E se avanza qualcosa...Parmigiana "scappata"!


Mia nonna Matilde aveva vissuto tutte e due le guerre mondiali. Dai suoi racconti traspariva ancora l'incredulità e la tristezza che doveva aver avuto da bambina, quando nel 1915 la sua famiglia era scappata da una Germania in guerra verso i parenti italiani, in un luogo che era apparso sicuro solo per poche settimane. Mia nonna mi raccontava delle sue bellissime bambole che aveva dovuto lasciare nella casa di Solingen con la speranza di poterle riavere al ritorno. E poi ci raccontava della scarsità del cibo, soprattutto nella seconda guerra, che l'aveva fatta diventare una donna attenta a non sprecare nulla, il pane raffermo, la buccia di frutta e delle patate, i pochi occasionali avanzi.
Saranno stati racconti che mi impressionavano tanto, ma io ancora oggi non riesco a buttare nemmeno un pezzetto di pane secco e come lei lo conservo e poi lo metto a tostare nel forno, per poi tritarlo e fare il pane grattugiato.
E così ho riutilizzato le melanzane in padella avanzate dal pranzo. nulla di particolare, è solo un modo per ricordarci che ciò che abbiamo non va sprecato.

PARMIGIANA "SCAPPATA" (versione light)
Ingredienti (per 4)
gli avanzi di due melanzane cotte in padella, pomodorini ciliegina, formaggio pecorino, olio, sale (poco!), basilico fresco.
Preparazione velocissima
Mescolate le melanzane cotte con i pomodorini tagliati a metà e il basilico fresco tagliato a pezzetti con le mani. Aggiungere olio e formaggio pecorino grattugiato. Mettere in forno a 180 gradi per circa 20 minuti. Gustare tiepido o a temperatura ambiente.


My grandmother Matilde had lived during both world wars. When she told us about her experiences, we felt all the 'disbelief and sadness of a child who, in 1915, had run away from Germany at war towards the Italian family, in a place that had been safe for a few weeks. My grandmother told me of her beautiful dolls that she had to leave at the house in Solingen, with the hope of being able to resume them one day. She told us also about food shortages, especially in the second war, which had turned her into a careful woman. She never waste anything, the bread, the peel of fruits and potatoes, the occasional few leftovers.
These stories impressed me so much, and I still can not even throw a piece of dry bread, and, like her, I keep it too and then put it in the hot oven, then I chop it to make breadcrumbs.
And so I reused the eggplant from lunch. This recipe is nothing special, just a way to remind us that do not have to waste what we have.

FAKE PARMIGIANA (light version)
Ingredients (for 4)
the leftover of two eggplants cooked in a pan, cherry tomatoes, pecorino cheese, olive oil, salt (a little!), fresh basil.
Preparation (very simple and fast)
Stir the eggplant cooked with halved cherry tomatoes and fresh basil, hand cut. Add oil and grated pecorino. Put in oven at 180 degrees for about 20 minutes. Enjoy warm or at room temperature.

L'estate sta finendo? Ancora no!



Le polpette sono la mia passione, si sa. E quindi cerco sempre nuove ricette da rivedere a modo mio. Questa volta ho rielaborato una ricetta con le melanzane, il mio ortaggio estivo preferito. Queste sono anche poco caloriche, solo 190 calorie a porzione. Le volete provare?

POLPETTE DI MELANZANE PROFUMATE AL BASILICO
Ingredienti (per 4): 400 gr. di melanzane, un uovo, 30 gr. di pecorino grattugiato, 30gr. di parmigiano grattugiato, 60 gr. di pangrattato, uno spicchio d'aglio, un mazzetto di basilico, sale (poco!), olio EVO per la teglia.

Lavare le melanzane intere, inciderle ai lati e metterle in una teglia in forno a 200º per circa un'ora. Quando saranno ben cotte all'esterno, tagliarle a metà e con un cucchiaio scavare la polpa e raccoglierla in un colapasta. Fare colare l'acqua in eccesso per circa 20 minuti. Mettere la polpa di melanzane in una ciotola e unire tutti gli altri ingredienti, compreso il basilico spezzettato grossolanamente. Formare delle polpettine da passare nel pangrattato. Mettere della carta da forno su una teglia, spalmarla con olio evo e metterle in forno a 180º per circa 15 minuti. A metà cottura girare le polpettine. Servire calde o fredde. Per una versione più golosa (e più calorica!) inserire in ciascuna polpettina un dadino di provola affumicata. Gnam!

