E se avanza qualcosa...Parmigiana "scappata"!


Mia nonna Matilde aveva vissuto tutte e due le guerre mondiali. Dai suoi racconti traspariva ancora l'incredulità e la tristezza che doveva aver avuto da bambina, quando nel 1915 la sua famiglia era scappata da una Germania in guerra verso i parenti italiani, in un luogo che era apparso sicuro solo per poche settimane. Mia nonna mi raccontava delle sue bellissime bambole che aveva dovuto lasciare nella casa di Solingen con la speranza di poterle riavere al ritorno. E poi ci raccontava della scarsità del cibo, soprattutto nella seconda guerra, che l'aveva fatta diventare una donna attenta a non sprecare nulla, il pane raffermo, la buccia di frutta e delle patate, i pochi occasionali avanzi.
Saranno stati racconti che mi impressionavano tanto, ma io ancora oggi non riesco a buttare nemmeno un pezzetto di pane secco e come lei lo conservo e poi lo metto a tostare nel forno, per poi tritarlo e fare il pane grattugiato.
E così ho riutilizzato le melanzane in padella avanzate dal pranzo. nulla di particolare, è solo un modo per ricordarci che ciò che abbiamo non va sprecato.

PARMIGIANA "SCAPPATA" (versione light)
Ingredienti (per 4)
gli avanzi di due melanzane cotte in padella, pomodorini ciliegina, formaggio pecorino, olio, sale (poco!), basilico fresco.
Preparazione velocissima
Mescolate le melanzane cotte con i pomodorini tagliati a metà e il basilico fresco tagliato a pezzetti con le mani. Aggiungere olio e formaggio pecorino grattugiato. Mettere in forno a 180 gradi per circa 20 minuti. Gustare tiepido o a temperatura ambiente.

My grandmother told me of her beautiful dolls that she had to leave at the house in Solingen, with the hope of being able to resume them one day. She told us also about food shortages, especially in the second war, which had turned her into a careful woman. She never waste anything, the bread, the peel of fruits and potatoes, the occasional few leftovers.
These stories impressed me so much, and I still can not even throw a piece of dry bread, and, like her, I keep it too and then put it in the hot oven, then I chop it to make breadcrumbs.
And so I reused the eggplant from lunch. This recipe is nothing special, just a way to remind us that do not have to waste what we have.

FAKE PARMIGIANA (light version)
Ingredients (for 4)
the leftover of two eggplants cooked in a pan, cherry tomatoes, pecorino cheese, olive oil, salt (a little!), fresh basil.
Preparation (very simple and fast)
Stir the eggplant cooked with halved cherry tomatoes and fresh basil, hand cut. Add oil and grated pecorino. Put in oven at 180 degrees for about 20 minutes. Enjoy warm or at room temperature.

E dopo le feste...Detox con riciclo


Cari miei, avete festeggiato, mangiato e bevuto durante Natale e Capodanno? io si e anche egregiamente, direi. Sono stata ospite da due grandi cuochi in un bel paese del Molise, a Gambatesa, dove oltre a mangiare e bere si balla e si canta per 24 ore a Capodanno. Se volete avere notizie su questo simpatico paese e sul suo  speciale Capodanno andate qui. 
Comunque oggi ho deciso di tornare ad un cibo più sano. Ho quindi preparato una vellutata di cavolfiore con semi di chia, ispirandomi alla ricetta dei Vegolosi (che trovate qui). I miei cavolfiori del mercato Esquilino erano freschissimi, comprese le foglie, belle verdi e intatte. Ho pensato che fosse un peccato davvero buttarle e quindi ho deciso di usarle per un piatto di riciclo, buono, salutare e pieno di fibre!. Provate per credere!!

SCARTI DI CAVOLFIORE IN PADELLA
Ingredienti
Scarti di due cavolfiori medi (foglie, coste delle foglie, torsoli del cavolfiore), due cucchiai di olio EVO, uno spicchio di aglio, due peperoncini (facoltativi), sale (poco!).
Procedimento
Lavate bene gli scarti del cavolfiore; riducete a pezzetti i gambi e i torsoli del cavolfiore e a striscioline le foglie. In una padella mettete due cucchiai di olio e due peperoncini e fate prendere colore ad uno spicchio d'aglio schiacciato. Aggiugete gli scarti a pezzetti, mezzo bicchiere d'acqua e lasciate cuocere circa 10 minuti con il coperchio. Controllate che gli scarti siano morbidi e aggiungete le foglie del cavolfiore, se serve con un altro mezzo bicchiere d'acqua. cuocete altri 10 minuti con il coperchio, poi toglietelo fate cuocere ancora per 5 minuti.et voilà. finito!

