Fresco come ... la menta!


Ormai si è capito: mi piace la menta, quella piperita però. Il suo gusto fresco e stuzzicante mi sembra adatto alle pietanze estive, meglio se consumate fredde. Gironzolando per il web ho trovato questa ricetta per polpettine di piselli e menta, che ho rielaborato secondo i miei gusti e vi presento qui.
Piò essere un secondo vegetariano o un antipasto. Ogni caso ci sono pochissimi grassi e si mangiano fredde, quindi perfette per l'estate.

POLPETTINE DI PISELLI E MENTA
Ingredienti (per circa 30 polpettine)
400 gr di pisellini lessati (anche in scatola), 100 gr di miglio, 50 gr di ricotta (per una versione vegana usate del tofu morbido), un cucchiaino di curcuma, 10 foglie di menta fresca, pangrattato q.b.

Frullate i pisellini lessati con la ricotta, la curcuma e le foglie di menta spezzettate, fino ad ottenere una purea liscia. Cuocete il miglio in circa il triplo d'acqua (circa 15-20 minuti). Quando sarà tiepido, unire il miglio cotto alla purea di piselli e amalgamare. Se l'impasto fosse troppo morbido, aggiungere uno-due cucchiai di pangrattato. Formare delle polpettine che passerete nel pangrattato. metterle in un vassoio e ...buon appetito.

Wandering around the web I found this recipe for peas and mint patties which I reworked according to my tastes and I present here.Piò gegetariano be a second or a starter. However there are very little fat and eat cold, so perfect for estatte. PEAS AND MINT PATTIES
 Ingredients (for about 30 patties)400 grams of boiled peas (also canned), 100 grams of millet, 50 g ricotta cheese (or cottage chesse; for a vegan version use soft tofu), a teaspoon of turmeric, 10 fresh mint leaves, bread crumbs to taste.Puree the cooked peas  with cheese, turmeric and chopped mint leaves, until you have a smooth puree. Cook the millet in about three times of water (about 15-20 minutes). Let cool then add the cooked millet to the pea puree and mix. If the dough is too soft, add 1 to 2 tablespoons of bread crumbs. Shape into balls, coat in breadcrumbs. put them in a tray and ... bon appetit.

Polpettine ...al verde!


No, non sono rimasta al verde, anche se questa ricetta è anche un modo per risparmiare, non gettando via gli avanzi di verdura, in questo caso zucchine!

POLPETTE DI MIGLIO E ZUCCHINE
Ingredienti (per 4)
150 gr di miglio, 200 gr di avanzi di zucchine in padella, 100 gr di formaggio (caciotta a dadini o parmigiano grattugiato, quello che preferite), pangrattato, olio EVO, basilico (facoltativo).
Procedimento
Lessare il miglio in acqua leggermente salata (la quantità di acqua deve essere pari a 2,5 volte il peso del miglio); scolatelo bene e fatelo raffreddare. Tagliate a dadini gli avanzi di zucchine oppure passate in padella 200 gr di zucchine con mezza cipolla e due cucchiai di olio EVO. In una ciotola mescolate miglio, zucchine, formaggio, basilico tagliato grossolanamente e formate delle polpette. Se l'impasto fosse troppo morbido, aggiungete qualche cucchiaio di pangrattato. Passare le polpette nel pane grattato e scaldarle in padella antiaderente con un filo d'olio. Sono buone anche fredde!

PATTIES OF MILLET AND ZUCCHINI 
Ingredients (serves 4) 
150 grams of millet, 200 grams of leftover zucchini (stir fried), 100 grams of cheese (diced or grated), bread crumbs, extra virgin olive oil, basil (optional). Method
Boil the millet in lightly salted water (the amount of water must be equal to 2.5 times the weight of millet); drain well and let cool. Dice leftover zucchini (or stir fry 200 grams of zucchini with half onion and two tablespoons of extra virgin olive oil). In a bowl, mix millet, zucchini, cheese, basil (roughly chopped) and shape patties. If the dough is too soft, add a few tablespoons of bread crumbs. Coat the patties in bread crumbs and warm them in a pan with a little olive oil. Enoy!

