Profumo di buono: biscotti menta e cioccolato


I profumi sono sempre stati al centro delle mie capacità percettive; il mio primo ricordo è il profumo del sugo semplice di mia nonna Nina, cuoca napoletana che con poco faceva miracoli. E poi il pane, burro e zucchero, l'odore della pioggia, il profumo dell'erba tagliata, le rose del giardino di mia zia Tina, il profumo del mio cestino dell'asilo, con la merenda preparata da mamma....gli odori, i profumi, da sempre hanno impresso nella mia mente i ricordi in modo più forte delle immagini.
Ed è stato il piacere del profumo della menta che mi ha ispirato nell'elaborare questa ricetta di biscotti molto golosi e molto profumati.

BISCOTTI MENTA E CIOCCOLATO

Ingredienti (per circa 30 biscotti)
140 g di farina di farro, 160 g di farina di grano tenero, 70 grammi di zucchero di canna, un cucchiaino colmo di polvere lievitante, 60 ml di olio di mais, 100 ml circa di latte (scremato, oppure di soia o di riso), 40 g di scaglie di cioccolato fondente, 1 bustina di infuso di menta, un ciuffetto di menta fresca.
Preparazione
Scaldare il latte e mettere in infusione la bustina di infuso di menta. Unire le farine con il lievito e aggiungere l'olio, il latte aromatizzato, le foglie di menta tritate, lo zucchero e il cioccolato. Lavorare velocemente l'impasto 
Lavorate velocemente e delicatamente l’impasto per ottenere un panetto morbido da che far riposare circa 30 minuti in frigorifero.
Se il panetto fosse molto umido si può aggiungere ancora un po' di farina di farro. Dopo il 
riposo stendere il panetto su un piano ricoperto con un filo di farina sino a ottenere uno spessore di 4/5 millimetri. Ritagliate i biscotti con la forma che preferite e stendeteli su una placca coperta di carta da forno. Infornate a 180 gradi per 25 minuti poi lasciate raffreddare. Si conserveranno qualche giorno chiusi in una scatola di latta. 
Fragrances have always been central to my perceptive capacities; my first memory is the smell of the simple tomato sauce of my grandmother Nina, a great Neapolitan cook; and then the bread, butter and sugar, the smell of rain, the smell of cut grass, the scent of roses in the garden of my aunt Tina, the scent of my basket of asylum, with snack prepared by Mom .... the smells, the scents, always recall my memories stronger than images.

And it was the pleasure of the scent of mint that inspired me this recipe for biscuits very greedy and very fragrant.
MINT AND CHOCOLATE COOKIES
Ingredients (for about 30 biscuits)
140 grams spelled flour, 160 grams of wheat flour, 70 grams of brown sugar, a heaping tablespoon of baking powder, 60 ml of corn oil, 100 ml of milk (skimmed, or soy or rice milk), 40 grams of dark chocolate flakes, 1 teabag of mint infusion, a sprig of fresh mint.
Preparation
Heat the milk and put the bag of mint to infuse 5 minutes. Combine flours and baking powder and add the oil, the flavored milk, the chopped mint leaves, sugar and chocolate chips. Work the dough quickly. Knead the dough quickly and gently to get a soft dough from which to rest about 30 minutes in the refrigerator.
If the dough was very wet you can add a little 'of spelled flour. After resting roll out the dough on a surface covered with a little flour until obtaining a thickness of 4.5 millimeters. Cut out biscuits with the shape you like and roll it on a baking sheet covered with parchment paper. Bake at 180 degrees for 25 minutes, then let cool. They will keep a few days in a closed tin box.

Fresco come ... la menta!


Ormai si è capito: mi piace la menta, quella piperita però. Il suo gusto fresco e stuzzicante mi sembra adatto alle pietanze estive, meglio se consumate fredde. Gironzolando per il web ho trovato questa ricetta per polpettine di piselli e menta, che ho rielaborato secondo i miei gusti e vi presento qui.
Piò essere un secondo vegetariano o un antipasto. Ogni caso ci sono pochissimi grassi e si mangiano fredde, quindi perfette per l'estate.

