Vedo nero, anzi verde!





Il riso da sempre è fra i miei cibi preferiti e non lo abbandono neanche d'estate. Sicuramente la prima scelta va alla classica insalata di riso, sia pure tra le mille varianti possibili. A me, si sa, piace cambiare, perciò lascio qui una versione semplice ma meno classica del riso con le verdure. Infatti ho scelto un riso nero, del tipo Venere, e fra le verdure ho dato la mia preferenza al total green, che richiama i colori della primavera e dell'estate. Provate!

RISO VENERE CON VERDURE... VERDI
Ingredienti
320 gr di riso venere o nero, 150 gr di piselli, anche surgelati, 150 gr di asparagi, 150 gr di agretti (o fagiolini molto fini), cipolla rossa, olio EVO, sale pepe

Procedimento
Pulire e lavare le verdure e lessarle separatamente in acqua salata. Scolarle e farle raffreddare. Ragliare l'asparago a pezzetti e passare tutte le verdure in padella con poco olio EVO e una cipolla tagliata a fettine sottili. Fare insaporire per circa 30 minuti, aggiungendo un pochino di sale e pepe.
Intanto mettere il riso venere in una pentola di acqua bollente e salata, abbassare la fiamma al minimo e portare a cottura (circa 40 minuti). Scolare e fare raffreddare. A parte passare in padella con poco olio le verdure, salare e pepare. 
Quando il riso sarà cotto (ma non sfatto, il riso Venere non scuoce) unire in una padella verdure e riso e mescolare a fuoco basso. Servire tiepido; io preferisco senza formaggio, ma lascio a voi la scelta.

RICE WITH GREEN VEGETABLES
Ingredients
320 grams of black rice, 150 gr of peas, fresh or frozen, 150 gr of asparagus, 150 gr of agretti (or very thin green beans), red onion, EVO oil, salt and pepper.

Method
Clean and wash the vegetables and cook them separately in salt water. Drain and cool them. Slice the asparagus and fry all the vegetables in the pan with little EVO oil and a finely sliced onion. Cook the vegetables for about 30 minutes, adding a little salt and pepper.
Meanwhile, put the black rice in a pot of boiling salty water and cook it for about 40 minutes. Drain and cool down. Put some vegetables in the frying pan with a little oil, salt and pepper.
When the rice is cooked (but do not worry, black rice does not crumble) combine into a pan vegetables and rice and stir in low heat. Serve at room temperature; I prefer it with no cheese, but the choice is up to your personal taste.

Fresco come ... la menta!


Ormai si è capito: mi piace la menta, quella piperita però. Il suo gusto fresco e stuzzicante mi sembra adatto alle pietanze estive, meglio se consumate fredde. Gironzolando per il web ho trovato questa ricetta per polpettine di piselli e menta, che ho rielaborato secondo i miei gusti e vi presento qui.
Piò essere un secondo vegetariano o un antipasto. Ogni caso ci sono pochissimi grassi e si mangiano fredde, quindi perfette per l'estate.

POLPETTINE DI PISELLI E MENTA
Ingredienti (per circa 30 polpettine)
400 gr di pisellini lessati (anche in scatola), 100 gr di miglio, 50 gr di ricotta (per una versione vegana usate del tofu morbido), un cucchiaino di curcuma, 10 foglie di menta fresca, pangrattato q.b.

Frullate i pisellini lessati con la ricotta, la curcuma e le foglie di menta spezzettate, fino ad ottenere una purea liscia. Cuocete il miglio in circa il triplo d'acqua (circa 15-20 minuti). Quando sarà tiepido, unire il miglio cotto alla purea di piselli e amalgamare. Se l'impasto fosse troppo morbido, aggiungere uno-due cucchiai di pangrattato. Formare delle polpettine che passerete nel pangrattato. metterle in un vassoio e ...buon appetito.

Wandering around the web I found this recipe for peas and mint patties which I reworked according to my tastes and I present here.Piò gegetariano be a second or a starter. However there are very little fat and eat cold, so perfect for estatte. PEAS AND MINT PATTIES
 Ingredients (for about 30 patties)400 grams of boiled peas (also canned), 100 grams of millet, 50 g ricotta cheese (or cottage chesse; for a vegan version use soft tofu), a teaspoon of turmeric, 10 fresh mint leaves, bread crumbs to taste.Puree the cooked peas  with cheese, turmeric and chopped mint leaves, until you have a smooth puree. Cook the millet in about three times of water (about 15-20 minutes). Let cool then add the cooked millet to the pea puree and mix. If the dough is too soft, add 1 to 2 tablespoons of bread crumbs. Shape into balls, coat in breadcrumbs. put them in a tray and ... bon appetit.

Primo maggio: fave e non solo!


