Detox con brio: minestra speziata di lenticchie rosse


Il mese di gennaio ci porta ciclicamente a fare buoni propositi per l'anno nuovo. Fra questi, puntualmente c'é quello di rimettersi in forma. Naturalmente tutto ciò non passa solo dal cibo, ma anche dal movimento regolare, in palestra o fai date, purché fatto bene e con determinazione. e se la sera ci sentiamo un po' provati dalla stanchezza e dalla fame, consoliamoci con una minestra detox, come quella che vi lascio qui, leggera ma speziata.

ZUPPA DI LENTICCHIE ROSSE CON SPEZIE E SEMI
Ingredienti (per 4p)
160 gr di lenticchie decorticate, 6 carote medie, tre gambi di sedano, una cipolla bianca, brodo vegetale, un cucchiaio di garam masala o di curry, tre foglie di alloro secco, olio evo, semi misti (girasole, zucca, lino, sesamo).

Procedimento
  1. Mettere in una pentola la cipolla e il sedano tritati con tre cucchiai di olio evo e farla ammorbidire; aggiungere il cucchiaio di garam masala o di curry e fare stufare qualche minuto.
  2. Aggiungere le carote tagliate a dadini e le lenticchie. Mescolare e dopo circa due minuti aggiungere il brodo vegetale (circa un litro) e le foglie di alloro.
  3. Coprire con il coperchio e fare bollire a fuoco moderato per circa 40 minuti, mescolando di tanto in tanto.
  4. Quando le lenticchie saranno tenere, spegnere il fuoco e frullare con il frullatore ad immersione.
  5. Servire caldo spolverando i piatti con un cucchiaio o due di semi misti; potete aggiungere dei pezzetti di pane tostato.

RED LENTIL SOUP WITH SPICES AND SEEDS

Ingredients (serves 4)
160 gr of decorticated lentils, 6 medium carrots, three stalks of celery, a white onion, vegetable stock, a spoonful of garam masala or curry, three dry bay leaves, extra virgin olive oil, mixed seeds (sunflower, pumpkin, flax, sesame).

Method
  1. Put the chopped onion and celery in a pot with three tablespoons of extra virgin olive oil and let it soften; add the spoon of garam masala or curry and let it stew for a few minutes.
  2. Add the diced carrots and the lentils. Mix and after about two minutes add the vegetable stock (about one liter) and the bay leaves.
  3. Cover with the lid and boil at a moderate heat for about 40 minutes, stirring occasionally.
  4. When the lentils are tender, turn off the heat and blend with the immersion blender.
  5. Serve hot,  spread a  tablespoon or two of mixed seeds on the plates; you can add some pieces of toasted bread.

Anno Nuovo, Ricetta Nuova!


L'anno si chiude e inevitabilmente si fanno i bilanci. Cosa ho imparato in questi anni? che tutto dipende da noi, come viviamo ogni evento della nostra vita. Impegnarci con gli altri e con noi stessi, cercare sempre l'aspetto positivo, anche nelle difficoltà, ci aiuta a rileggere la nostra storia in senso costruttivo, non vano. C'é chi si fa guidare dalla fede (come me, sono molto fortunata), chi dal senso di umanità. di amicizia e dai valori fondanti che distinguono l'essere umano. Se fino ad ora non ci siamo riusciti, possiamo impegnarci per farlo, daremo una svolta formidabile alla nostra vita.
Quindi oggi bisogna festeggiare, perché siamo qui sulla Terra e abbiamo la grandiosa opportunità di stare vicino agli altri e donare un pezzetto di noi. 
Ma per festeggiare degnamente, un'amante della cucina come me deve provare una ricetta nuova, ovviamente rielaborata tra quelle trovate nel web. Provare e mille auguri a tutti!!