POLPETTINE DI PISELLI E MENTA
Ingredienti (per circa 30 polpettine)
400 gr di pisellini lessati (anche in scatola), 100 gr di miglio, 50 gr di ricotta (per una versione vegana usate del tofu morbido), un cucchiaino di curcuma, 10 foglie di menta fresca, pangrattato q.b.

Frullate i pisellini lessati con la ricotta, la curcuma e le foglie di menta spezzettate, fino ad ottenere una purea liscia. Cuocete il miglio in circa il triplo d'acqua (circa 15-20 minuti). Quando sarà tiepido, unire il miglio cotto alla purea di piselli e amalgamare. Se l'impasto fosse troppo morbido, aggiungere uno-due cucchiai di pangrattato. Formare delle polpettine che passerete nel pangrattato. metterle in un vassoio e ...buon appetito.

It is clear: I like mint leaves, specially peppermint. It is fresh and tantalizing, it seems perfect for summer cold dishes. Wandering around the web I found this recipe for peas and mint patties which I reworked according to my tastes and I present here.Piò gegetariano be a second or a starter. However there are very little fat and eat cold, so perfect for estatte. PEAS AND MINT PATTIES
 Ingredients (for about 30 patties)400 grams of boiled peas (also canned), 100 grams of millet, 50 g ricotta cheese (or cottage chesse; for a vegan version use soft tofu), a teaspoon of turmeric, 10 fresh mint leaves, bread crumbs to taste.Puree the cooked peas  with cheese, turmeric and chopped mint leaves, until you have a smooth puree. Cook the millet in about three times of water (about 15-20 minutes). Let cool then add the cooked millet to the pea puree and mix. If the dough is too soft, add 1 to 2 tablespoons of bread crumbs. Shape into balls, coat in breadcrumbs. put them in a tray and ... bon appetit.


Frescamenta!


Quest'anno sono andata a visitare Expo 2015 a Milano. Per me è stata una bella esperienza, è un po' come girare tutto il mondo in uno spazio limitato (anche se in effetti è molto grande).Il tema è l'alimentazione sostenibile, quindi per me di grande interesse!
Me la sono dovuta anche vedere con un caldo eccezionale, davvero impietoso con chi deve camminare per chilometri su e giù per il Decumano, la main street di Expo (se volete approfondire guardate qui). 
Sono stata salvata dal padiglione Turchia, dove ho gustato una bevanda fantastica, fresca, sana e nutriente: l'Ayran. Si tratta di una bevanda semplicissima, a base di yogurt ma salata.
Probabilmente chi ha viaggiato in quello splemdido Paese già la conosce (e so che si beve un po' in tutto il Medio Oriente), ma mi è talmente piaciuta che vi voglio lasciare la ricetta. Provatela e non sarete delusi.

AYRAN
Ingredienti (per una persona)
125 ml di Yogurt bianco (anche magro ma cremoso), un pizzico di sale, due foglioline di menta, 60 ml di acqua gassata freddissima.
Mettere tutto nel bicchiere del frullatore e frullare a bassa velocità per un minuto circa. Versare nel bicchiere e assaporare!

This year I visited Expo 2015 in Milan; it was a good experience, it's a little bit as to turn around the world in a limited space (although in fact Expo has a wide area). The theme of Expo is the sustainable feeding, so music for my ears! The only problem was a merciless sun, with hot temperatures, a nightmare for those who have to walk for kilometers up and down the Decumanus, the main street of Expo (if you want to deepen look here). I found my salvation at the pavilion of Turkey, where I enjoyed a fantastic drink: fresh, healthy and nutritious: the Ayran. It is a simple drink, yoghurt based and salty. Probably those who have traveled in such a beautiful country already know it (and I know that Ayran is popular in most countries of the Middle East). I liked it so much that I want to leave here the recipe. Try it and you will not be disappointed.AYRAN 
Ingredients (serves 1) 
125 ml of white Yogurt (also low fat, but creamy), a pinch of salt, two mint leaves, 60 ml of cold sparkling water. 
Put all ingredients  in the blender and blend on low speed for about a minute. Pour into a glass and enjoy!

Melanzane ... low impact!




Le melanzane sono uno degli ortaggi estivi che preferisco. Tutti conosciamo le mille e più ricette, tradizionali o più moderne, che hanno proprio le melanzane come ingrediente principale. Ricette fantastiche, come la parmigiana, le melanzane ripiene, le melanzane fritte e via così.
Quella che vi lascio qui è una ricetta della mia mamma, gustosa ma molto molto leggera e fresca.

