Leggeri e golosi: i biscotti all'avena



Avete mai voglia di qualcosa di buono ma.....sapete di non poterlo fare? Penso proprio di si, capita a tutti. Ci capita ad esempio di essere a dieta, oppure di non digerire bene il latte o a volte semplicemente sappiamo che proprio non dovremmo esagerare. Allora che fare? Una soluzione è mangiare un bel quadrotto di cioccolato fondente, almeno 75% di cacao. Ma se invece abbiamo voglia di sgranocchiare, allora provate questi biscotti con fiocchi di avena, latte vegetale e semi oleosi. Sono digeribili e sazianti, perché contengono anche semi di chia. Non vi pentirete!

BISCOTTI ALL'AVENA CON SEMI (dosi per circa 25 biscotti)
Ingredienti
100 gr di farina a scelta, 150 gr di fiocchi di avena, 80 gr di zucchero di canna chiaro, un pizzico di vaniglia in polvere, 30 gr di olio di mais, 70 gr di latte di riso (o un altro latte vegetale a scelta), due cucchiaini di semi di sesamo, papavero e girasole, tre cucchiaini di semi di chia.
Procedimento
Mescolate la farina, i fiocchi di avena, lo zucchero, la vaniglia, i semi oleosi. Aggiungete l'olio di mais e il latte vegetale e amalgamate bene l'impasto. Con le mani bagnate formate delle palline grandi come una noce, appiattitele e mettetele su una teglia foderata di carta forno. 
Cuocete in forno a 200° per 20 minuti. Per biscotti molto croccanti lasciate riposare in forno spento per circa 5 minuti. Si conservano per una settimana in un contenitore chiuso.

OATMEAL COOKIES WITH SEEDS (serves about 25 cookies)
Ingredients
100 gr of flour of your choice, 150 gr oat flakes, 80 gr light cane sugar, a pinch of vanilla powder, 30 gr of corn oil, 70 g of rice milk (or other vegetable milk of your choice), two teaspoons of sesame seeds, poppy and sunflower seeds, three teaspoons of chia seeds.
Method
Mix flour, oat flakes, sugar, vanilla, and seeds. Add corn oil and vegetable milk and mix well the dough. With wet hands form balls, walnut size, flatten them and put them on a baking sheet with parchment paper. Cook in the oven at 200° for about 20 minutes. For very crisp biscuits, turn the oven off and let the cookies rest  for about 5 minutes. They can be stored for a week in a closed box.

Budino d'estate? Si, ma senza cottura!


L'estate non è la mia stagione preferita: troppo caldo, troppa luce, troppo caos. Naturalmente pur non essendo la mia preferita, apprezzo molti aspetti dell'estate: le lunghe giornate, le vacanze, la frutta fresca... insomma sono tanti i motivi per apprezzarla!
Il caldo mi spinge spesso a provare ricette che non richiedono la cottura, per motivi ovvi. Di recente, nel mio ultimo viaggio a Praga ho assaggiato questo budino di semi di chia, una pianta che non conoscevo affatto. Prima di tutto è senza cottura, perché i semi di chia tendono a gelificare quando sono a contatto con dei liquidi. Inoltre questi semi hanno delle interessanti proprietà, ad esempio sono molto ricchi di calcio e hanno molti acidi grassi essenziali, gli omega3. Se volete più informazioni  sulle proprietà e gli usi di questi semi cliccate qui. Io li compro al supermercato, anche se sono in commercio nella UE solo dal 2009 ormai è facile reperirli. 
Dopo aver assaggiato questo budino con della frutta fresca sopra ho cercato la ricetta e l'ho provata. Il procedimento è velocissimo e super facile, quindi...provate anche voi!!

BUDINO DI SEMI DI CHIA

Ingredienti (per 2 persone)
45 gr di semi di chia, 300 gr di latte vegetale (riso, mandorla, quello che preferite), tre cucchiaini di zucchero (facoltativo). 
Procedimento
In un vaso capiente con chiusura ermetica mettete i semi di chia e aggiungete il latte vegetale. Mescolate bene, chiudendo il vasetto e agitandolo energicamente. Mettete in frigo; dopo una mezz'ora comincia a gelificare e il liquido diventa budinoso. Io lo preparo la sera per la colazione della mattina e aggiungo frutta fresca o marmellata. Facile no?

Summer is not my favorite season: too hot, too much light, too much chaos. But of course, I appreciate many aspects of summer: very long days, holidays, fresh fruit ... so there are many reasons to love it!
Summer heat drives me often to try recipes that do not require cooking, for obvious reasons. Recently, on my last trip to Prague I tasted this chia pudding, a plant that was not familiar to me. First of all this recipe is ready without cooking because chia seeds tend to gel when in contact with liquids. In addition, these seeds have some interesting properties, such as they are very rich in calcium and have many essential fatty acids, omega3. If you want more information on the properties and uses of these seeds click here. I buy them at the supermarket, even if they are on the EU only since 2009, now it is easy to find them.
Having tasted this pudding with fresh fruit,  I looked for  the recipe and I tried it. The process is very fast and super easy, so ... try it yourself !!

PUDDING OF CHIA SEEDS

Ingredients (serves  2)
45 grams of chia seeds, 300 grams of vegetable milk (rice, almond, whatever you prefer), three teaspoons of sugar (optional).
Method
In a large pot with airtight put chia seeds and add the veg milk. Stir well, closing the jar and shaking it vigorously. Refrigerate; after half an hour it begins to gel and the liquid turns into a soft pudding. I'll prepare it in the evening for the breakfast of the moorning after and I add fresh fruit or jam. Easy isn't it?