Il primo maggio si sa, si fa la gita fuori porta e si mangiano le fave col pecorino. Il pecorino mi è sempre piaciuto (purtroppo...) mentre le fave...non sempre, direi. Sarà per il gusto un po' amaro, sarà per la buccia un po' dura, non sempre sono un cibo amato.

Con i miei amici abbiamo rispettato la tradizione e, sotto il primo sole di maggio,  le abbiamo mangiate fresche, come vuole la tradizione, e con tanti tanti pecorini diversi.

A me piacciono anche cotte in padella con altre verdure di stagione, dolci e fresche, che ne addolciscono il sapore, come i piselli e la lattuga. Provate questa semplice ricetta dell'Italia centrale, chiamata Vignarola.

VIGNAROLA
Ingredienti (per 4)
2 carciofi, 300 gr di piselli freschi (sgranati), 300 gr di fave fresche (sbucciate), 200 gr di lattuga, 2 cipollotti, 2 cucchiai di olio EVO, sale (poco).

PREPARAZIONE
Affettare i cipollotti e metterli in una padella e farli appassire nell'olio. Aggiungere la lattuga tagliata a listerelle e i carciofi puliti e tagliati a spicchi. Mescolare bene, aggiungere un cucchiaio di acqua, coprire e fare cuocere a fuoco bassissimo. Lasciare cuocere per circa 10 minuti, aggiungendo acqua se necessario. Aggiungere i piselli e le fave, mescolare e coprire ancora. Fare cuocere per circa 15 minuti mescolare e servire.


On the 1st of May, following an Italian tradition we take a trip outside the town, and we eat raw fava beans with pecorino (sheep cheese). I love the cheese (unfortunately ...) but I'm not so fond of fava beans ... not always, I would say. It is because of the taste, which is a little bitter, or because the skin of the raw bean is a little hard....I don't really know the exact reason, but I love these beans cooked! Sometimes I prepare this recipe from central Italy, that gives a touch of sweetness to fava beats. Enjoy!

Vignarola
Ingredients (4)
2 artichokes (to see how to prepare them click here ), 300 grams of fresh peas, 300 grams of fresh beans, 200 grams of lettuce, 2 spring onions, 2 tablespoons extra virgin olive oil, salt (a pinch).

PREPARATION
Slice the onions and place them in a pan and let them dry in the oil. Add the lettuce cut into strips and artichokes, cleaned and sliced. Mix well, add a tablespoon of water, cover and cook over very low heat. Cook for about 10 minutes, adding water if necessary. Add peas and beans, salt, stir and cover again. Cook for about 15 minutes stir and serve.

La ricetta svuotafrigo: quinoa e bulgur


Avevo intenzione di fare piazza pulita di tutto quello che era rimasto nel mio freezer e ci ero riuscita ad eccezione di un rimasuglio di pisellini surgelati. Di fare una minestra brodosa, neanche a parlarne, non volevo fare una brutta fine. Quindi, pensa che ti ripensa....ecco la mia padellata svuotafrigo!

PADELLATA TRE COLORI


INGREDIENTI

150 gr di bulgur, 150 gr di quinoa rossa, 200 gr di piselli, una cipolla media, 10 pomodori secchi, qualche oliva nera (facoltativa), olio EVO (niente sale, ci sono i pomodori secchi!!)
PROCEDIMENTO
Lessare separatamente il bulgur (trovate le indicazioni qui) e la quinoa (trovate le indicazioni qui). Fate poi lessare i piselli e i pomodori secchi insieme per circa 12 minuti. In una padella capiente mettete quattro cucchiai di olio EVO e la cipolla finemente affettata e fare rosolare per 2-3 minuti.
aggiungere tutti gli ingredienti lessati e i pomodorini tagliati a pezzetti. Fate amalgamante tutto insieme per 5 minuti. Alla fine, se vi piace, potete aggiungere delle olive nere. Buon appetito!

I was going to make a clean sweep of everything that was left in my freezer and eventually there was only a pack of frozen peas left. My family do not like soups in summer, so .... here you are my recipe to empty the fridge!!


WARM THREE COLORS SALAD


INGREDIENTS

150 grams of bulgur, 150 grams of red quinoa, 200 grams of peas, a medium onion, 10 dried tomatoes, some black olives (optional), extra virgin olive oil (no salt, the dried tomatoes are salted !!)
PROCEDURE
Boil separately the bulgur (find directions  here ) and quinoa (you can find directions here ). Then boil the peas and dried tomatoes together for about 12 minutes. In a large skillet put four tablespoons of olive oil and a finely sliced ​​onion and fry gently for 2-3 minutes.
Add all boiled ingredients and chopped tomatoes. Mix all ingredient together for 5 minutes. If you like, you can eventually add black olives. Bon Appetite!
