Burger di quinoa alla mediterranea



Le feste di Pasqua ci regalano un lungo weekend spesso con il primo vero sole di primavera. Non è stato così in questo 2016 e quindi ho approfittato di una Pasquetta casalinga per sperimentare una nuova ricetta. Diciamo che ero anche alla ricerca di qualcosa di sfizioso che però mi aiutasse a smaltire gli eccessi del giorno di Pasqua, passato in famiglia con dolci e cioccolata a non finire. 
Per i miei burger ho scelto la quinoa, un "falso cereale" dalle proprietà straordinarie (info che potete trovare qui).
Ecco qui la ricetta

BURGER DI QUINOA ALLA MEDITERRANEA

Ingredienti (per 8 burgers)
200 gr di quinoa (rossa, bianca o mix, come preferite), una patata (circa 200 gr.), due scalogni, otto pomodori secchi, timo, olio evo.

Procedimento
Sciacquare la quinoa e farla cuocere in 400 gr di acqua fredda, fino a che l'acqua non si sarà tutta assorbita. Lessare la patata con la buccia. In una padella antiaderente mettere due cucchiai di olio EVO, gli scalogni tagliati a fettine e i pomodori secchi già sciacquati, tagliati a pezzetti. Fare cuocere per circa 5 minuti e aggiungere alla fine delle foglioline di timo. Mescolare con le mani tutti gli ingredienti: la quinoa e la patata lessa ormai fredde e il composto di scalogni e pomodori. Dividere l'impasto in otto parti e formare dei burger (ci si può aiutare con un coppapasta). Mettere i burger su una placca coperta di carta da forno e cuocere a 200° per circa 10 minuti per lato. Ottimi con un'insalata o una verdura cotta per un pasto veloce e detox.

Easter holidays give us a long weekend often with the first spring sunshine. It was not so in this in 2016 and then took advantage of a gloomy Easter Monday to prepare a new recipe. Let's say that I was looking for something tasty that can help me to work off some of Easter lunch! 
For my burger I chose the quinoa, a "fake cereal" with extraordinary properties (you can find info here).

QUINOA BURGER  MEDITERRANEAN STYLE

Ingredients (for 8 burgers)
200 grams of quinoa (red, white or mix, as you prefer), a potato (about 200 gr.), two shallots, eight dried tomatoes, thyme, extra virgin olive oil.

Method
Rinse the quinoa and cook in 400 grams of cold water, until the water is all absorbed. Boil the potatoe in its skin. In a pan put two tablespoons of oil, sliced shallots, dried tomatoes already rinsed, cut into pieces. Cook for about 5 minutes and eventually add thyme leaves. Mix with your hands all the ingredients: quinoa and boiled potato, now cold,  and the mixture of shallots and tomatoes. Divide the dough into eight pieces and form burger (we can use a pastry ring). Put the burger on a plate covered with parchment paper and bake at 200 degrees for about 10 minutes per side. 
Excellent with a green salad or cooked vegetables for a fast and detox meal.

L'estate sta finendo? Ancora no!



Le polpette sono la mia passione, si sa. E quindi cerco sempre nuove ricette da rivedere a modo mio. Questa volta ho rielaborato una ricetta con le melanzane, il mio ortaggio estivo preferito. Queste sono anche poco caloriche, solo 190 calorie a porzione. Le volete provare?

POLPETTE DI MELANZANE PROFUMATE AL BASILICO
Ingredienti (per 4): 400 gr. di melanzane, un uovo, 30 gr. di pecorino grattugiato, 30gr. di parmigiano grattugiato, 60 gr. di pangrattato, uno spicchio d'aglio, un mazzetto di basilico, sale (poco!), olio EVO per la teglia.

Lavare le melanzane intere, inciderle ai lati e metterle in una teglia in forno a 200º per circa un'ora. Quando saranno ben cotte all'esterno, tagliarle a metà e con un cucchiaio scavare la polpa e raccoglierla in un colapasta. Fare colare l'acqua in eccesso per circa 20 minuti. Mettere la polpa di melanzane in una ciotola e unire tutti gli altri ingredienti, compreso il basilico spezzettato grossolanamente. Formare delle polpettine da passare nel pangrattato. Mettere della carta da forno su una teglia, spalmarla con olio evo e metterle in forno a 180º per circa 15 minuti. A metà cottura girare le polpettine. Servire calde o fredde. Per una versione più golosa (e più calorica!) inserire in ciascuna polpettina un dadino di provola affumicata. Gnam!

Patties are my passion, as  you all know. For this reason I like find new recipes to change as my style. This time I propose a simple recipe with eggplant, my favorite summer vegetable. These patties are also low in calories, only 190 calories per serving. Do you want to try?