Patties are my passion, as  you all know. For this reason I like find new recipes to change as my style. This time I propose a simple recipe with eggplant, my favorite summer vegetable. These patties are also low in calories, only 190 calories per serving. Do you want to try?

 EGGPLANT PATTIES WITH FRESH BASIL
Ingredients (serves 4): 400 gr. eggplant, one egg, 30 gr. of grated pecorino (sheep cheese, very tasty), 30gr. grated Parmesan cheese, 60 gr. breadcrumbs, a clove of garlic, a bunch of fresh basil, salt (just a pinch!), extra virgin olive oil to the pan.
Wash the eggplant whole, make an incision in the skin on both sides and place the eggplant in a baking dish in the oven at 200º for about an hour. When they are well baked on the outside, cut in half and use a spoon to take the pulp and pick it up in a colander. Let pour the excess water for about 20 minutes. Put the eggplant pulp in a bowl and add all other ingredients, including the coarsely chopped basil. Shape into meatballs and coat them in the breadcrumbs. Put baking paper on a baking sheet, spread it with olive oil and place in the oven at 180º for 15 minutes. Halfway through cooking, turn the patties. Serve hot or cold. For a more tasty version (with more calories!) insert in each patty a cube of smoked cheese. Yum!

Melanzane, che passione!!




Nella mia città, che è Roma, il mese di ottobre è sempre stato di eccezionale bellezza. Anche quest'anno la tradizione sembra rispettata, forse anche troppo! Di conseguenza mi godo ancora i sapori dell'estate, con questa ricetta superveloce, bella da vedere, buona da mangiare e profumata!

FETTE DI MELANZANE GOLOSE
Ingredienti
2 grosse melanzane, 300 gr di pomodorini maturi, 4 cucchiai di olio Evo, sale, foglie di basilico fresco, origano (facoltativo).
Preparazione
Tagliare le melanzane a fette spesse 1 cm circa e i pomodorini a spicchi. Disporre le fette di melanzane su una teglia coperta da carta da forno e cospargerle con poco sale e un filo d'olio. Disporre sulle melanzane i pomodorini e se vi piace l'origano. Mettere le melanzane in forno a 200° per circa 20 minuti. Fare raffreddare le melanzane e cospargerle di basilico spezzettato grossolanamente. Sono un contorno ottimo e leggero.

In my city, which is Rome in Italy, October has always been of exceptional beauty. This year, according this tradition, we are having fantastic sunny days! As a result, I still enjoy the flavors of summer with this super recipe, pretty to look at, good to eat and so fragrant! 

SLICES OF SUMMER...EGGPLANT  
Ingredients 
2 large eggplants, 300 grams of ripe cherry tomatoes, 4 tablespoons of extra virgin olive oil, salt, fresh basil leaves, oregano (optional). 
Method
Cut the eggplant into slices about 1 cm thick and the tomatoes into wedges. Arrange the eggplant slices on a baking tray covered with baking paper and sprinkle with a pinch of salt and a little olive oil. Sprinkle with oregano, if you like. Put the eggplant in the oven at 200°C for about 20 minutes. Allow to cool  and sprinkle with coarsely chopped basil leaves. This is a delicious light side dish.

Melanzane ... low impact!




Le melanzane sono uno degli ortaggi estivi che preferisco. Tutti conosciamo le mille e più ricette, tradizionali o più moderne, che hanno proprio le melanzane come ingrediente principale. Ricette fantastiche, come la parmigiana, le melanzane ripiene, le melanzane fritte e via così.
Quella che vi lascio qui è una ricetta della mia mamma, gustosa ma molto molto leggera e fresca.

INSALATA DI MELANZANE E MENTA
Ingredienti 
1,2 kg di melanzane (meglio se piccole, hanno meno semi), menta fresca, peperoncini verdi dolci, aceto bianco di vino, olio EVO, aglio (facoltativo), sale (poco!!)
Procedimento
Pulire le melanzane e tagliarle a pezzi regolari. In una grande pentola d'acqua aggiungere due bicchieri di aceto bianco e un cucchiaio di sale grosso. Quando l'acqua è bollente aggiungere i pezzi di melanzana e fare cuocere per 12-15 minuti o fino a che non risultano teneri. Scolare le melanzane e strizzarle docilmente, per far uscire l'acqua. Metterle in una insalatiera e condire con tante foglioline di menta, rotelle di peperoncini verdi dolci, spicchi d'aglio (lasciati interi), un cucchiaio di aceto, quattro cucchiai di olio EVO e mescolare perbene. Sono buonissime fredde, soprattutto il giorno dopo!

