L'estate sta finendo? Ancora no!



Le polpette sono la mia passione, si sa. E quindi cerco sempre nuove ricette da rivedere a modo mio. Questa volta ho rielaborato una ricetta con le melanzane, il mio ortaggio estivo preferito. Queste sono anche poco caloriche, solo 190 calorie a porzione. Le volete provare?

POLPETTE DI MELANZANE PROFUMATE AL BASILICO
Ingredienti (per 4): 400 gr. di melanzane, un uovo, 30 gr. di pecorino grattugiato, 30gr. di parmigiano grattugiato, 60 gr. di pangrattato, uno spicchio d'aglio, un mazzetto di basilico, sale (poco!), olio EVO per la teglia.

Lavare le melanzane intere, inciderle ai lati e metterle in una teglia in forno a 200º per circa un'ora. Quando saranno ben cotte all'esterno, tagliarle a metà e con un cucchiaio scavare la polpa e raccoglierla in un colapasta. Fare colare l'acqua in eccesso per circa 20 minuti. Mettere la polpa di melanzane in una ciotola e unire tutti gli altri ingredienti, compreso il basilico spezzettato grossolanamente. Formare delle polpettine da passare nel pangrattato. Mettere della carta da forno su una teglia, spalmarla con olio evo e metterle in forno a 180º per circa 15 minuti. A metà cottura girare le polpettine. Servire calde o fredde. Per una versione più golosa (e più calorica!) inserire in ciascuna polpettina un dadino di provola affumicata. Gnam!

Patties are my passion, as  you all know. For this reason I like find new recipes to change as my style. This time I propose a simple recipe with eggplant, my favorite summer vegetable. These patties are also low in calories, only 190 calories per serving. Do you want to try?

 EGGPLANT PATTIES WITH FRESH BASIL
Ingredients (serves 4): 400 gr. eggplant, one egg, 30 gr. of grated pecorino (sheep cheese, very tasty), 30gr. grated Parmesan cheese, 60 gr. breadcrumbs, a clove of garlic, a bunch of fresh basil, salt (just a pinch!), extra virgin olive oil to the pan.
Wash the eggplant whole, make an incision in the skin on both sides and place the eggplant in a baking dish in the oven at 200º for about an hour. When they are well baked on the outside, cut in half and use a spoon to take the pulp and pick it up in a colander. Let pour the excess water for about 20 minutes. Put the eggplant pulp in a bowl and add all other ingredients, including the coarsely chopped basil. Shape into meatballs and coat them in the breadcrumbs. Put baking paper on a baking sheet, spread it with olive oil and place in the oven at 180º for 15 minutes. Halfway through cooking, turn the patties. Serve hot or cold. For a more tasty version (with more calories!) insert in each patty a cube of smoked cheese. Yum!

Melanzane, che passione!!




Nella mia città, che è Roma, il mese di ottobre è sempre stato di eccezionale bellezza. Anche quest'anno la tradizione sembra rispettata, forse anche troppo! Di conseguenza mi godo ancora i sapori dell'estate, con questa ricetta superveloce, bella da vedere, buona da mangiare e profumata!

FETTE DI MELANZANE GOLOSE
Ingredienti
2 grosse melanzane, 300 gr di pomodorini maturi, 4 cucchiai di olio Evo, sale, foglie di basilico fresco, origano (facoltativo).
Preparazione
Tagliare le melanzane a fette spesse 1 cm circa e i pomodorini a spicchi. Disporre le fette di melanzane su una teglia coperta da carta da forno e cospargerle con poco sale e un filo d'olio. Disporre sulle melanzane i pomodorini e se vi piace l'origano. Mettere le melanzane in forno a 200° per circa 20 minuti. Fare raffreddare le melanzane e cospargerle di basilico spezzettato grossolanamente. Sono un contorno ottimo e leggero.

SLICES OF SUMMER...EGGPLANT  
Ingredients 
2 large eggplants, 300 grams of ripe cherry tomatoes, 4 tablespoons of extra virgin olive oil, salt, fresh basil leaves, oregano (optional). 
Method
Cut the eggplant into slices about 1 cm thick and the tomatoes into wedges. Arrange the eggplant slices on a baking tray covered with baking paper and sprinkle with a pinch of salt and a little olive oil. Sprinkle with oregano, if you like. Put the eggplant in the oven at 200°C for about 20 minutes. Allow to cool  and sprinkle with coarsely chopped basil leaves. This is a delicious light side dish.

The Belly of an Architect? Nooo, just a Pesto sauce!





Può un architetto essere specialista di pesto?? Direi di sì, se è un buongustaio e se ha vissuto a Genova per alcuni anni. Vi lascio la ricetta del pesto dell'architetto, il mio amico e collega Roberto, che mi piace perché fatto rigorosamente con pinoli e poco aglio. 
Un consiglio per un antipasto sano e bello per il cenone di Capodanno?

PESTO ALLA GENOVESE

INGREDIENTI               

10 foglie di basilico x persona, 100 gr. di pecorino sardo, 1 cucchiaio di pinoli sgusciati, 1 spicchio piccolo di aglio, 1 bicchiere di olio di oliva extra vergine

PROCEDIMENTO
Mettere a bagno, in acqua fredda, il basilico, prendere solo le foglie escludendo i gambi e possibilmente anche i piccioli. Tamponare le foglie in un canovaccio o carta da cucina. Sminuzzare le foglie sul tagliere con la mezzaluna o altro coltello. Strizzare il più possibile il basilico sminuzzato per far uscire il liquido verdastro che è amaro. Mettere il composto in un recipiente ed aggiungere l’aglio e l’olio. Amalgamare utilizzando un frullatore ad immersione. Aggiungere il pecorino tagliato a cubetti ed i pinoli, e frullare aggiungendo pochissimo olio fino ad avere una consistenza tra il latte condensato e la marmellata. NON SALARE. Lasciare riposare almeno un’ora a temperatura ambiente. 

Il pesto genovese è un condimento delicato, per cui non eccedere con l’aglio.

INGREDIENTS10 basil leaves x person , 100 gr. Sardinian pecorino (sheep milk cheese), 1 tablespoon of shelled pine nuts, 1 small clove of garlic, 1 cup of extra virgin olive oilPROCEDURESoak basil in cold water, take only the leaves possibly excluding the stems . Dab the leaves in a tea towel or kitchen paper. Chop the leaves on cutting board with a  knife. Squeeze out as much as possible the chopped basil, in order to bring out the greenish liquid that is bitter. Put the mixture into a bowl and add garlic and oil. Mix well using a hand blender. Add the diced cheese and pine nuts with a little olive oil and blend until you have a consistency between the condensed milk and jam. DO NOT SALT!!. Let stand at least one hour at room temperature.Pesto Genovese is a delicate sauce, so do not use too much garlic.
