Autunno: coccoliamoci con la zuppa di Millecosedde


I primi freddi mi hanno sempre messo di buon umore: uscire la mattina e sentire l'aria fresca che scivola sul viso ti fa sentire la differenza fra la casa e "il fuori" e ti dà la giusta energia per cominciare la giornata. Lo so lo so, siamo in pochi a pensarla così. Il vantaggio è che si riesce a godere di una stagione che spesso mette tristezza, a me il freddo richiama la casa, la voglia di stare insieme a chi vogliamo bene. E magari davanti una bella zuppa fumante. questa zuppa è una rielaborazione di una ricetta calabrese, in versione rapida (con i legumi in scatola) e light (senza pancetta o altri grassi animali) ma comunque buona e profumata con i funghi porcini. Naturalmente si possono usare i legumi secchi, mettendoli in ammollo 24 ore prima.

MILLECOSEDDE
INGREDIENTI (per 4p.)
350 gr di legumi in scatola misti (fagioli, ceci, lenticchie...) oppure 150 gr di legumi secchi da ammollare, una cipolla, 200 gr di spinaci o bieta (anche surgelati), 30 gr di funghi porcini secchi, pomodori pelati o freschi 400 gr, 2 cucchiai di olio evo, 1/2 lt d'acqua, 320 gr di pasta integrale, erbe aromatiche a scelta (salvia, rosmarino, timo...)
PREPARAZIONE
Mettere i funghi secchi in acqua tiepida per circa 10 minuti. In una pentola di coccio scaldare l'olio con la cipolla tritata, aggiungere i pomodori tagliati a pezzetti, Fare insaporire e aggiungere l'acqua e un pizzico di sale e le erbe aromatiche Fare bollire per circa 5 minuti. Aggiungere gli spinaci (o bieta) e i funghi ormai morbidi e lasciare cuocere per altri 5 minuti. Aggiungere i legumi misti e dopo circa 2 minuti mettere nella pentola la pasta e cuocere per circa 10 minuti (seguite le istruzioni sul pacco di pasta).
La zuppa è pronta: per renderla più cremosa, potete frullare circa un terzo dei legumi cotti e aggiungere la purea a fine cottura. Servite con un filo di olio EVO.

When the first cold weather comes, I'm always in a good mood: I like out in the morning feeling the fresh air that blows on your face; this gives me the right energy to start the day. I know I know, I can share this feeling with a few people, but believe me the advantage is that you can enjoy a season that often brings sadness: cold season makes me thinking of my house and the desire to be with my family.   And, why not, to be together in front of a nice steaming soup. This soup is an old recipe from Calabria, in quicker version (with canned vegetables) and light (no bacon or other animal fat) but still good and scented with porcini mushrooms. Of course you can use dried beans, to be soaked for 24 hours before cooking.

MILLECOSEDDE
INGREDIENTS (serves 4)
350 grams of canned mixed beans (haricots, chickpeas, lentils ...) or 150 grams of dried vegetables to soak, one onion, 200g of spinach or chard (even frozen), 30 grams of dried porcini mushrooms, tomatoes or fresh 400 grams, 2 tablespoons extra virgin olive oil, 1/2 liter of water, 320 grams of whole wheat pasta, dried fine herbs of your choice (sage, rosemary, thyme ...)
PREPARATION
Put the dried mushrooms in warm water for about 10 minutes. In a terracotta cooking pot heat the oil with the chopped onion, add the chopped tomatoes, and add water and a pinch of salt and fine herbs. Let cook for about 5 minutes. Add the spinach (or chard) and the softened mushrooms, cook for another 5 minutes. Add mixed beans and, after about two minutes, add pasta  and cook for about 10 minutes (follow the instructions on the pakage of pasta).
The soup is ready: to make it creamier, you can whip around a third of cooked beans and add the mashed at the end. Serve with a drizzle of extra virgin olive oil.

Ceci....estivi!





Ma quanto mi piacciono i legumi!! Per molte persone sono un cibo tipicamente invernale, ma non è così, anzi ammetto che molte delle mie ricette preferite, fresche e rapide, sono proprio quelle estive.
Come questa semplicissima insalata estiva, un vero piatto unico se accompagnata da un po' di pane integrale o delle freselle, sempre integrali.

CECI IN INSALATA
Ingredienti (per 4)
Una scatola di ceci lessati e sciacquati, 6-8 pomodori maturi, 2 cucchiai di olio EVO, un pizzico di sale, foglie fresche di basilico spezzettate a mano (o se preferite un pizzico di origano). Facoltativo: un cucchiaino di aceto di mele o balsamico.
PREPARAZIONE
Mescolare tutti gli ingredienti insieme e lasciare riposare al fresco per circa 15 minuti prima di servire. Se volete potete aggiungere 60 gr a testa di pane integrale raffermo. Deliziosissima e freschissima!

Yes, I love  all kind of beans! Most  people think this is a typical winter food, but it is not true!  Many of my favorite recipes with beans are are those with summer vegetables!
As this simple summer salad, a truly unique dish is  accompanied by a bit 'of wheat bread.

CHICK PEA SALAD 
Ingredients (serves 4) 
A box of boiled and rinsed chickpeas, 6-8 ripe tomatoes, 2 tablespoons of extra virgin olive oil, a pinch of salt, fresh basil leaves chopped by hand (or if you prefer a pinch of oregano). Optional: a teaspoon of apple cider vinegar or balsamic vinegar. 
PREPARATION 
Mix all ingredients together and let stand to cool for about 15 minutes before serving. If you prefer, you can add 60 grams of whole grain stale bread. Delicious  and fresh!
