Chocopear cake by Marco Bianchi: my favorite!!


I'm not a real sweet-tooth, but I think this recipe of Marco bianche is simply irresistible!You can find it and other fantastic recipes here or in his books. 
I can share with you my version of this fantastic cake, in English.

Chocopear cake
Ingredients (serves 10)
200 gr of whole weat, 100 gr of rice flour, 300 gr of dark chocolate (70% minimum cocoa), 500 ml soy milk, 1 bag of baking powder, 1 teaspoon of cinnamon, 1 can of canned pears, 90 grams (or less, depending on your taste) of cane sugar. 

Method
Drain and dice the canned pears, keep to tablespoons of syrup. Melt chocolate in a heatproof bowl over a saucepan of simmering water (for an example click here; or melt gently in the microwave) with 150 ml of soy milk and cinnamon. 
Mix the two flours, baking powder, sugar, soy milk and melted chocolate. Mix together until smooth. 
Pour the batter in a dish covered with baking paper and then put the pear cubes (or if you prefer, pour half of the batter, put the pear cubes, then pour the batter on top). 
Bake in a pre-heated oven at 200C for 50 minutes. Remove from oven and allow to cool.