PATE' DI LENTICCHIE E FUNGHI PORCINI
Ingredienti
100 gr di lenticchie di montagna secche, una cipolla rossa, 20 gr di funghi porcini secchi, mezzo bicchiere di vino rosso, due cucchiai di olio evo, foglioline di salvia, rosmarino e prezzemolo, uno spicchio d'aglio, sale (poco!), mezzo cucchiaino di garam masala (facoltativo); per decorare pepe rosa e erba cipollina (facoltativo).
Preparazione
1. In una pentola mettere le lenticchie con mezzo litro d'acqua, uno spicchio di  aglio e qualche fogliolina di salvia; cuocere per circa 40 minuti, fino a che le lenticchie saranno tenere.
2. In una padella media mettere la cipolla tagliata a dadini con olio evo e il mezzo bicchiere di vino rosso; aggiungere i funghi secchi scolati dopo averli ammorbiditi per 10 minuti in un bicchiere di acqua calda; fare cuocere fino a che la cipolla non sarà morbida.
3. Scolare le lenticchie, togliere l'aglio e metterle in padella con la cipolla e i funghi, il cucchiaino di garam masala, rosmarino, salvia e prezzemolo tritati. Cuocere per circa 5 minuti mescolando bene.
4. Mettere tutto (lenticchie, cipolla e funghi) in una ciotola e ridurre in crema con il frullatore ad immersione. Se la crema fosse troppo secca, aggiungere qualche cucchiaino di acqua calda, se fosse troppo liquida, aggiungere qualche cucchiaino di maizena.
5. Mettere in una piccola terrina, decorare con grani di pepe rosa e erba cipollina. Servire su crostini pane, freddi o caldi. Auguri!

English version
LENTILS AND MUSHROOMS PATE'
Ingredients
100 gr of dried mountain lentils, a red onion, 20gr of dried porcini mushrooms, half a glass of red wine, two tablespoons of extra virgin olive oil, sage, rosemary and parsley leaves, a clove of garlic, salt (just a pinch!), half a teaspoon of garam masala (optional); to decorate: pink pepper and chives (optional).

Preparation
1. In a saucepan put the lentils with half a liter of water, a clove of garlic and a few leaves of sage; cook for about 40 minutes, until the lentils are tender.
2. In a medium pan, place the diced onion with olive oil and half a glass of red wine; add the dried mushrooms, drained after softening them for 10 minutes in a glass of warm water; cook until the onion is tender.
3. Drain the lentils, remove the garlic and put them in a pan with the onion and mushrooms, the teaspoon of garam masala, chopped rosemary, sage and parsley leaves. Cook for about 5 minutes, stirring well.
4. Put everything (lentils, onion and mushrooms) in a bowl and reduce in cream with the immersion blender. If the cream is too dry, add one or two teaspoons of hot water, if it is too liquid, add one or two teaspoons of cornstarch.
5. Place in a small bowl, decorate with pink peppercorns and chives. Serve on bread croutons, cold or hot. Happy New Year!

Autunno: coccoliamoci con la zuppa di Millecosedde


I primi freddi mi hanno sempre messo di buon umore: uscire la mattina e sentire l'aria fresca che scivola sul viso ti fa sentire la differenza fra la casa e "il fuori" e ti dà la giusta energia per cominciare la giornata. Lo so lo so, siamo in pochi a pensarla così. Il vantaggio è che si riesce a godere di una stagione che spesso mette tristezza, a me il freddo richiama la casa, la voglia di stare insieme a chi vogliamo bene. E magari davanti una bella zuppa fumante. questa zuppa è una rielaborazione di una ricetta calabrese, in versione rapida (con i legumi in scatola) e light (senza pancetta o altri grassi animali) ma comunque buona e profumata con i funghi porcini. Naturalmente si possono usare i legumi secchi, mettendoli in ammollo 24 ore prima.

MILLECOSEDDE
INGREDIENTI (per 4p.)
350 gr di legumi in scatola misti (fagioli, ceci, lenticchie...) oppure 150 gr di legumi secchi da ammollare, una cipolla, 200 gr di spinaci o bieta (anche surgelati), 30 gr di funghi porcini secchi, pomodori pelati o freschi 400 gr, 2 cucchiai di olio evo, 1/2 lt d'acqua, 320 gr di pasta integrale, erbe aromatiche a scelta (salvia, rosmarino, timo...)
PREPARAZIONE
Mettere i funghi secchi in acqua tiepida per circa 10 minuti. In una pentola di coccio scaldare l'olio con la cipolla tritata, aggiungere i pomodori tagliati a pezzetti, Fare insaporire e aggiungere l'acqua e un pizzico di sale e le erbe aromatiche Fare bollire per circa 5 minuti. Aggiungere gli spinaci (o bieta) e i funghi ormai morbidi e lasciare cuocere per altri 5 minuti. Aggiungere i legumi misti e dopo circa 2 minuti mettere nella pentola la pasta e cuocere per circa 10 minuti (seguite le istruzioni sul pacco di pasta).
La zuppa è pronta: per renderla più cremosa, potete frullare circa un terzo dei legumi cotti e aggiungere la purea a fine cottura. Servite con un filo di olio EVO.