 EGGPLANT PATTIES WITH FRESH BASIL
Ingredients (serves 4): 400 gr. eggplant, one egg, 30 gr. of grated pecorino (sheep cheese, very tasty), 30gr. grated Parmesan cheese, 60 gr. breadcrumbs, a clove of garlic, a bunch of fresh basil, salt (just a pinch!), extra virgin olive oil to the pan.
Wash the eggplant whole, make an incision in the skin on both sides and place the eggplant in a baking dish in the oven at 200º for about an hour. When they are well baked on the outside, cut in half and use a spoon to take the pulp and pick it up in a colander. Let pour the excess water for about 20 minutes. Put the eggplant pulp in a bowl and add all other ingredients, including the coarsely chopped basil. Shape into meatballs and coat them in the breadcrumbs. Put baking paper on a baking sheet, spread it with olive oil and place in the oven at 180º for 15 minutes. Halfway through cooking, turn the patties. Serve hot or cold. For a more tasty version (with more calories!) insert in each patty a cube of smoked cheese. Yum!

Fresco come ... la menta!


Ormai si è capito: mi piace la menta, quella piperita però. Il suo gusto fresco e stuzzicante mi sembra adatto alle pietanze estive, meglio se consumate fredde. Gironzolando per il web ho trovato questa ricetta per polpettine di piselli e menta, che ho rielaborato secondo i miei gusti e vi presento qui.
Piò essere un secondo vegetariano o un antipasto. Ogni caso ci sono pochissimi grassi e si mangiano fredde, quindi perfette per l'estate.

POLPETTINE DI PISELLI E MENTA
Ingredienti (per circa 30 polpettine)
400 gr di pisellini lessati (anche in scatola), 100 gr di miglio, 50 gr di ricotta (per una versione vegana usate del tofu morbido), un cucchiaino di curcuma, 10 foglie di menta fresca, pangrattato q.b.

Frullate i pisellini lessati con la ricotta, la curcuma e le foglie di menta spezzettate, fino ad ottenere una purea liscia. Cuocete il miglio in circa il triplo d'acqua (circa 15-20 minuti). Quando sarà tiepido, unire il miglio cotto alla purea di piselli e amalgamare. Se l'impasto fosse troppo morbido, aggiungere uno-due cucchiai di pangrattato. Formare delle polpettine che passerete nel pangrattato. metterle in un vassoio e ...buon appetito.

It is clear: I like mint leaves, specially peppermint. It is fresh and tantalizing, it seems perfect for summer cold dishes. Wandering around the web I found this recipe for peas and mint patties which I reworked according to my tastes and I present here.Piò gegetariano be a second or a starter. However there are very little fat and eat cold, so perfect for estatte. PEAS AND MINT PATTIES
 Ingredients (for about 30 patties)400 grams of boiled peas (also canned), 100 grams of millet, 50 g ricotta cheese (or cottage chesse; for a vegan version use soft tofu), a teaspoon of turmeric, 10 fresh mint leaves, bread crumbs to taste.Puree the cooked peas  with cheese, turmeric and chopped mint leaves, until you have a smooth puree. Cook the millet in about three times of water (about 15-20 minutes). Let cool then add the cooked millet to the pea puree and mix. If the dough is too soft, add 1 to 2 tablespoons of bread crumbs. Shape into balls, coat in breadcrumbs. put them in a tray and ... bon appetit.

La Cena della Befana!





E così siamo alla fine delle lunghe vacanze di Natale. Lunghe per i ragazzi che vanno a scuola, perché naturalmente noi, adulti e (per fortuna) lavoratori, possiamo aver preso al massimo qualche giorno. Io sento molto lo spirito delle vacanze dei miei ragazzi, anche se lavoro mi sembra di essere in vacanza con loro. E sono contenta!
Stasera passaggio della Befana! Ma cosa mangerà prima di partire? qualcosa di leggero e sostanzioso, come le mie polpettine di cavolo nero.

POLPETTINE DI CAVOLO NERO
INGREDIENTI
200 gr. di cavolo nero lessato e strizzato, 100 gr di miglio decorticato, 4 cucchiai di farina di ceci o di fagioli, sale, paprica dolce, aglio.
PROCEDIMENTO
Tagliare a pezzettini il cavolo nero (potete sostituirlo con foglie di verza, lessata e strizzata) e passarlo in padella con olio e uno spicchio di aglio schiacciato. Fate cuocere il miglio in circa 350 gr di acqua leggermente salata o nel brodo vegetale (seguite le indicazioni sul pacchetto). Una volta cotto, il miglio è naturalmente appiccicoso, quindi non dovrete usare uova per queste polpettine.
Mettete in una ciotola il miglio cotto, i pezzettini di cavolo nero, tre-quattro cucchiai di farina di ceci o farina di fagioli, il sale e, se vi piace, un cucchiaino o due di paprika dolce. Impastate il tutto e formate delle polpettine che poi passerete nel pangrattato o nella farina di mais. Scaldate dell'olio nella padella e fate cuocere le polpettine su entrambi i lati. Buona ripresa!!

