Verza ...golosa?


Mia nonna era veneta con origini tedesche e in tarda età ha sposato mio nonno, ormai vedovo, che era un calabrese doc! Che mix!! Mia nonna per anni aveva fatto la governante in famiglie benestanti, per cui sapeva cucinare benissimo e di tutto, altro che Masterchef!  Era però attaccata alle sue origini, anche se i suoi cibi "crucchi" non sempre erano apprezzati dal resto della nostra famiglia! Io adoravo mia nonna (forse avete capito che non era in realtà la mamma di mia madre, ma la matrigna, che brutta parola!) e quindi tutto ciò che lei mi proponeva per me aveva un fascino irresistibile! Come questa semplice e golosa ricettina di verza, sempre di corsa però!

VERZA GOLOSA
INGREDIENTI
Una verza di medie dimensioni, 2-3 patate, 1 cipolla, olio EVO, sale, semi di cumino (facoltativo;Kümmel diceva mia nonna!)
PREPARAZIONE
Lavare le foglie di verza e tagliarle a strisce, affettare la cipolla, sbucciare e tagliare a cubotti le patate. Fare rosolare la cipolla in padella con 3-4 cucchiai di olio, aggiugere prima i cubi di patata, mescolare, coprire con un coperchio e fare cuocere a fuoco medio per 5 minuti. Aggiungere le foglie di verza, mescolare e fare cuocere per un altro quarto d'ora, sempre con il coperchio, mescolando di tanto in tanto. Se la verdura si dovesse asciugare troppo aggiungete qualche cucchiaio d'acqua. Se vi piace, a fine cottura, dopo aver aggiunto un pizzico di sale, potete spargere qualche semino di cumimo, come faceva mia nonna Matilde (nella foto ci sono anche semini di cipolla)

My grandmother was Venetian but she had German origin and she married my grandfather, a widower, who was a genuine Calabrian doc! What a mix! My grandmother worked for years as housekeeper in wealthy families, so she could cook very well,  better than Masterchef! But she was attached to her origins, although her "Krauts" recipes were not always appreciated by the rest of our family! I loved my granny (perhaps you realized she was not actually my mother's mom, but her stepmother, what an ugly word!) And then all that she proposed to me, had an irresistible charm! As this simple and tasty recipe for cabbage, but always in a rush!

Caraway - Cumino
YUMMY CABBAGE
INGREDIENTS
A medium-sized cabbage, 2-3 medium size potatoes, 1 onion, extra virgin olive oil, salt, caraway seeds (optional, my granny said "Kümmel") 
PREPARATION
Wash cabbage leaves and cut into strips, slice the onion, peel and cut the potatoes in cubes. Brown the onion in a pan with 3-4 tablespoons of olive oil, add the cubes of potatoes, stir, cover with a lid and cook over medium heat for 5 minutes. Add the cabbage, stir and cook for 15 min, always with the lid on, stirring occasionally. If the vegetables turn too dry add a few tablespoons of water. If you like, at the end, after adding a pinch of salt, you can spread some of caraway seeds, as did my grandmother Matilda (in the pic there are onion seeds, too - the black ones).

Provare per credere: l'insalata cruda di cavolo cappuccio



Siamo sempre a corto di tempo, ma non per questo dobbiamo rinunciare a mangiare in modo sano e gustoso. Questa ricetta è una di quelle che mi ha lasciato mia nonna, origini tedesche e venete. E' un modo di utilizzare il cavolo cappuccio, verdura che si conserva bene a lungo. Questa è una ricetta che può essere preparata in anticipo, anzi meglio prepararla al mattino per la cena perché va lasciata macerare per qualche ora, solo così il cavolo si ammorbidirà e sarà gustoso e croccante. Provate!

INSALATA DI CAVOLO ROSSO
Ingredienti
un cavolo rosso da circa 600 gr, una cipolla rossa di Tropea o due cipollati freschi, due carote (facoltativo), semi di cipolla oppure origano (facoltativo), tre quattro cucchiai di olio EVO, aceto balsamico, sale.
Procedimento
Tagliare il cavolo  a striscioline finissime e metterlo in una insalatiera capiente; tagliare sempre a striscioline sia le cipolle sia la carota (se vi piace). Condire l'insalata con un pizzico di sale, l'olio EVO, tre cucchiai di aceto balsamico e se vi piace, origano o semi di cipolla. Mescolate bene e fare macerare per almeno tre ore, meglio se di più, girando di tanto in tanto. Veloce, eh?

Lack of time is a common problem, but this is not a reason for give up eating in a healthy and tasty way.  This recipe is one of those that my grandmother gave me; she had German and Venetian origins. This is a way to use cabbage, a vegetable that stores well for long. This recipe can be prepared in advance or, even better, in the morning to serve it at dinner, because it needs to marinate for a few hours, so the cabbage will soften and will be tasty and crunchy. Try it! 

RED CABBAGE SALAD 
Ingredients 
A red cabbage of about 600 grams, a red onion or two fresh spring onions, two carrots (optional), onion seeds or oregano (optional), three or four tablespoons of extra virgin olive oil, balsamic vinegar, salt. 
Method
Cut the cabbage in very thin strips and place in a large salad bowl; cut the onions and the (optional) carrots into strips too.  Dress the salad with a pinch of salt, extra virgin olive oil, three tablespoons of balsamic vinegar and, if you like, oregano or onion seeds. Toss well and let marinate for at least three hour or (preferably) more, stirring occasionally. Fast, isn't it?