My dear friends, did you celebrate, eat and drink during Christmas and New Year? I did and also very well, I would say. However, today I decided to return to a healthier diet. I then prepared a cream of cauliflower with chia seeds, inspired by the recipe of Vegolosi (found here). My cauliflower from my local market were fresh, including fresh, intact deep green leaves. I found that it was a real shame throw them away, so I decided to use them for a dish of recycling: good, healthy and full of fiber!. Try it to believe it !!

YUMMY CAULIFLOWER SCRAPS IN A PAN
Ingredients
Scraps of two medium cauliflower (leaves, stems of the leaves, stalks of cauliflower), two tablespoons of extra virgin olive oil, a clove of garlic, two red hot peppers (optional), salt (just a pinch!).
Method
Wash the cauliflower scraps; chop stems and stalks of cauliflower and peel in stripes the leaves. Put a clove of crushed garlic, two tablespoons of oil and two red peppers in a pan and then let the garlic brown. Add scraps chopped into pieces, 1/2 cup of water and simmer about 10 minutes with the pan covered with the lid. Check that the waste are soft and add the leaves of the cauliflower, if necessary add with another 1/2 glass of water. Cook another 10 minutes with the lid, then remove it and cook for 5 minutes. et voila, finished!

Polpette? si ma vegetali, please!!




Ogni tanto leggo qualche post di cucina vegetariana su possibili secondi alternativi alla carne. Spesso trovo ricette interessanti dal punto di vista nutrizionale, ma non molto rapide. Quindi mi sono creata una mia versione di piatti vegetariani che possono essere realizzati da chi, come me, si trova costantemente in una cronica deficienza di tempo. In più questa è una ricetta senza. Ovvio direte, senza carne! No, anche senza uova!!

POLPETTINE DI LENTICCHIE

Ingredienti (per circa 30 polpettine - dimensione da grossa noce)

150 gr di lenticchie, 200-250 gr di patate lesse schiacciate (cotte con la buccia nella pentola a pressione, circa 10 min), un cucchiaino di curry, pangrattato, sale, olio di oliva.

PREPARAZIONE

Lessate le lenticchie in circa 350-400 gr di acqua leggermente salata (o usate brodo vegetale senza glutammato). Le lenticchie, una volta cotte, devono aver assorbito quasi completamente l'acqua. Frullatele e mischiatele alle patate schiacciate con due cucchiai di pangrattato (o di più se il composto risultasse troppo umido). Formate delle polpettine grandi come una grossa noce e passatele nel pangrattato. Potete cuocerle in forno su un foglio di carta antiaderente spennellata di olio per 20-25 minuti a 200°, girandole a metà cottura; io preferisco cuocerle in padella, con un velo di olio, fino a che risultano dorate: in questo modo riesco ad ottenere delle polpettine meno asciutte rispetto alla cottura in forno, anche se si una un pochino di olio in più.
Questa ricetta vi consente anche di riciclare le lenticchie avanzate da altre ricette. In questo modo sarà ancora più rapida!!

Sometimes I read posts on vegetarian cooking about veggie main courses with no meat. I find interesting recipes from the nutritional point of view, but unfortunately they're not easy to prepare. So I created my own version of vegetarian dishes recipes suitable for those, like me, who are always on a chronic shortage of time. In addition this is one of my "recipes without". Of course, you may say, without meat! No, not only: this is a recipe without eggs!

BALLS OF LENTILS
Ingredients (for about 30 meatballs - walnut size)
150 grams of lentils, 200-250 grams of mashed potatoes (cooked in their skins in a pressure cooker, about 10 min), a teaspoon of curry, bread crumbs, salt, olive oil.
PREPARATION
Boil the lentils in about 350-400 grams of lightly salted water (or use vegetable stock without glutammate). Lentils, once cooked, must have absorbed almost all the water. Mix it to the mashed potatoes with two tablespoons of breadcrumbs (or more if the mixture is too wet). Shape into balls the size of a large walnut and roll them in the breadcrumbs. You can cook them in the oven on a sheet of greaseproof paper brushed with oil at 200 degrees for 20-25 minutes, turning halfway through cooking. I prefer to cook them in a pan with a thin layer of oil, until they are golden: in this way my balls are less dry than those baking in the oven.
This recipe also allows you to recycle the leftover lentils.  In this way, the recipe will be even faster!