Eggplants are one of my favorite summer vegetables. We all know thousand of recipes, traditional or not, where eggplant is the main ingredient. Fantastic recipes such as parmigiana, stuffed eggplant, fried eggplant and so on. 
This is a different recipe, a recipe from my mom, tasty but very very light and so fresh. 

EGGPLANT SALAD WITH MINT LEAVES
Ingredients 
1.2 kg eggplant (preferably small, because they have fewer seeds), fresh mint, sweet green chili peppers, white wine vinegar, extra virgin olive oil, garlic (optional), salt (a pinch !!) 
Method
Clean the eggplants and cut them into regular pieces. In a large pot of water add two cups of white vinegar and a tablespoon of salt. When the water is boiling add the pieces of eggplant and cook for 12-15 minutes or until tender. Drain the eggplant and squeeze gently, to let the water pour out. Put the eggplant in a bowl and season with lots of mint leaves, chopped sweet green chillies, some cloves of garlic (left whole), a tablespoon of vinegar, four tablespoons of olive oil and mix well. This salad is delicious cold, especially the day after!

Parmigiana super: light e saporita!



Ormai possiamo dire che è fatta: l'estate è arrivata. Si è vero potrebbe fare un pochino più di caldo, ma c'è l'abbiamo fatta! Cosa mi piace di più di questo periodo: è ovvio, sole, luce vacanze e verdure! Le verdure estive sono invitanti e colorate, sono in grande varietà e possiamo sbizzarrirci in mille preparazioni. Spesso mi piace modificare le,ricette più tradizionali, tradizionalmente "pesanti" creando versioni più leggere, ma sempre molto gustose. Provate questa parmigiana vegana.

PARMIGIANA CON TOFU E BASILICO
Ingredienti (per 6)
600 gr. di melanzane grigliate, una bottiglia di passata di pomodoro, due spicchi di aglio, tofu 300 gr. (io ho usato un tofu al basilico, ma va bene quello normale), un grosso mazzo di basilico fresco, olio EVO.
PREPARAZIONE
Potete usare le melanzane surgelate già grigliate, oppure grigliate voi, su una piastra o in una padella antiaderente (non ci vuole molto, solo attenzione a non farle bruciare). Io taglio solo a fette le melanzane prima di grigliate, non metto sale e non faccio perdere il loro liquido: se sono di stagione non sono amare. Preparo il sugo con i due spicchi di aglio, l'olio e la passata di pomodoro. Taglio il tofu a piccoli cubetti e trito il basilico già lavato. Nella teglia alterno il sugo, le melanzane, il tofu e il basilico. L'ultimo strato è di pomodoro e tofu sbriciolato. Metto in forno caldo a 200° per circa 20 minuti. Si può accendere il grill alla fine per 2-3 minuti. Anche mio padre ha apprezzato questo piatto!



Now we can say that summer has started. What I like most about summertime is sun, light, holidays and vegetables! Summer vegetables are inviting and colorful, they are in great variety, and we can indulge in a thousand preparations. I often try to change traditional recipes by creating lighter versions, but still very tasty. Try this vegan Parmesan .

"PARMIGIANA" (A DISH WITH EGGPLANT) WITH TOFU AND BASIL
Ingredients (serves 6 )
600 gr. of grilled eggplants, a bottle of tomato sauce (700 gr), two cloves of garlic, tofu 300 gr. (I used a tofu with basil, but normal tofu it's fine), a large bunch of fresh basil, extra virgin olive oil.
PREPARATION
You can use frozen grilled eggplant, or you can grill them by yourself,  on a pan (it does not take too much, just be careful not to burn them). I just cut the eggplant into slices before grilling, I do not put salt and do not make the eggplant lose its liquid because if it is ripe it has not any bitter taste.   I prepare the sauce with two cloves of garlic, oil and tomato sauce. Cut the tofu into small cubes and chopped basil already washed. Alternately into the pan tomato sauce, grilled eggplant, tofu dices and basil. The last layer is made of tomato and crumbled tofu. I put in a hot oven at 200 degrees for about 20 minutes. You can turn the grill on for 2-3 minutes, just at the end. Even my dad liked this dish!