INSALATA DI MELANZANE E MENTA
Ingredienti 
1,2 kg di melanzane (meglio se piccole, hanno meno semi), menta fresca, peperoncini verdi dolci, aceto bianco di vino, olio EVO, aglio (facoltativo), sale (poco!!)
Procedimento
Pulire le melanzane e tagliarle a pezzi regolari. In una grande pentola d'acqua aggiungere due bicchieri di aceto bianco e un cucchiaio di sale grosso. Quando l'acqua è bollente aggiungere i pezzi di melanzana e fare cuocere per 12-15 minuti o fino a che non risultano teneri. Scolare le melanzane e strizzarle docilmente, per far uscire l'acqua. Metterle in una insalatiera e condire con tante foglioline di menta, rotelle di peperoncini verdi dolci, spicchi d'aglio (lasciati interi), un cucchiaio di aceto, quattro cucchiai di olio EVO e mescolare perbene. Sono buonissime fredde, soprattutto il giorno dopo!

Eggplants are one of my favorite summer vegetables. We all know thousand of recipes, traditional or not, where eggplant is the main ingredient. Fantastic recipes such as parmigiana, stuffed eggplant, fried eggplant and so on. 
This is a different recipe, a recipe from my mom, tasty but very very light and so fresh. 

EGGPLANT SALAD WITH MINT LEAVES
Ingredients 
1.2 kg eggplant (preferably small, because they have fewer seeds), fresh mint, sweet green chili peppers, white wine vinegar, extra virgin olive oil, garlic (optional), salt (a pinch !!) 
Method
Clean the eggplants and cut them into regular pieces. In a large pot of water add two cups of white vinegar and a tablespoon of salt. When the water is boiling add the pieces of eggplant and cook for 12-15 minutes or until tender. Drain the eggplant and squeeze gently, to let the water pour out. Put the eggplant in a bowl and season with lots of mint leaves, chopped sweet green chillies, some cloves of garlic (left whole), a tablespoon of vinegar, four tablespoons of olive oil and mix well. This salad is delicious cold, especially the day after!

"La menta, cara mia.....


...non si ripianta. Chi esce dal mio cuor più non vi entra." Questo era un detto attribuito da mia madre alla mia bisnonna, donna saggia e longeva. A parte il significato complessivo di questo detto, che mi è tutt'ora oscuro, la prima parte è effettivamente vera: ho un bel vaso di menta sul mio balcone, ogni anno in primavera...zac! la taglio e quella magicamente comincia a fare foglie bellissime! non la ripianto da anni!! Cara vecchia nonnina!
Quest'anno la primavera stenta ad affermarsi, ma noi non deponiamo le armi e ci consoliamo con una fresca ricettiva a base di menta, appunto.

ANANAS E MENTA FRESCA

INGREDIENTI (PER PERSONA)
200 gr di ananas fresco tagliato a cubi, 5-6 foglie di menta (quella piperita!), ghiaccio o acqua ghiacciata (30 ml circa), maraschino (facoltativo)

PREPARAZIONE
Mettere tutti gli ingredienti in un frullatore e frullare. Aggiungere un po' di maraschino, se vi piace, per una versione "vietata ai minori".

"You cannot replant Mint. Who comes out of my heart no longer enters it". This was a saying that my mother attributed to my great-grandmother, wise and long-lived woman. Apart from the overall meaning of this saying, which it is still obscure to me, the first part is actually true: I have a nice pot of mint on my balcony, every spring ... wham! I cut it and  it starts to make leaves magically beautiful! For years, I did not replanted it!! Dear Old Ggranny! 
This year's spring is struggling to start, but we do not lose heart and, pending the spring, we enjoy this excellent dessert, made with mint of course!

PINEAPPLE AND FRESH MINT 

INGREDIENTS (PER PERSON) 
200 grams of fresh pineapple, diced, 5-6 mint leaves (peppermint!), ice or iced water (30 ml), maraschino (cherry liqueur or other liqueur, optional) 

PREPARATION 
Place all ingredients in a blender and blend. Add a little liqueur, if you like, for a version of "not suitable for minors."!!
