND PUMPKIN
INGREDIENTS
350 gr. peeled Pumpkin, 3 apples, 100 g. of sugar, 100 gr. milk, 2 eggs, 220 grams of flour, 70 gr. corn oil, 10 gr. baking powder, cinnamon.
PREPARATION
Put the diced pumpkin in a pan without water and cook over low heat for 20-25 minutes. When the pumpkin is cooked, blend it and put it in a colander to lose excess water.
Mix sugar and eggs with a whisk, add the cinnamon, oil and milk. Add the flour and baking powder. Add the pumpkin puree and then cut apples into slices.
Oil a baking pan, sprinkle it with flour, pour the mixture in the pan and bake at 200 for about 20 minutes. Do the test with a "toothpick", don't trust the marvelous scent of the cake.

L'estate sta finendo!



E già oggi giornata uggiosissima: pioggia, vento e poca luce! Però questa domenica è stata anche la prima occasione dopo il rientro dalle vacanze per stare a casa tutti insieme e per chi come me ha i figli adolescenti (16 e 12 anni) è un evento molto apprezzabile. Si chiacchiera con calma, senza avere la sensazione di essere inseriti fra una partita al computer e una telefonata con Skype!
Quindi ho pensato di celebrare la giornata con una delle mie "ricette senza" (questa in particolare è senza burro). In più è anche veloce, e per me questo è fondamentale!

Plumcake con pesche e anacardi
INGREDIENTI 

200 gr farina 2 uova 150 gr zucchero di canna integrale

250 gr yogurt bianco 200 gr di pesche 100 gr anacardi o nocciole 

1 bustina di lievito per dolci un pochino di cannella



PROCEDIMENTO
In un recipiente montate i tuorli insieme allo zucchero. 
Unite lo yogurt, la farina e il lievito poi mescolate bene tutti gli ingredienti.
Lavate e tagliate a pezzetti le Pesche. Tritate grossolanamente gli anacardi.
Aggiungete all'impasto anacardi, pesche e un pochino di cannella.
Montate a neve gli albumi con un pizzico di sale (io ho usato il frullino a mano di mia nonna, ma tranquilli, va bene quello elettrico!) uniteli all'impasto mescolando delicatamente dal basso verso l'alto. 
Versate in uno stampo per plumcake (che io ho "oliato" e spolverizzato con la farina, ma se avete quello antiaderente o in silicone...) infornate a 210º per circa 40 minuti.
Fate raffreddare poi togliete dallo stampo e servite. Si può decorare con fettine di pesca e zucchero a velo. 
Buono per la colazione e la merenda.
Vanno bene anche altri tipi di frutta fresca, come albicocche o susine rosse.

And this is for my English-speaking  friends:

INGREDIENTS (serves 4)
200 g flour, 2 eggs, 150 g brown sugar 250 gr plain yogurt, 200 grams of peaches, 100 g cashew nuts or hazelnuts, 1 bag of baking powder, a pich of cinnamon.

PROCEDURE
In a bowl, whip the egg yolks with sugar. Combine the yogurt, flour and baking powder then mix well all ingredients. 

Wash and cut the peaches into small pieces. Chop the cashews. 
Add to the flour mix the cashews, peaches and a little bit of cinnamon. 
Whip the egg whites with a pinch of salt. Add them to the mixture, stirring gently from bottom to top. 
Pour into a mold for plum cake (that I have "oiled" and dusted with flour, but if you have a nonstick silicone mold...) and bake at 210 º for about 40 minutes. 
Let cool then unmold and serve. You can decorate your plumcake with slices of peaches and powdered sugar. 
Good for breakfast and snacks. 
You can use well also other fresh fruit, such as apricots or red plums.