And so we are at the end of the long Christmas holidays. Long for the boys who go to school, because we, adults, and (thankfully) workers, we have just a few days of rest. I like so much the spirit of these holidays, even if I go to work, I feel with my boys on vacation. And I'm happy !
Tonight is the night of Epiphany and we in Italy celebrate the passage of an old lady who brings sweets and small gifts to kids ! But what would her eat before her long trip? Something light and nutritious, like my cabbage balls.

BLACK CABBAGE PATTIES
INGREDIENTS
200 gr. of boiled black cabbage, 100 grams of millet, 4 tablespoons of chickpea flour or beans flour, salt, paprika, garlic.
PROCEDURE
Squeeze and cut the cabbage into small pieces (you can replace it with normal cabbage leaves, boiled and drained) and cook it in a pan with olive oil and a clove of crushed garlic. Cook the millet in about 350 grams of lightly salted water or vegetable stock (follow the directions on the package). 
Once cooked, millet is naturally sticky, so you will not have to use eggs for these balls. Put in a bowl the cooked millet, the pieces of cabbage, 3 or 4 tablespoons of chickpea flour or bean flour, salt and, if you like, add a teaspoon or two of sweet paprika. Mix everything together and then form medium patties and coat them in breadcrumbs or cornflour. Heat a little oil in a frying pan and cook the patties on both sides. Have a great new year!!!

Polpette? si ma vegetali, please!!




Ogni tanto leggo qualche post di cucina vegetariana su possibili secondi alternativi alla carne. Spesso trovo ricette interessanti dal punto di vista nutrizionale, ma non molto rapide. Quindi mi sono creata una mia versione di piatti vegetariani che possono essere realizzati da chi, come me, si trova costantemente in una cronica deficienza di tempo. In più questa è una ricetta senza. Ovvio direte, senza carne! No, anche senza uova!!

POLPETTINE DI LENTICCHIE

Ingredienti (per circa 30 polpettine - dimensione da grossa noce)

150 gr di lenticchie, 200-250 gr di patate lesse schiacciate (cotte con la buccia nella pentola a pressione, circa 10 min), un cucchiaino di curry, pangrattato, sale, olio di oliva.

PREPARAZIONE

Lessate le lenticchie in circa 350-400 gr di acqua leggermente salata (o usate brodo vegetale senza glutammato). Le lenticchie, una volta cotte, devono aver assorbito quasi completamente l'acqua. Frullatele e mischiatele alle patate schiacciate con due cucchiai di pangrattato (o di più se il composto risultasse troppo umido). Formate delle polpettine grandi come una grossa noce e passatele nel pangrattato. Potete cuocerle in forno su un foglio di carta antiaderente spennellata di olio per 20-25 minuti a 200°, girandole a metà cottura; io preferisco cuocerle in padella, con un velo di olio, fino a che risultano dorate: in questo modo riesco ad ottenere delle polpettine meno asciutte rispetto alla cottura in forno, anche se si una un pochino di olio in più.
Questa ricetta vi consente anche di riciclare le lenticchie avanzate da altre ricette. In questo modo sarà ancora più rapida!!

Sometimes I read posts on vegetarian cooking about veggie main courses with no meat. I find interesting recipes from the nutritional point of view, but unfortunately they're not easy to prepare. So I created my own version of vegetarian dishes recipes suitable for those, like me, who are always on a chronic shortage of time. In addition this is one of my "recipes without". Of course, you may say, without meat! No, not only: this is a recipe without eggs!

BALLS OF LENTILS
Ingredients (for about 30 meatballs - walnut size)
150 grams of lentils, 200-250 grams of mashed potatoes (cooked in their skins in a pressure cooker, about 10 min), a teaspoon of curry, bread crumbs, salt, olive oil.
PREPARATION
Boil the lentils in about 350-400 grams of lightly salted water (or use vegetable stock without glutammate). Lentils, once cooked, must have absorbed almost all the water. Mix it to the mashed potatoes with two tablespoons of breadcrumbs (or more if the mixture is too wet). Shape into balls the size of a large walnut and roll them in the breadcrumbs. You can cook them in the oven on a sheet of greaseproof paper brushed with oil at 200 degrees for 20-25 minutes, turning halfway through cooking. I prefer to cook them in a pan with a thin layer of oil, until they are golden: in this way my balls are less dry than those baking in the oven.
This recipe also allows you to recycle the leftover lentils.  In this way, the recipe will be even faster!