Giorno di festa: i dolcini croccanti!


Oggi è l'onomastico di mio figlio più piccolo e noi non perdiamo mai l'occasione per festeggiare in famiglia anche questi piccoli eventi che ci danno gioia e allegria. Non avendo troppo tempo a disposizione per una torta, ecco qui dei dolcini rapidissimi e croccanti, oltre che salutari.

DOLCINI DI MIGLIO SOFFIATO E CIOCCOLATO
Ingredienti
70 gr di miglio soffiato (ma anche riso o orzo vanno bene), 120-150 gr di cioccolato fondente 70%, 2 cucchiai di latte, 4 cucchiaini di sciroppo di agave, zuccherini colorati e pirottini di carta.

PREPARAZIONE
Fondere il cioccolato a bagnomaria con due cucchiai di latte, aggiungere lo sciroppo di agave e mescolare bene. Aggiungere il miglio soffiato e mescolare ancora. Mettere il composto nei pirottini di carta aiutandovi con un cucchiaino. Mettere i dolcini in frigo per pochi minuti (15-20) per rendere i dolcini più croccanti. Et voilà, buon onomastico!!

PUFFED MILLET CRISPY TREATS
Ingredients
70 grams of puffed millet (but rice or barley are fine too), 120-150 grams of dark chocolate (70%), 2 tablespoons of milk, 4 teaspoons of agave syrup, colored sugar and paper cups.

PREPARATION
Melt the chocolate in a double boiler with two tablespoons of milk, add the agave syrup and mix well. Add the puffed millet and mix again. Put the mixture into paper cups using a spoon. Place the treats in the fridge for a few minutes (15-20) to make them more crisp.
Et voila, good name day!

La Cena della Befana!





E così siamo alla fine delle lunghe vacanze di Natale. Lunghe per i ragazzi che vanno a scuola, perché naturalmente noi, adulti e (per fortuna) lavoratori, possiamo aver preso al massimo qualche giorno. Io sento molto lo spirito delle vacanze dei miei ragazzi, anche se lavoro mi sembra di essere in vacanza con loro. E sono contenta!
Stasera passaggio della Befana! Ma cosa mangerà prima di partire? qualcosa di leggero e sostanzioso, come le mie polpettine di cavolo nero.

POLPETTINE DI CAVOLO NERO
INGREDIENTI
200 gr. di cavolo nero lessato e strizzato, 100 gr di miglio decorticato, 4 cucchiai di farina di ceci o di fagioli, sale, paprica dolce, aglio.
PROCEDIMENTO
Tagliare a pezzettini il cavolo nero (potete sostituirlo con foglie di verza, lessata e strizzata) e passarlo in padella con olio e uno spicchio di aglio schiacciato. Fate cuocere il miglio in circa 350 gr di acqua leggermente salata o nel brodo vegetale (seguite le indicazioni sul pacchetto). Una volta cotto, il miglio è naturalmente appiccicoso, quindi non dovrete usare uova per queste polpettine.
Mettete in una ciotola il miglio cotto, i pezzettini di cavolo nero, tre-quattro cucchiai di farina di ceci o farina di fagioli, il sale e, se vi piace, un cucchiaino o due di paprika dolce. Impastate il tutto e formate delle polpettine che poi passerete nel pangrattato o nella farina di mais. Scaldate dell'olio nella padella e fate cuocere le polpettine su entrambi i lati. Buona ripresa!!

And so we are at the end of the long Christmas holidays. Long for the boys who go to school, because we, adults, and (thankfully) workers, we have just a few days of rest. I like so much the spirit of these holidays, even if I go to work, I feel with my boys on vacation. And I'm happy !
Tonight is the night of Epiphany and we in Italy celebrate the passage of an old lady who brings sweets and small gifts to kids ! But what would her eat before her long trip? Something light and nutritious, like my cabbage balls.