When the first cold weather comes, I'm always in a good mood: I like out in the morning feeling the fresh air that blows on your face; this gives me the right energy to start the day. I know I know, I can share this feeling with a few people, but believe me the advantage is that you can enjoy a season that often brings sadness: cold season makes me thinking of my house and the desire to be with my family.   And, why not, to be together in front of a nice steaming soup. This soup is an old recipe from Calabria, in quicker version (with canned vegetables) and light (no bacon or other animal fat) but still good and scented with porcini mushrooms. Of course you can use dried beans, to be soaked for 24 hours before cooking.

MILLECOSEDDE
INGREDIENTS (serves 4)
350 grams of canned mixed beans (haricots, chickpeas, lentils ...) or 150 grams of dried vegetables to soak, one onion, 200g of spinach or chard (even frozen), 30 grams of dried porcini mushrooms, tomatoes or fresh 400 grams, 2 tablespoons extra virgin olive oil, 1/2 liter of water, 320 grams of whole wheat pasta, dried fine herbs of your choice (sage, rosemary, thyme ...)
PREPARATION
Put the dried mushrooms in warm water for about 10 minutes. In a terracotta cooking pot heat the oil with the chopped onion, add the chopped tomatoes, and add water and a pinch of salt and fine herbs. Let cook for about 5 minutes. Add the spinach (or chard) and the softened mushrooms, cook for another 5 minutes. Add mixed beans and, after about two minutes, add pasta  and cook for about 10 minutes (follow the instructions on the pakage of pasta).
The soup is ready: to make it creamier, you can whip around a third of cooked beans and add the mashed at the end. Serve with a drizzle of extra virgin olive oil.

Polpette? si ma vegetali, please!!




Ogni tanto leggo qualche post di cucina vegetariana su possibili secondi alternativi alla carne. Spesso trovo ricette interessanti dal punto di vista nutrizionale, ma non molto rapide. Quindi mi sono creata una mia versione di piatti vegetariani che possono essere realizzati da chi, come me, si trova costantemente in una cronica deficienza di tempo. In più questa è una ricetta senza. Ovvio direte, senza carne! No, anche senza uova!!

POLPETTINE DI LENTICCHIE

Ingredienti (per circa 30 polpettine - dimensione da grossa noce)

150 gr di lenticchie, 200-250 gr di patate lesse schiacciate (cotte con la buccia nella pentola a pressione, circa 10 min), un cucchiaino di curry, pangrattato, sale, olio di oliva.

PREPARAZIONE

Lessate le lenticchie in circa 350-400 gr di acqua leggermente salata (o usate brodo vegetale senza glutammato). Le lenticchie, una volta cotte, devono aver assorbito quasi completamente l'acqua. Frullatele e mischiatele alle patate schiacciate con due cucchiai di pangrattato (o di più se il composto risultasse troppo umido). Formate delle polpettine grandi come una grossa noce e passatele nel pangrattato. Potete cuocerle in forno su un foglio di carta antiaderente spennellata di olio per 20-25 minuti a 200°, girandole a metà cottura; io preferisco cuocerle in padella, con un velo di olio, fino a che risultano dorate: in questo modo riesco ad ottenere delle polpettine meno asciutte rispetto alla cottura in forno, anche se si una un pochino di olio in più.
Questa ricetta vi consente anche di riciclare le lenticchie avanzate da altre ricette. In questo modo sarà ancora più rapida!!

Sometimes I read posts on vegetarian cooking about veggie main courses with no meat. I find interesting recipes from the nutritional point of view, but unfortunately they're not easy to prepare. So I created my own version of vegetarian dishes recipes suitable for those, like me, who are always on a chronic shortage of time. In addition this is one of my "recipes without". Of course, you may say, without meat! No, not only: this is a recipe without eggs!

BALLS OF LENTILS
Ingredients (for about 30 meatballs - walnut size)
150 grams of lentils, 200-250 grams of mashed potatoes (cooked in their skins in a pressure cooker, about 10 min), a teaspoon of curry, bread crumbs, salt, olive oil.
PREPARATION
Boil the lentils in about 350-400 grams of lightly salted water (or use vegetable stock without glutammate). Lentils, once cooked, must have absorbed almost all the water. Mix it to the mashed potatoes with two tablespoons of breadcrumbs (or more if the mixture is too wet). Shape into balls the size of a large walnut and roll them in the breadcrumbs. You can cook them in the oven on a sheet of greaseproof paper brushed with oil at 200 degrees for 20-25 minutes, turning halfway through cooking. I prefer to cook them in a pan with a thin layer of oil, until they are golden: in this way my balls are less dry than those baking in the oven.
This recipe also allows you to recycle the leftover lentils.  In this way, the recipe will be even faster!