BLACK CABBAGE PATTIES
INGREDIENTS
200 gr. of boiled black cabbage, 100 grams of millet, 4 tablespoons of chickpea flour or beans flour, salt, paprika, garlic.
PROCEDURE
Squeeze and cut the cabbage into small pieces (you can replace it with normal cabbage leaves, boiled and drained) and cook it in a pan with olive oil and a clove of crushed garlic. Cook the millet in about 350 grams of lightly salted water or vegetable stock (follow the directions on the package). 
Once cooked, millet is naturally sticky, so you will not have to use eggs for these balls. Put in a bowl the cooked millet, the pieces of cabbage, 3 or 4 tablespoons of chickpea flour or bean flour, salt and, if you like, add a teaspoon or two of sweet paprika. Mix everything together and then form medium patties and coat them in breadcrumbs or cornflour. Heat a little oil in a frying pan and cook the patties on both sides. Have a great new year!!!

Ancora polpette!


Oggi mi sento particolarmente preparata sulle polpette! Io le trovo stuzzicanti, soprattutto se le preparo di piccole dimensioni in modo da essere anche utilizzate per un antipasto o un aperitivo. Si chiamano finger food mi pare, cioé cibi che possono essere anche mangiati con le mani, con le dita per essere precisi. Il problema è che quando si mangiano cibi stuzzicanti...si mangia molto! 
Comunque vi invito a provare le mie polpettine di tonno e miglio. Il miglio (si quello che si dà agli uccellini) è un cereale dalle proprietà straordinarie, che potete scoprire anche qui: Come utilizzare il miglio  

POLPETTINE DI TONNO E MIGLIO (Per circa 20 piccole polpettine)
Ingredienti: 200 gr. di tonno in scatola sgocciolato, 100 gr di miglio perlato, pangrattato, limone, timo fresco, sale, olio.
PREPARAZIONE
Seguite le istruzioni sulla confezione per lessare il miglio; io di solito metto in una casseruola il miglio e una quantità tripla di acqua già calda e lievemente salata per circa 20 minuti, facendo assorbire tutto il liquido a fine cottura (se necessario, aggiungere poca acqua calda). Il tonno deve essere frullato (se è troppo "asciutto" aggiungere un pochino di latte) fino a diventare una crema omogenea. Mischiare il tonno, il miglio, il succo di un limone e, se vi piace, foglioline di timo fresco. Non è necessario aggiungere le uova perché il miglio è naturalmente appiccicoso. Formate quindi delle palline che passerete nel pangrattato. Potete guarnire le polpettine di tonno e miglio con un pezzetto di buccia di limone e presentarle dentro ai pirottini come se fossero dei bon bon (guardate la foto; la ricetta dei pomodorini la trovate in questo blog, qui Pomodorini al couscous ).
Today I feel particularly prepared on the...balls! I find them tasty, especially if you give them a small size in order to use them for an appetizer or aperitif. If I'm not wrong they are called finger food, a food that can be eaten using your hands, your fingers to be precise. The problem is that if you eat tasty and colourful food, you eventually eat more!!

BALLS OF TUNA AND MILLET (For about 20 small meatballs)
Ingredients: 200 gr. canned drained tuna, 100g pearl millet, bread crumbs, lemon, fresh thyme, salt, oil.
PREPARATION
Follow the instructions on the package to cook the millet, I usually put in a saucepan the millet and a triple amount of hot water slightly salted for about 20 minutes or when the millet has absorbed all the water (if needed, add more hot water). The tuna should be blended (if it is too "dry", add a little milk) until it becomes a smooth paste. Mix the tuna, millet, lemon juice and, if you like, fresh thyme leaves. It is not necessary to add the eggs, because the millet is naturally sticky. Then shape into balls and roll them in the breadcrumbs. You can garnish the tunaballs with a strip of lemon peel and present them in paper baking cups (as shown in the picture, the recipe for the cherry tomatoes is in this blog, here Cherry tomatoes and other snacks )
